ZINGY SALSA CHICKEN CASSEROLE

Steps:

• Spray a 9 x 13 inch baking dish with oil.
• Add rice to baking dish. Salt and pepper chicken breasts and place on top of rice.
• Pour water over chicken and rice. Spoon salsa over chicken.
• Cover with foil and bake in a 350 degree oven for 1 hour. Uncover, sprinkle cheese on top and return to oven for 3 minutes.

EASY CREAMED CORN CASSEROLE FROM SCRATCH

Steps:

• Preheat the oven to 350 degrees F (175 degrees C).
• Melt butter in a 2-quart baking dish.
• Mix flour and sugar together in a bowl; add beaten eggs and beat using an electric mixer until smooth. Stir in creamed corn and whole corn. Pour mixture into melted butter in the baking dish; do not stir.
• Bake in the preheated oven until top is browned, about 1 hour.

ZINGY RICE CASSEROLE

Steps:

• In a large and deep frying pan, cook sausage, cumin, garlic, green peppers and onions, stirring often.
• Drain any excess fat.
• Dissolve bouillon cube in water and add to skillet.
• Stir in jalapenos and rice, bringing to a boil.
• Reduce heat and simmer, uncovered, until water is absorbed and rice is cooked, about 20 minutes.

Steps:

• 1. Cook rice according to package directions, set aside Preheat oven to 325º Grease a 2 quart casserole dish (9" x 13")
• 2. Saute onion, bell pepper and celery in butter until tender Combine with all other ingredients in a large bowl, mix well
• 3. Pour ingredients into greased casserole dish and place in oven Bake at 325º for 30 minutes
