Time 40m

Yield 6 serving(s)

Number Of Ingredients 14

1 refrigerated pizza dough (recommended, Safeway Select)
1 tablespoon olive oil, divided
1 small shallot, minced
1 tablespoon garlic, minced
1/2 lb raw shrimp, peeled and deveined with tails removed
1/2 teaspoon dried basil
1/2 cup Hidden Valley® Original Ranch® Dressing
1/4 cup powdered parmesan cheese
1/4 teaspoon ground nutmeg
12 spinach leaves, stems removed and chopped
3 basil leaves, snipped widthwise into ribbons
1 1/2 cups mozzarella cheese, shredded
1 tablespoon chives, snipped
red pepper flakes, to garnish (optional)

Steps:

  • NOTE: "Even the best pizza toppings are only as good as the crust. For best results, use a quality traditional fresh yeast deli dough such as Safeway Select, over the canned roll-out biscuit dough variety". (STEP 1): Remove pizza dough from refrigerator. Preheat oven to 425°F .
  • In a saucepan over medium heat, heat 1/2 tablespoon olive oil. Saute shallots until softened, about 3 minutes. Add garlic and saute for two additional minutes. Transfer shallot and garlic mixture into a small bowl. Return saucepan to medium heat. Add remaining 1/2 tablespoon olive oil to saucepan until heated. Add shrimp and dried basil (plus a pinch of salt and pepper if desired). Saute, stirring, until shrimp barely turns pink (about 2/3 cooked). Remove saucepan from heat.
  • In another small bowl for the Alfredo sauce, blend 1/2 cup Hidden Valley Original Ranch Dressing, 1/4 cup powdered parmesan cheese and 1/4 teaspoon ground nutmeg.
  • Spray a 14" pizza pan with non-stick cooking spray. Stretch and spread dough to desired form into prepared pan. Spoon the Alfredo sauce evenly over the dough, within a 1" perimeter from edge; Add shallot and garlic mixture evenly over the sauce. Sprinkle the chopped spinach leaves, then mozzarella cheese. Arrange shrimp over cheese, finishing with basil ribbons and snipped chives.
  • Bake for 13-15 minutes, or until crust is golden brown. Cut into slices and garnish if desired with a pinch of red pepper flakes. Serve and enjoy.

Time 27m

Yield 1 pizza, 4 serving(s)

Number Of Ingredients 12

1/4 cup ranch dressing
1/4 cup jarred or refrigerated alfredo sauce
1 1/4 cups thinly sliced shallots or 2 medium shallots
1 1/2 teaspoons vegetable oil
3 ounces fresh Baby Spinach
1 cup shredded cooked chicken breast
1 lb refrigerated pizza dough
2 teaspoons lemon juice
1 1/4 cups shredded mozzarella cheese
1/4 cup grated parmesan cheese
salt
ground black pepper

Steps:

  • Remove dough from refrigerator. Let stand at room temperature 20 minutes.

  • In a small bowl, combine Hidden Valley Ranch Dressing and Alfredo sauce. Set aside.
  • Heat vegetable oil in medium nonstick skillet over medium heat. Add shallots and cook, stirring frequently, 8 minutes or until soft and caramelized. If shallots begin to brown too quickly, add water 1 Tablespoon at a time, stirring until water evaporates. Add spinach to skillet with shallots and sauté 2 minutes or until spinach wilts. Remove from heat.
  • In a medium bowl, combine chicken breast, lemon juice, and the shallot-spinach mixture. Season with salt and pepper.
  • On a floured work surface, roll out pizza dough into a 13-inch round. Transfer dough to a pizza pan. Spread Ranch-Alfredo sauce evenly over crust. Top with mozzarella and chicken mixture. Sprinkle evenly with Parmesan cheese. Bake pizza 15 minutes or until crust is browned and crisped on the bottom and the cheese is melted.

