3 cloves garlic, peeled
3 Thai green chiles
6 green beans, cut into 1 inch pieces
1 large unripe papaya, peeled and cut into thin strips
1 tomato, halved and seeded
2 tablespoons fish sauce
2 tablespoons lime juice
1 teaspoon palm sugar
2 tablespoons finely chopped unsalted, dry-roasted peanuts

Steps:

  • Combine garlic, chiles, and green beans into a mortar and pound roughly. Add the papaya and pound again, to bruise the ingredients. Stir in fish sauce, lime juice, and sugar and pound again. Ad the tomato and pound to combine. Stir in the chopped peanuts and serve.
  • If you don't have a mortar and pestle, you can make a version of this in your blender or food processor: coarsely chop the garlic, chile peppers, and green beans. Mix in the papaya, and pulse a few times. Mix in the tomato, fish sauce, lime juice, and sugar. Pulse to combine; salad should still have texture. Transfer to a serving dish and stir in the peanuts.

In Thailand, green papaya salad is called som tum, with "som" meaning "sour" and "tum" referring to the pounding sound of the large pestle used to crush ingredients. It is eaten by itself as a snack, or with marinated grilled beef and chicken. In the middle of a hot afternoon, green papaya salad wakes you up with the sour and the spicy. In Laos and Thailand, there is always a vendor selling green papaya salad. The most important flavor for Lao green papaya salad is the heat from chilies. Everything else is there to balance it out. Peanuts in green papaya salad are Thai, not authentic Lao, which the major difference.

1 large garlic cloves or 2 small garlic cloves, peeled
1/4 teaspoon salt
1 tablespoon dry-roasted salted peanuts, more for garnish
2 fresh bird chilies or 2 serrano chilies, sliced
1/2 teaspoon raw sugar or 1/2 teaspoon white sugar
1 tablespoon dried shrimp (optional)
2 tablespoons fresh lime juice
1 -2 tablespoon fish sauce, to taste (nam pla)
1 large round tomatoes (coarsely chopped) or 8 grape tomatoes (coarsely chopped)
1/2 lb long beans, trimmed and cut into 1 1/2-inch lengths (optional)
1 papaya, small to medium, green and unripe (see Note)
lettuce, for serving (optional)

Steps:

  • In a blender or mortar, blend or pound garlic, salt, peanuts, chilies, sugar and shrimp (if using) into a paste. Transfer to a large bowl and mix in lime juice and fish sauce. Use a spoon (or the mortar) to lightly crush tomatoes and beans (if using), then add to bowl and mix lightly.
  • Peel and coarsely grate or shred papaya, discarding seeds and inner membrane. There should be 4 to 6 cups.
  • Add papaya to bowl and lightly but thoroughly toss together. Taste for seasoning. Mound in a bowl (if desired, line bowl with lettuce leaves beforehand). Sprinkle with peanuts and serve.
  • Note: If green papaya is unavailable, use an equivalent amount of coleslaw mix (shredded cabbage and carrots).

This is a very popular salad in Thailand. This is a vegetarian version and quite spicy. You can buy shredded green papaya but you can do this yourself as well. This is traditionally made with a large mortar and pestle but you can just use a strong spatula. Cook time is marinating time. Serve along with sticky rice. (Note: pregnant women should not eat green papaya or at least research & take caution!!!)

1 garlic clove
6 long green beans, cut into 1 inch pieces
8 cherry tomatoes, halved
1 -2 chili pepper
2 cups papayas, shredded
2 tablespoons peanuts, toasted or 2 tablespoons raw cashews, chopped
1 1/2 tablespoons soy sauce (shoyu)
1 lime, juice of
1 1/2 tablespoons sugar or 1 1/2 tablespoons agave nectar
Thai basil (garnish)

Steps:

  • If using fresh papaya peel and deseed it (use the seeds for dressing!) and then shred or cut into matchsticks. You can use a grater, spiralizer, mandolin or by hand.
  • Mortar & pestle: Smash a clove of garlic first, add green beans & halved cherry tomatoes. Pound a few times to bruise the beans & get the juice out of the tomatoes. Add chili peppers & crush them to release the hotness. Add the green papaya, toasted peanuts, soy sauce, lime juice & sugar. Use the pestle to push the mixture up in the mortar and the spatula to push it down so that the mixture is mixed well.
  • No M&P: Crush garlic, tomatoes, green beans, and minced chili peppers in large bowl. Fold in papaya and peanuts. Mix soy sauce, lime juice and sugar in a small bowl and pour over salad mixing it in well.
  • Let flavors marinate for at least 30 minutes. Garnish with basil and serve with sticky rice.

