MEAT LOAF STUFFED ZUCCHINI
I CAME UP WITH this recipe after being challenged to find different ways to cook this plentiful summer vegetable. At first, I decided to add zucchini to my meat loaf recipe...then it occurred to me to reverse the process and put the meat loaf into the zucchini! - Cut zucchini in half lengthwise. Scoop out pulp, leaving a 1/4-in. shell. Chop pulp; set pulp and shells aside. , In a large skillet, cook the beef, onion and garlic over medium heat until no longer pink; drain. Add pulp, bread crumbs, milk and dill. Spoon into zucchini shells. , Place in a greased 2-qt. baking dish. Top with spaghetti sauce; sprinkle with cheese. Cover and bake at 325° for 30 minutes or until zucchini is tender.

ZUCCHINI-OAT MEATLOAF

- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
- Combine the meatloaf mix, oats, dill, eggs, garlic, onion, zucchini, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
- Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf, about 9-by-5 inches. Bake the meatloaf for 30 minutes.
- Stir together the brown sugar, remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Remove the meatloaf from the oven and brush the top and sides all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.
ZUCCHINI AND CHEESE STUFFED MEATLOAF
This recipe was inspired by summer produce and a fridge clean out. The combination of ground sirloin and sweet Italian sausages is delightful, while the cheese filled inside is just pure decadence. You probably won't have any left for sandwiches, so I recommend you make a double loaf.

- 1. Grate zucchini and place in a large bowl. I squeezed out some of the liquid, but wasn't really too concerned because I like my meatloaf juicy and moist.
- 2. To the zucchini add the egg, milk, oregano, minced onion, salt, pepper, Worcestershire and bread crumbs. Mix well and add the sirloin and sausage. Combine meats with seasonings, but don't over mix, as the meat will get overworked and tough.
- 3. Remove from the bowl and flatten your meat mixture to about 1 inch in height. Place your cheese in the middle of your rolled out loaf. You might want to add more cheese, but beware, if there's too much cheese inside it will find a way to seep out while it's cooking, and will just about disappear.
- 4. Roll loaf back up to cover the cheese and place in a baking dish prepped with cooking spray. Top with your favorite marinara sauce and bake for 1 to 1-1/4 hours.
- 5. Let sit for about 15 minutes and slice. And if you like to bring your lunch to work with you, a slice of this cheesy little zucchini-filled meatloaf makes a super sandwich. One minute in the microwave, a little extra sauce, and you're all set! Hope you enjoy:)

- Shred the cheddar cheese and the zucchini. Chop the scallions.
- In a large bowl mix the flour, baking powder, sugar, salt and pepper.
- In a smaller bowl, combine 1/4 cup of the shredded cheddar and 2 tablespoons of parmesan cheese and set aside.
- Stir the remaining cheddar and parmesan into the flour mixture.
- Add the shredded zucchini and chopped scallions.
- In a medium bowl beat the eggs. Beat in milk and oil.
- Add the egg mixture to the flour mixture, stirring just until dry ingredients are moistened. Batter will be very thick.
- Put the batter into a greased 9x5 inch loaf pan. Sprinkle with reserved cheese.
- Bake at 350 degrees for 55-60 minutes.

CHEESE STUFFED ZUCCHINI
Zucchini "boats" stuffed with a cheese custard. A great way to use zucchini & it's lacto-ovo vegetarian, and my omnivore husband loves it. Very mild flavor. I think it's a good basic recipe that can be played with. The size of the zucchini is the tricky part - sometimes too small, sometimes too big.

- Cut zucchini in half lengthwise.
- Parboil zucchini in a large saucepan with boiling salted water to cover for 5 minutes.
- Drain & scoop out seeds without going through sides.
- Mix together cottage cheese, cheddar cheese, eggs and spices.
- Spoon cheese mixture into the zucchini halves. (Do not mound - it will run over) Place in a shallow baking pan.
- Bake at 350 degrees for 25 minute or until custard is set.
- When custard is done, you can sprinkle the zucchini with the bread crumbs and bake for 5 more minutes until the crumbs are toasty.

- Preheat the oven to 375˚F (190˚C).
- Make the sauce: In a medium bowl, stir together the tomato sauce, apple cider vinegar, and honey. Set aside.
- Make the meatloaf: In a large bowl, combine the ground turkey, zucchini, onion, garlic, egg, Dijon mustard, honey, 2 tablespoons of the tomato sauce, bread crumbs, salt, pepper, oregano, basil, and parsley. Mix well.
- Add half of the meatloaf mixture to a greased loaf pan and flatten to form an even layer.
- Layer the cheese over the meatloaf layer. Top with the rest of the meatloaf and smooth the top.
- Top the meatloaf with half of the tomato sauce mixture, using a spoon or rubber spatula to spread evenly. Reserve the rest of the tomato sauce.
- Bake the meatloaf for 1 hour, or until the internal temperature reads 160˚F (70˚C) when tested with a meat thermometer.
- When the meatloaf is cooked through, warm the reserved tomato sauce in the microwave or a skillet, then drizzle on top of the meatloaf.
- Garnish with fresh parsley and serve with your favorite sides. (We used mashed sweet potatoes and asparagus.)
