Here's what you need: cream cheese, sugar, water, gelatin powder, lemon, vanilla extract, lemon, whipping cream, prepared mini graham cracker crusts, lemon wedge, fresh mint leaf

8 oz cream cheese, room temperature
1 cup sugar
3 tablespoons water
1 package gelatin powder
1 lemon, juiced
2 tablespoons vanilla extract
1 lemon, zested
2 cups whipping cream
6 prepared mini graham cracker crusts
lemon wedge, for garnish
fresh mint leaf, for garnish

Steps:

  • Bring a medium pot filled with a couple inches of water to a simmer. Set a heatproof bowl on top, making sure the bottom is not touching the water. Add the cream cheese and sugar to the bowl and stir to incorporate, then let melt.
  • Meanwhile, add the water and gelatin to a small bowl and let bloom until the water is absorbed, 2-3 minutes.
  • Once the cream cheese softens and turns off white in color, add the lemon juice, vanilla, and lemon zest. Whisk to incorporate and remove any lumps.
  • Add the bloomed gelatin to the cream cheese mixture and whisk until fully melted and incorporated.
  • Remove the bowl from the double boiler and freeze for 5-10 minutes, until cooled.
  • Remove the cream cheese mixture from the freezer and gradually fold in the whipped topping until well incorporated.
  • Scoop the filling into the mini graham cracker crusts. Freeze for 15 minutes, or until completely set.
  • Garnish with lemon wedges and mint, then serve.

1 whole reduced-fat graham cracker, finely crushed, divided
1 package (.3 ounce) sugar-free lemon gelatin
2/3 cup boiling water
1 package (8 ounces) reduced-fat cream cheese, cubed
1 cup 1% cottage cheese
2 cups reduced-fat whipped topping
1 cup reduced-sugar cherry pie filling

Steps:

  • Coat a 9-in. springform pan with cooking spray. Sprinkle half of graham cracker crumbs on the bottom and 1 in. up the sides of pan; set aside. Dissolve gelatin in boiling water; cool to room temperature., In a blender, combine the gelatin mixture, cream cheese and cottage cheese; cover and process until smooth. Transfer mixture to a bowl; fold in whipped topping. Pour into prepared pan. , Sprinkle with remaining graham cracker crumbs. Cover and refrigerate for at least 4 hours or until set. Carefully run a knife around edge of pan to loosen, then remove sides of pan. Garnish with pie filling.

Crust:
1 cup all-purpose flour
1/4 cup superfine sugar
7 tablespoons unsalted butter, chopped
Filling:
3/4 pound cream cheese, softened
1 pound ricotta
4 eggs
1 1/3 cups superfine sugar
1/4 cup fresh lemon juice
2 tablespoons finely grated lemon zest
1/2 teaspoon vanilla extract
1 1/2 tablespoons cornstarch
1 1/2 tablespoons water
1 cup whipping cream, whipped

Steps:

  • Preheat oven to 300°F. Place the flour, sugar and butter in a bowl and rub with your fingertips to form a rough dough. Using the back of a spoon, press the mixture into the base of a lightly greased 8" round springform pan lined with non-stick parchment paper. Bake the crust for 30 minutes or until golden and just cooked. Set aside.
  • To make the filling, place the cream cheese, ricotta, eggs, sugar, lemon juice and zest, and vanilla in a food processor and process until smooth. Place the cornstarch and water in bowl and mix until smooth. Add the cornstarch mixture to the cheese mixture and mix to combine. Pour over the crust and bake for 1 hour and 10 minutes or until light golden and just set. Turn the oven off and allow to cool in the oven with the door closed. Refrigerate for 1 hour or until cold. Top with the whipped cream to serve.

½ cup butter, melted
24 oz cream cheese, at room temperature
¼ cup sugar
4 eggs, beaten
1 tablespoon vanilla essense
mixed berry, to serve

Steps:

  • Preheat oven to 350ºF (180ºC).
  • In a bowl, add the crushed graham crackers and melted butter and stir to combine.
  • Place the graham cracker mixture in a greased 8-inch (20-cm) springform pan, spreading them in an even layer. Bake for 20 minutes or until in turns slightly golden on the top.
  • In a bowl, mix the cream cheese and sugar using a hand mixer until smooth.
  • Add the eggs and vanilla, and continue beating until all ingredients are fully incorporated.
  • Add the cream cheese mixture to the top of the graham cracker crust.
  • Bake for 1 hour, or until it looks semi-jiggly in the center and set on the edges.
  • Refrigerate for 12 hours, or overnight.

2 sheets graham cracker
4 oz cream cheese, softened
2 tablespoons sugar
3 drops vanilla extract
5 fresh raspberries, for serving

Steps:

  • Melt the butter in a small microwaveable ramekin. Tilt the ramekin to coat the sides.
  • Crush the graham crackers into fine crumbs, then add to the ramekin with the butter and mix well. With a spoon, press the crust evenly against the bottom of the dish.
  • In a small bowl, combine the cream cheese, sugar, and vanilla, stirring until there are no lumps.
  • Spread the filling on top of the graham cracker crust.
  • Microwave for at least 4 minutes, 45 seconds at a time, at half power. Make sure the cheesecake does not bubble over the sides of the ramekin.
  • Chill in the freezer for at least 30 minutes, until completely cool to the touch.
  • With a knife, loosen the edges of the cheesecake, then invert onto a plate, or eat straight from the dish.
  • Top with a few raspberries.
  • Enjoy!
