BEEF STEW
The simplest and most delicious melt in your mouth braised beef stew ever!

Steps:
- Cut the beef into 2 inch chunks. Then add olive oil into a Dutch oven pot. Bring the heat to high. Once the oil is smoking, add the beef chunks into the pot. Evenly brown each side of the beef chunks. Then remove from the pot.
- Place the chopped onion and minced garlic into the pot and stir over medium high heat until the onion becomes translucent.
- Add the mushrooms and stir until they become tender.
- Then add 1/2 tsp thyme, 1/2 tsp oregano, 2 tsp paprika, 2 tsp salt , and 1/2 tsp black pepper. Stir and cook for about 2 minutes.
- Place the celery, baby carrots, and baby red potatoes into the pot, then place the browned beef chunks on top. Give them a quick stir.
- Pour in the red wine and chicken stock.
- Place the lid over the pot and bring it to a boil. Remove from the cook top and place it into a 320 Fahrenheit degree oven for 1 hour
- Meanwhile, with a fork combined 2 tbsp softened butter with 2 tbsp flour.
- After the beef has cooked for 1 hour place the butter and flour mixture into the pot and cook for an additional hour with the lid back on.

EASY 3-ENVELOPE CROCK POT ROAST
This recipe was found via RecipeGoldmine.com and turns out to be a simple and easy Beef Pot Roast that can be prepared in 5 minutes. It cooks in the Crock Pot for a fuss-free dinner any time. It is quite delicious and the dressing mixes come together to make a flavorful gravy. Give this one a try; you will not be disappointed. Add some vegetables half way through cooking and you will have a meal fit for the whole family and guests on any occasion.

- - Mix dry mixes thoroughly into water.
- - Place beef in Crock Pot.
- - Cover with gravy and place on lid.
- - Cook on LOW for 6-8 hours until meat is easily pierced by fork.
- - OPTIONAL: Add vegetables after first 3 hours of cooking to avoid them becoming too soft.

- NOTE: Because recipes need exacting amounts it was hard to list the envelope quantities. For clarity, my Italian Dressing envelope was 0.7 (19g) ounce size, My Ranch was 1 ounce (28g) size and my Beef Gravy mix was 0.87 (24g) size. These sizes worked perfectly for flavor and were not over-salty.

- 1. If desired brown outer edges of roast in pan, if not place in crock pot
- 2. In a bowl mix water with 3 envelopes of mixes until well blended, pour over roast in crock pot. (If the mixes are too overwhelming use 1/2 of all packages)

- Combine the flour and pepper in a bowl, add the beef and toss to coat well. Heat 3 teaspoons of the oil in a large pot. Add the beef a few pieces at a time; do not overcrowd. Cook, turning the pieces until beef is browned on all sides, about 5 minutes per batch; add more oil as needed between batches.
- Remove the beef from the pot and add the vinegar and wine. Cook over medium-high heat, scraping the pan with a wooden spoon to loosen any browned bits. Add the beef, beef broth and bay leaves. Bring to a boil, then reduce to a slow simmer.
- Cover and cook, skimming broth from time to time, until the beef is tender, about 1 1/2 hours. Add the onions and carrots and simmer, covered, for 10 minutes. Add the potatoes and simmer until vegetables are tender, about 30 minutes more. Add broth or water if the stew is dry. Season with salt and pepper to taste. Ladle among 4 bowls and serve.

- 2. take dry mixes and put in crock pot, add beef broth and water, mix w/ whisk to blend well .

- Add bacon to a large Dutch oven or stock pot. Turn heat to medium-low and cook, turning flipping every so often, until browned. Remove to a paper towel lined plate and then chop into small pieces.
- Pat beef cubes dry with paper towels and add to a ziplock bag with flour, salt and pepper. Toss well to coat.
- Heat the pan with bacon grease over medium-high heat. Once hot, add the beef in 2-3 batches (so not to overcrowd the pan), adding a little oil as needed, searing for a few minutes on each side, until browned. Remove meat to a plate and set aside. Reduce heat to medium.
- Add onion and cook for 2-3 minutes. Add garlic and cook for 30 seconds. Add vinegar and wine to the pan, cooking over medium-high heat, and scraping up any browned bits from the bottom of the pan. Simmer for 10 minutes.
