2 cans (15 ounces each) pinto beans, rinsed and drained
1 can (28 ounces) crushed tomatoes
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15-1/2 ounces) hominy, rinsed and drained
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 can (6 ounces) tomato paste
1 can (4 ounces) chopped green chiles, undrained
2 small zucchini, halved and thinly sliced
1 medium onion, chopped
1-1/2 to 2 cups water
1 to 2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon salt, optional
1/2 teaspoon garlic powder
1/2 teaspoon sugar
1/2 cup shredded Monterey Jack cheese
Chopped green onions, optional

Steps:

  • In a Dutch oven, combine the first 15 ingredients. Bring to a boil. Reduce heat; cover and simmer for 30-35 minutes or until vegetables are tender. Sprinkle with cheese and, if desired, green onions.

1-1/2 cups chopped onions
3/4 cup chopped sweet red pepper
3/4 cup chopped green pepper
1 can (14-1/2 ounces) vegetable broth
2 cans (10 ounces each) diced tomatoes and green chilies
1/2 cup salsa
1 tablespoon chili powder
1 teaspoon ground cumin
3/4 teaspoon garlic powder
1 can (15 ounces) pinto beans, rinsed and drained
1 cup fresh or frozen corn
1 cup shredded reduced-fat cheddar cheese

Steps:

  • In a large saucepan, bring onions, peppers and broth to a boil. Reduce heat; cover and simmer for 5 minutes. Add tomatoes, salsa and seasonings; return to a boil. Reduce heat; simmer, uncovered, for 12-15 minutes. Add beans and corn; simmer 5 minutes longer or until heated through, stirring occasionally. Garnish each serving with cheese.

2 tablespoons canola oil
1 1/2 cups chopped yellow onions
1 cup chopped red bell peppers
2 tablespoons minced garlic
2 to 3 serrano peppers, stemmed, seeded, and minced, depending upon taste
1 medium zucchini, stem ends trimmed and cut into small dice
2 cups fresh corn kernels (about 3 ears)
1 1/2 pounds portobello mushrooms (about 5 large), stemmed, wiped clean and cubed
2 tablespoons chili powder
1 tablespooon ground cumin
1 1/4 teaspoons salt
1/4 teaspoon cayenne
4 large tomatoes, peeled, seeded and chopped
3 cups cooked black beans, or canned beans, rinsed and drained
1 (15-ounce) can tomato sauce
1 cup vegetable stock, or water
1/4 cup chopped fresh cilantro leaves
Cooked brown rice, accompaniment
Sour cream or strained plain yogurt, garnish
Diced avocado, garnish
Essence, recipe follows, garnish
Chopped green onions, garnish
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • In a large, heavy pot, heat the oil over medium-high heat. Add the onions, bell peppers, garlic, and serrano peppers, and cook, stirring, until soft, about 3 minutes. Add the zucchini, corn, and mushrooms, and cook, stirring, until soft and the vegetables give off their liquid and start to brown around the edges, about 6 minutes. Add the chili powder, cumin, salt and cayenne, and cook, stirring, until fragrant, about 30 seconds. Add the tomatoes and stir well. Add the beans, tomato sauce, and vegetable stock, stir well, and bring to a boil. Reduce the heat to medium-low and simmer, stirring occasionally, for about 20 minutes.
  • Remove from the heat and stir in the cilantro. Adjust the seasoning, to taste.
  • To serve, place 1/4 cup of brown rice in the bottom of each bowl. Ladle the chili into the bowls over the rice. Top each serving with a dollop of sour cream and spoonful of avocado. Sprinkle with Essence and green onions and serve.

1 cup fresh mushrooms, chopped
1/2 cup green pepper, chopped
1/2 cup red pepper, chopped
1 garlic clove, minced
2 cups water
1 (14 1/2 ounce) can diced tomatoes with green chilies, undrained
1 (1 1/4 ounce) package taco seasoning
1 (15 1/2 ounce) can great northern beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can pinto beans, rinsed and drained
8 tablespoons cheddar cheese, shredded

Steps:

  • In a large saucepan, cook beef and onion over medium heat until no longer pink.
  • Add mushrooms, peppers and garlic, cook and stir 3 minutes, until vegetables are almost tender.
  • Stir in water, tomatoes and taco seasoning.
  • Bring to a boil, reduce heat and simmer, uncovered, 30 minutes.
  • Add beans, simmer 30 minutes longer.

1 pound lean ground beef (90% lean)
1 can (28 ounces) diced tomatoes, undrained
1 medium onion, chopped
1 medium green pepper, chopped
1 can (15 ounces) vegetarian chili with beans
1 can (8 ounces) tomato sauce
2 tablespoons chili powder
2 tablespoons minced fresh parsley
1 tablespoon dried basil
2 teaspoons ground cumin
4 garlic cloves, minced
1 teaspoon dried oregano
3/4 teaspoon pepper
1/8 teaspoon hot pepper sauce
6 tablespoons shredded reduced-fat cheddar cheese
1 tablespoon minced chives

Steps:

  • In a nonstick skillet, cook beef over medium heat until no longer pink; drain. Transfer to a 3-qt. slow cooker. Add the tomatoes, onion, green pepper, chili, tomato sauce, chili powder, parsley, basil, cumin, garlic, oregano, pepper and hot pepper sauce. This is definitely a different and tasty chili. It's a takeoff of Zippy's Chili, which is renown in Hawaii. Over there it's being re-sold at Pizza Hut and Taco Bell.

1 lb ground top round beef
1 medium onion, chopped
1/4 lb bacon, cooked and diced
1 can red kidney beans, drained
1 pinch paprika
1/4 teaspoon oregano
1 teaspoon msg (like Accent)
1/2 cup chopped green pepper
1/2 teaspoon sugar
2 teaspoons red wine
1 teaspoon chicken bouillon powder
1/4 teaspoon ground ginger
1 bay leaf, crushed
1 teaspoon chili powder
1 pinch ground cumin or 1 pinch cumin seed
1/2 cup chopped celery
3 -5 dashes Worcestershire sauce
1 (28 ounce) can tomato sauce (I used crushed tomatoes)

Steps:

  • Brown beef, onion and bacon – drain.
  • In large pot combine beef mixture with rest of ingredients.
  • Simmer at least 30 minutes.
  • NOTE: I simmered for a couple hours…and of course it’s better the next day!
