CHINESE-STYLE PORK FILLET WITH FRIED RICE



Chinese-style pork fillet with fried rice image

A low-fat family favourite with tender pork that's simple to make, a great mid-week meal

420g pack pork fillet, trimmed and sliced into medallions
1 tbsp soy sauce
1 tbsp Chinese five-spice
2 tbsp honey
1 tbsp cornflour
1 egg, beaten
225g cooked rice
200g frozen pea, defrosted
2 spring onions, sliced

Steps:

  • Mix the pork medallions with the soy sauce and five-spice; leave to marinate for 5 mins. Heat a large non-stick pan, then fry the pork for 2-3 mins on each side until cooked through. Pour in 150ml boiling water with the honey and bubble for 2 mins. Mix the cornflour with a little water, stir into the sauce and cook until it thickens and is glossy.
  • Meanwhile, make the fried rice. Pour the egg into a non-stick frying pan to make an omelette, cooking for 2 mins on each side. Remove, roll up, and cut into thin strips. Add the rice to the pan with the peas and stir-fry for 3-5 mins until piping hot, then gently stir through the omelette with the spring onions and seasoning and cook for 1 min. Serve with the pork and a dash more soy sauce.

4 pounds pork shoulder, cut into cubes
1 teaspoon salt
1 teaspoon ground black pepper
¼ cup olive oil
2 cloves garlic, minced
2 tablespoons brown sugar
2 tablespoons soy sauce
1 tablespoon fish sauce
1 teaspoon Chinese five-spice powder

Steps:

  • Season pork with salt and pepper.
  • Heat olive oil in a large pot over medium heat; cook pork and garlic in hot oil until the pork is completely browned, 7 to 10 minutes.
  • Stir brown sugar, soy sauce, fish sauce, and five-spice powder with the pork. Reduce heat to medium-low and cook mixture at a simmer, stirring occasionally, until the pork is tender enough to easily pull apart with a fork, about 2 hours.

1 (2 pound) boneless pork loin roast, trimmed of fat
¼ cup rice vinegar
3 cloves garlic, minced
2 tablespoons Asian fish sauce
1 tablespoon soy sauce
2 teaspoons sriracha hot sauce, or to taste
1 teaspoon fine sea salt
1 teaspoon freshly ground black pepper
1 teaspoon Chinese five-spice powder
1 tablespoon vegetable oil for pan roasting

Steps:

  • Place the roast on its side and split in half lengthwise with a sharp knife. Make shallow slashes in a diamond pattern on both sides of each piece. Transfer halves to a flat dish.
  • Whisk rice vinegar, garlic, fish sauce, soy sauce, sriracha, salt, pepper, and Chinese 5-spice powder together in a bowl. Pour sauce over the meat; turn each piece over several times to thoroughly coat. Let meat marinate for about 30 minutes at room temperature. (Or transfer to a zip top bag and refrigerate for 3 or 4 hours.)
  • Heat a heavy cast iron skillet over medium-high heat; add 1 tablespoon vegetable oil. Brown meat on each side, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
  • Transfer to a plate to rest at least 5 minutes before slicing.

2 cups chicken broth
3/4 cup water
1 1/2 cups long-grain white rice
5 tablespoons vegetable oil
1 lb thin pork loin chop, thinly sliced
salt & freshly ground black pepper
2 teaspoons Chinese five spice powder
2 large eggs, beaten
1/2 lb shiitake mushroom, stemmed and thinly sliced
1 red bell pepper, seeded and thinly sliced
2 small carrots, shredded (enough to equal a couple of handfuls)
1 scallion, thinly sliced on an angle
1 cup frozen peas, thawed
3 garlic cloves, finely chopped
1 piece fresh ginger (2-inch piece peeled and grated)
1/3-1/2 cup tamari (dark soy sauce)

Steps:

  • In a medium saucepan, bring the broth and water to a boil.
  • Stir in rice, cover and cook over low heat for 18 minutes.
  • Fluff with a fork and spread on a baking sheet to cool.
  • In a large, deep nonstick skillet or wok, heat 2 tablespoons oil over high heat.
  • Season the pork with salt, pepper, and five-spice powder; add to the pan and stir-fry for 3 minutes.
  • Transfer to a plate.
  • Heat 1 tablespoon oil in the skillet, then add the eggs and scramble for 2 minutes.
  • Push the eggs to the side of the pan, add the remaining 2 tablespoons oil and lower the heat to medium.
  • Add the mushrooms, red bell pepper and carrots and stir-fry for 2 minutes.
  • Add the scallion, peas, garlic and ginger and stir-fry for 1 minute.
  • Add the cooked rice and crisp it for a couple of minutes.
  • Stir in the tamari and reserved pork.

Because pork is rather rich, I like to add a touch of hoisin sauce-the pork can stand up to it. The malt vinegar balances out the flavors, cutting through the richness and sweetness.

400 g (13 oz) pork fillets
1/3 cup vegetable oil
4 free-range eggs, lightly beaten
1 small red onion, finely diced
1 tablespoon finely diced ginger
2 teaspoons white sugar
2 tablespoons hoisin sauce
2 tablespoons light soy sauce
1 tablespoon malt vinegar
1/4 teaspoon sesame oil
4 cups steamed rice
2/3 cup finely sliced spring onions (scallions)

Steps:

  • Using a sharp knife, cut pork fillets into 5 mm (1/4 inch) slices, then cut into 5 mm (1/4 inch) strips and set aside.
  • Heat half the oil in a hot wok until surface seems to shimmer slightly. Pour beaten eggs into wok and leave to cook on the base of the wok for 10 seconds before folding egg mixture over onto itself with a spatula and lightly scrambling for about 1 minute or until almost cooked through. Carefully remove omelette from wok with a spatula and drain on kitchen paper. Set aside.
  • Heat remaining oil in hot wok and stir-fry onion and ginger for 30 seconds. Add sugar and stir-fry for 30 seconds. Add pork and stir-fry for a further 30 seconds. Stir in hoisin sauce, soy sauce, vinegar, and sesame oil and cook, stirring, for 1 minute. Toss in rice and reserved omelette and stir-fry, using a spatula to break up the egg into smaller pieces, for 1 minute. Lastly, add spring onions and stir-fry for a further 30 seconds or until well combined and rice is heated through.
  • Transfer rice to a platter and serve.
