- Whisk together all the ingredients in a bowl. Store in a sealed container in the refrigerator until ready to use. Note: For the best results, refrigerate for at least 2 hours to allow the flavors to blend. Before serving thin the sauce with a bit more warm water if needed. This is a quicker but equally delicious version of the vegan cashew cream sauce that typically requires overnight soaking of raw cashews. It's savory and creamy with a touch of tanginess and a good swap for tahini sauce or creamy dressing like ranch when making sandwiches, salads, grains and cooked meat, poultry, seafood or vegetables. It also keeps well in the refrigerator so you can use it throughout the week.

- Combine the cashew butter, lemon juice, garlic, mustard, hot sauce and 1/3 cup warm water in a blender and blend on high until very smooth, scraping down the sides of the blender jar once or twice with a rubber spatula. The sauce should be the consistency of thick pancake batter. If it is too thick, add more water, a tablespoon at a time, and blend until the sauce is the consistency of thick pancake batter. (Depending on your brand of cashew butter, you may need to add up to 3 tablespoons of water.)
- Transfer to a bowl. Season with salt and more hot sauce if using. The sauce can be refrigerated in an airtight container for up to 5 days.

- To a medium mixing bowl add (starting with the amount at the lower end of the measurement range where applicable) peanut butter, tamari (or soy sauce or coconut aminos), maple syrup, lime juice, chili sauce (or chili or red pepper), and whisk to combine. Add water a little at a time until a thick but pourable sauce is achieved.
- Taste and adjust seasonings as needed, adding more maple syrup for sweetness, chili garlic sauce (or red chili or red pepper) for heat, lime juice for acidity, or tamari for saltiness. If your sauce has become too thin, add more nut butter. If it's too thick, thin with more water. For a fun flavor twist, add some fresh grated ginger to taste.

PEANUT SAUCE
Steps:
- Heat oil over medium heat in a medium skillet. Add onions and garlic. Cook until translucent, add chili paste, curry powder and salt. Stir to combine. Stir in peanut butter, coconut milk, vinegar, brown sugar and 2 tablespoons of warm water. Stir well and bring to a simmer. Let simmer for 1 to 2 minutes, stirring until the sauce thickens and the peanut butter dissolves.
- Add 2 tablespoons of peanuts to the sauce and then transfer it to a blender. Blend until smooth, adding 2 to 4 tablespoons of boiling water to help sauce emulsify. Transfer it to a bowl. Let sauce cool to room temperature. Before serving, garnish with the remaining peanuts. The sauce may be made a day ahead and refrigerated in an airtight container. Bring back to room temperature for 1 hour before serving.