1 pinch dried crushed red pepper flakes
2 teaspoons olive oil

Steps:

This is my version of a traditional Thai raw salad with a mildly spicy seasoning. I acquired the original recipe from the Blue Elephant Cooking School. The dried shrimp does tend to give this dish a strong flavour. Like my fellow garlic lovers here at Zaar, the first time I made this I used more than one clove of garlic, 3 to be exact, but in this dish to much garlic becomes overpowering and one misses out on the wonderful combination of flavours.

200 g peeled and thinly grated unripe papayas (I prefer to slice the papaya into long paper thin slices)
1 clove peeled garlic
4 green green bird's eye chilies
30 g French beans or 30 g the asian yard long beans, cut to to 2 cm pieces
20 g dried shrimp
2 tablespoons palm sugar
3 tablespoons fish sauce
3 tablespoons lime juice (you can use lemon juice)
60 g cherry tomatoes, quartered
30 g roasted peanuts
lettuce leaf (to garnish)
coriander leaves (to garnish, you can use mint leaves instead)

Steps:

  • In a mortar, roughly pound the garlic and chillies.
  • Add the beans and pound, then the shrimps and pound again until crushed.
  • Add the sugar, fish sauce and lime juice and stir together.
  • Add the tomatoes and press with the pestle to bruise the tomatoes.
  • Add the peanuts and the papaya and stir until well mixed in.
  • Serve cold in a round dish lined with lettuce leaves and sprinkle coriander leaves on to of the salad.

Goui/noam - Vietnamese salads 'Goui' is any shredded vegetable served raw with mint and basil or coriander plus many of the wild herbs which are not available here in the U.S. Here Green Papaya is generaly the vegetable of choice. On the top of the dish there is cooked meat, shrimp or beef jerky. Fish sauce dip is used as dressing for the dish. You can make 'goui' with any kind of vegetables as long as you shred, wash and drain them dry before adding any dressing to it. You can use shrimp crackers to serve with the salads.

1 (2 lb) medium papayas, remove the skin,split,seeded and cut in very thinly julienne strips
1/2 lb pork loin (boneless)
1/2 lb of shelled and deveined shrimp
3 teaspoons of chopped coriander
3 tablespoons chopped fresh Asian basil or 3 tablespoons mint
1/2 cup of chopped roasted peanuts
1 clove garlic, crushed or minced
1 fresh limes, juice of or 1/4 cup rice vinegar
2 tablespoons sugar
2 tablespoons fish sauce
4 tablespoons water
1 hot red chili pepper, minced (optional)
shrimp crackers
1 hot red chili pepper, finely julienned (optional)
fish sauce, dip

Steps:

  • Wash the shrimp with salted cold water.
  • Drain and set aside.
  • Boil water in a medium sauce pan.
  • When the water begins to boil put the piece of pork in the sauce pan and simmer over medium heat for at least 30 minutes until cooked through.
  • Drain and set aside.
  • When it's cool, julienne cut into long thin 2-inch strips.
  • In another sauce pan, boil water.
  • When the water is boiling, put the shrimp in and cook for 5 minutes.
  • Drain the shrimp, split in half and set aside.
  • Soak the shredded green papaya in a large bowl of cold water with 1 teaspoon of salt.
  • Let it sit for 10 minutes; then rinse and drain it well.
  • Use a cheesecloth to squeeze out the water from the shredded papaya.
  • Add pork, shrimp (save a few shrimp to decorate the top of salad), fish sauce dip, and toss.
  • To make fish sauce dip simply combine the ingreidents listed and mix well.
  • To serve: Put the salad on a plate and arrange the cooked shrimp on top, sprinkle the top with coriander, and basil or mint, and chopped peanuts.
  • Guests can use shrimp crackers to scoop up the salad to eat.
  • A second method of serving: use finely shredded beef jerky instead of pork and shrimp.
  • The rest of the preparations are the same.