Time 1h10m

Yield 12 nests, 6 serving(s)

Number Of Ingredients 25

2 lbs small shrimp, peeled
2 tablespoons cajun seasoning
1/2 cup ranch dressing
1/2 cup catsup
1/4 cup creole mustard
1 tablespoon sweet paprika
1 -2 teaspoon cajun seasoning
1 teaspoon prepared horseradish
1 teaspoon dill
1 teaspoon sweet pickle relish
1 teaspoon hot sauce
1 teaspoon granulated garlic
1 tablespoon lemon zest
1 tablespoon shallot, chopped fine
1 (4 ounce) box hash browns
1/2 cup zucchini, shredded
1/2 cup carrot, shredded
1 dash salt and pepper
1/4 cup canola oil
cooking spray
1 cup red potatoes, Boiled and mashed
1/4 cup ranch dressing
1/2 cup whipping cream
1 tablespoon fresh chives, finely chopped
1/2 teaspoon garlic salt

Steps:

  • First you will need to boil shrimp in boiling water with the Cajun seasoning. You only want to boil them for a few minutes until they are pink. Remove to a colander and rinse with cold water. Set aside. Next mix all the sassy sauce ingredients together; using your judgment as to how spicy you want to be. Mix in shrimp and place in refrigerator to chill.
  • Next, put hot water in hash browns as directed. Grate zucchini and carrot in bowl together. Drain has brown potatoes and add to bowl. Sprinkle with salt and pepper and then toss all with oil. Spray a 12 hole muffin tin with cooking spray. Place a scoop of potatoes in each tin and make a hollow with back of spoon so that you have a small nest of potatoes. Bake in a 400 degree oven for about 25 minutes or until browned.
  • While nests are baking, boil red potatoes, drain and mash, Next add Ranch dressing, cream, garlic and chives. Stir together until well combined and fairly creamy. A few lumps are OK.
  • When nests are done, lift them out of tin and place on platter. Put mashed potatoes in a pastry bag or plastic storage bag and cut off tip of it. I then place a small swirl of mashed potatoes in nests and then place a helping of the shrimp on top. These really are best served while the potatoes are warm but they are pretty good cold too!

This easy to make, delicious cheesy buffalo shrimp pizza will be a big hit with your friends and family...what's the secret ingredient behind all of this savory spicy goodness? Hidden Valley Ranch Seasoning mix, of course!

Provided by laurielufkin

Categories     Weeknight

Time 30m

Yield 8 slices, 4 serving(s)

Number Of Ingredients 13

15 large shrimp, peeled and deveined
5 tablespoons buffalo style hot sauce, divided
1/2 cup plain Greek yogurt
3/4 cup blue cheese, crumbles
1 (1 ounce) envelope Hidden Valley Original Ranch Seasoning Mix
cornmeal, for dusting about 1-2 tablespoons
1 lb ball traditional pizza dough
3/4 cup sliced mild banana pepper ring, drained and patted dry
2 cups shredded mozzarella cheese
1/4 cup thinly sliced shallot
1/3 cup shredded parmesan cheese
1 stalk celery, shaved with a vegetable peeler
1 large carrot, peeled and shaved with a vegetable peeler

Steps:

  • Preheat oven to 475 degrees F. If available, place a ceramic pizza stone in the oven on the lowest rack. If no stone is available, place an un-greased baking sheet upside down on the rack.
  • In a medium bowl, toss shrimp with three tablespoons buffalo style hot sauce and set aside.
  • In another bowl, combine Greek yogurt, crumbled blue cheese and Hidden Valley Original Ranch seasoning mix. Add remaining 2 tablespoons buffalo style hot sauce and stir again to combine. Set aside.
  • Sprinkle a pizza peel or the back of a large baking sheet with cornmeal.
  • Roll out or stretch dough to a 12" round and place on prepared cornmeal covered pizza peel or baking sheet. Spread ranch dressing blue cheese mixture evenly over the dough, allowing about 1" uncovered for the crust on the edge. Sprinkle pizza with banana pepper rings and sprinkle on one cup mozzarella cheese.
  • Place shrimp randomly over the cheese in a single layer and sprinkle with sliced shallots. Top shrimp and shallots with remaining mozzarella cheese, parmesan cheese and slide pizza on to preheated baking sheet or pizza stone.
  • Bake for 12-15 minutes or until cheese is melted, shrimp is cooked and crust is lightly browned as oven temperatures will vary.
  • When cooked, carefully slide pizza off the stone and back on to the pizza peel (or inverted baking sheet). Allow pizza to rest for 5 minutes. Sprinkle pizza with shaved celery and carrots before slicing in to 8 slices. Serves 4 as an entrée or 8 as an appetizer. Enjoy!
