3 cups instant chocolate drink mix (for milk)
1 1/2 cups confectioners' sugar
1 1/2 cups miniature marshmallows

Steps:

  • In a very large mixing bowl, combine all ingredients.
  • Store cocoa mix in air tight containers.
  • To make cocoa: In a mug, combine 1/2 cup mix with 9 oz.
  • of boiling water and stir.

6 ½ cups powdered milk
1 (5 ounce) package non-instant chocolate pudding mix
1 cup powdered chocolate drink mix
½ cup powdered non-dairy creamer
½ cup confectioners' sugar
½ cup unsweetened cocoa powder

Steps:

  • In a large bowl, combine powdered milk, chocolate pudding mix, chocolate drink mix powder, creamer, confectioners' sugar, and cocoa. Divide the mixture between two 1 quart jars. Seal, and decorate as desired. These can be stored in a dry area for up to 3 months.
  • Attach a tag with the following instructions: Hot Cocoa: Dissolve 1/3 cup cocoa mix in 1 cup boiling water.

3 cups nonfat dry milk powder
2 cups confectioners' sugar
1 1/2 cups Dutch-processed cocoa powder
1 1/2 cups white chocolate chips
1/4 teaspoon salt

Steps:

  • Combine ingredients in large bowl.
  • Working in two batches, pulse ingredients in food processor until chocolate is finely ground.
  • Store in airtight container for up to 3 months.
  • Too make hot cocoa, stir 1/3 cup of the mix into 1 cup of hot (not boiling) milk.
  • Top with whipped cream or mini marshmallows and a little chocolate powder. I sometimes use cinnamon or nutmeg powder, instead. A little brandy and a crackling fire make for a real treat!

3 1/2 cups sugar
2 1/4 cups cocoa
1 tablespoon table salt
Whole milk for serving

Steps:

  • In a large bowl, combine sugar, cocoa, and salt, and whisk to combine well. Store the mixture in an airtight container.
  • For individual servings, pour 1 cup whole milk into a microwave-safe mug, and microwave on high just until hot. Add 2 tablespoons of cocoa mix, and stir to dissolve. For a larger batch of cocoa, warm the milk in a saucepan set over medium-low heat, taking care not to let the milk boil; as it warms, stir in 2 tablespoons of mix for each cup of milk.

  • In food processor, with knife blade attached, blend cocoa, sugar, chocolate, and salt until almost smooth. Store in tightly sealed container at room temperature up to 6 months.
  • To Make: For each serving, in a microwave-safe mug, mix 3 tablespoons Cocoa Mix with 1 cup mil, microwave on HIGH 1 1/2 - 2 minutes or until blended and hot, stirring once. Swirl a dollop of whipped cream on top.
  • Mocha Variation: Prepare cocoa mix, adding 1/3 cup instant coffee powder or granules before blending in processor.
  • Mexican Spice Variation: Prepare cocoa mix, adding 2 teaspoons ground cinnamon and 1/4 teaspoon ground red pepper (cayenne) before blending in processor.

4 ¾ cups sifted confectioners' sugar
1 ¾ cups unsweetened cocoa powder
1 ¾ cups powdered non-dairy creamer

Steps:

  • In a large mixing bowl, combine milk powder, confectioner's sugar, cocoa powder, and creamer. Stir till thoroughly combined. Store cocoa mixture in an airtight container. Makes about 15 cups mix, or enough for about 45 servings.
  • For 1 serving, place 1/3 cup cocoa mixture in a coffee cup or mug, and add 3/4 cup boiling water. Stir to dissolve. Top with dollop of whipped cream or a few marshmallows, if desired.

3/4 cup sugar

4 ounces bittersweet chocolate
marshmallows (to garnish)

Steps:

  • Combine all the dry ingredients in a large bowl and mix well.
  • Take the bittersweet chocolate and roughly chop it up to give a chunky but consistent size.
  • Mix well with a wooden spoon and then store in a dry airtight container.
  • To make the hot chocolate, simply add 1 cup of water per 1/2 cup of hot cocoa mix.
  • Heat in a small saucepan over low heat, stirring with a whisk.
  • Heat until hot, but do not boil, about 6 to 7 minutes.