This is a simple recipe that is full of flavour and not skyrocketing in calaries. It has sweet, salty, tart and a bit of spice all rounded into one dish. When buying your papaya, choose one from an Asian market that is sold as Green Papaya. Those purchased at the general groceries stores may be too ripe. The flesh should be preferrably white or with only a hint of pink.

1 small garlic clove
1 small red chili pepper, seeded if you don't like it hot
8 -10 fresh green beans
4 tablespoons lime juice
3 tablespoons fish sauce
3 tablespoons palm sugar (or brown sugar)
2 teaspoons anchovy paste
1 medium papaya, peeled
1 medium carrot, peeled
1 small cucumber, peeled
3 green onions
6 cherry tomatoes, cut in half
1/2 cup cilantro, coarsely chopped
1/4 cup of fresh mint or 1/4 cup fresh basil, coarsely chopped
1/4 cup peanuts, coarsely crushed
1 1/2 cups bean sprouts
12 shrimp, poached

Steps:

  • The papaya should be cut into very thin strips. This can be done in several ways. If you have one, take a julienne tool and julienne papaya. If this is not available, grate the papaya on the coarse side of a box grater. The other option is to make cut several cuts down the length of the payapa and then use a potato peeler to peel thin strips off. Submerged shredded papaya in cold water.
  • Julienne or shred the carrots and cucumber, separately.
  • Meanwhile, in a ceramic motar and pestle, mash garlic. Add chilie and continue to mash until well broke up. Add sugar and continue mashing. Add lime, juice, fish sauce anchovy paste and mix well. Add about 1 cup of shredded payapa to the motar and pestle and bruise the papaya so that it absorbes the dressing you have just made. Gently pound it and fold it several times. Add another cup of shredded payapa and continue for another minute or two, Then add the third and final cup and the carrots. Gently bruise for another minute. Add the cilantro, and tomatoes and mix well. Pound these genetly to bruise.
  • Toss the salad with the shredded cucumber and bean sprouts.
  • Garnish with mint, peanuts and shrimp.

1 papaya
5 red peppers
20 cherry tomatoes
3 tablespoons fish sauce
1/2 lime
1 garlic clove
1/2 teaspoon sugar
1/2 teaspoon msg

Steps:

  • Slice papaya skin.
  • Shred off thin slices of papaya.
  • Put peppers and garlic in a mortar and smash with a pestle into tiny pieces.
  • Slice tomatoes in half and put into mortar.
  • Squeeze lime slice into mortar and insert ½ tsp of sugar into mix.
  • Next, put 3 tablespoons of fish sauce and the monosodium glutamate into mixture.
  • 7. Using the pestle, mix the ingredients w/o papaya by smashing for a little.
  • Add the papaya slices.
  • Mix by smashing until satisfied.
  • May add various meats ex. chicken, pork. Serve onto plate with sticky rice or fried pork skins.

1 teaspoon fennel seed, crushed
1 teaspoon dried oregano
3/4 teaspoon salt
1/2 teaspoon cayenne pepper (optional)

1 large zucchini (or two small)
1/2 cup all-purpose flour
2 tablespoons olive oil
2 tablespoons butter

Steps:

  • In shallow dish, combine cornmeal, fennel seeds, oregano, salt, cayenne and pepper. In another dish, beat eggs with water.
  • Cut zucchini into ½-inch slices. Dip each slice into flour to coat; shake off excess. Dip into egg mixture; dip into cornmeal mixture, pressing mixture on to coat.
  • In skillet, heat half of the oil and butter over medium-high heat; add half of the zucchini and reduce heat to medium. Cook, gently turning once, for 5 to 7 minutes or until zucchini is soft inside and outside is golden. Repeat with remaining oil, butter and zucchini.

1/3 cup dried shrimp
1 1/2 tablespoons palm sugar
2 cups shredded papayas
1/2 cup shredded carrot
