8 ounces sharp cheddar cheese, shredded, at room temperature
8 ounces cream cheese, at room temperature
3 -4 drops hot pepper sauce
1 teaspoon Worcestershire sauce
1/2 cup chunky salsa

Steps:

  • In medium size mixing bowl, combine cheddar cheese, cream cheese, hot pepper sauce and Worcestershire sauce until well blended.
  • Gradually stir in salsa, blending thoroughly.
  • Chill several hours before serving.

1 cup (4 oz.) Cheddar cheese, shredded
1/2 cup all-purpose flour
1/4 cup (half of a stick) butter, softened
1/2 tsp. ground mustard

Steps:

  • Preheat oven to 400°F.
  • In a medium bowl, combine all of the ingredients until well mixed. Roll or scoop the mixture into 1-inch balls. Place at least 1-inch apart on an ungreased baking sheet.
  • Bake 12-15 minutes or until the puffs are lightly browned. Serve warm.

1 package (8 ounces) cream cheese, softened
6 flour tortillas (8 inches)
36 spinach leaves
1 package (6 ounces) thinly sliced deli ham
1 can (4-1/4 ounces) chopped ripe olives
1 can (4 ounces) chopped green chilies, drained

Steps:

  • Spread about 3 Tbsp. cream cheese over each tortilla; layer each with six spinach leaves and three slices ham. Sprinkle with olives and chilies. Roll up tightly and wrap in plastic. Refrigerate until firm. Unwrap and cut each roll-up into 12 slices.

Classic French nibbles that are devilishly moreish

85g plain flour
50g butter , chopped
50g mature gruyère , grated
25g fresh parmesan (or vegetarian alternative), finely grated
2 eggs , well beaten
1l vegetable oil , for deep frying

Steps:

  • Sift the flour and a little salt into a bowl. Set a non-stick pan on the heat with 150ml cold water and the chopped butter. Bring to the boil, stirring until the butter melts. Tip in all the flour and, using a wooden spoon, beat hard until the mix becomes smooth and starts to leave the side of the pan.
  • Remove from the heat, beat in the gruyère and half the parmesan and cool for 5 mins. Gradually beat in the eggs until you have a smooth, thick, but spoonable mix - you may not need all the egg. Can be set aside now for 2 hrs without chilling.
  • When ready to serve, heat the oil in a deep-fat frying pan to around 180C. Using 2 teaspoons scoop up neat dollops and carefully drop into the hot oil. Fry 6-8 dollops a time for 3-4 mins until golden and crisp - dunk the dollops under to brown evenly. Reheat the oil as necessary. Drain on paper towels, sprinkle with the rest of the parmesan. Serve hot.

1 (8 ounce) package Assorted crackers

Steps:

  • In a bow, beat eggs; add cheese. Pour half into a greased 13-in. x 9-in. x 2-in. baking dish. Spoon the picante sauce over top. Top with remaining egg mixture. Bake, uncovered, at 350 degrees F for 25-30 minutes or until a knife inserted near the center comes out clean. Let stand for 15 minutes. Cut into 1-in. squares. Serve warm on crackers. Ridiculously addictive appetizers. I brought them to a party and everyone attacked them like starving piranha on a cow. I included them in a tin of cookies for my hubby's co-workers and one of them ate all of them before anyone else could try them. She also demanded the recipe. From the cookbook "Fix, Freeze, Feast" by Katie Neville and Lindsey Tkacsik. Make them ahead of time, keep in your freezer and bake what you need. I plan to have these on hand all the time.

2 lbs sharp cheddar cheese, shredded
2 cups unsalted butter, softened
5 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon cayenne pepper
1 (8 ounce) jar small pimento-stuffed green olives, well drained (optional)
raw pecan halves (optional)

Steps:

  • Combine cheese, butter, flour, salt, and cayenne in a large bowl: knead into a dough.
  • Roll dough into 1 inch balls and place on an un-greased baking sheet.
  • If using olives, form each ball around 1 olive.
  • If using pecans, press 1 pecan half onto each ball.
  • Can bake them right now (see instructions below) or freeze for later.
  • Place in trays in freezer for 30 minutes.
  • Remove from freezer and place in freezer bags or container.
  • Seal and freeze.
  • Can bake them straight from freezer.
  • Preheat oven to 425°F.
  • Place cheese balls 3 inches apart on an un-greased baking sheet.
  • Bake 15-17 minutes if frozen, 13-15 minutes if thawed.

- 4 oz. sharp natural cheddar cheese, grated, about 1 cup
- 1 pkg. cream cheese, 8 oz.
- 1 tsp. worcestershire sauce
- dash liquie hot pepper seasoning
- 6 slices bacon, cooked and crumbled
- parsley sprigs, optional
- ritz crackers

Steps:

  • Mix first four ingredients over boiling water or in a heavy pan over low heat. Cook,stirring frequently til smooth and bubbly. Blend in bacon bits. Garnish with parsley sprigs, if desired. Serve warm with Ritz crackers. makes about 1 1/2 cups spread.

1 ½ tablespoons Worcestershire sauce

Steps:

  • Melt butter in a small saucepan over medium heat. Stir in the rosemary, thyme, garlic powder, parsley flakes and salt. Mix in the mustard, black pepper, Worcestershire sauce, cumin, and cayenne pepper. Warm gently for about a minute. Mix equal parts of the sauce with beef steak drippings to complete the sauce just before serving.
