CRISPY ZA'ATAR CHICKEN PILAF WITH POMEGRANATE



Crispy za'atar chicken pilaf with pomegranate image

Nestle crispy za'atar chicken pieces amongst pistachio pilaf rice for an irresistible supper. It's a riot of colour, texture and flavour

8 skin-on chicken thighs
3 tbsp olive oil
2 garlic cloves, crushed
1 lemon, juiced
3 tbsp za'atar
70g pomegranate seeds
½ small bunch of parsley, finely chopped
1 tbsp olive oil
50g butter
2 large onions, sliced
220g basmati rice
350ml hot chicken stock
70g pistachios, chopped
1 tsp chilli flakes

Steps:

  • Toss together the chicken thighs oil, 1 tsp salt, garlic and lemon juice in a large bowl. Cover and chill for at least 1 hr, or up to 12 hrs.
  • Heat the oven to 180C/160C fan/gas 4, and heat a frying pan over a high heat. Fry the chicken, skin-side down, for 5-7 mins, or until golden and crisp. Transfer to a baking tray and sprinkle with the za'atar, then roast for 10 mins.
  • For the rice, heat the oil and butter in a large, shallow casserole or frying pan over a low-medium heat. Fry the onions with a pinch of salt for 15 mins until caramelised and sticky. Stir in the rice, stock, pistachios and chilli flakes. Season. Arrange the roasted chicken thighs on top of the rice, and pour over any roasting juices from the tray. Cook in the oven for 45 mins, or until the rice is tender. Remove from the oven, cover and rest for 5 mins.
  • Scatter the chicken pilaf with the pomegranate seeds and parsley, then serve in shallow bowls.

Oven roasted wings (or thighs) with a sprinkle of this and a sprinkle of that -- and at the end drizzled with honey and lemon! YUM! :) For easy cleanup, roast wings on parchment paper -- look for za'atar spice mix at international markets or specialty grocery stores! :)

onion powder
garlic powder
cayenne pepper (a little or a lot ~ you control the heat!)
za'atar spice mix (dried thyme, marjoram or oregano, sumac, sesame seeds)
21 chicken wings (whole, or a mixture of flats and drummettes ~ or about 3.5 lbs thighs)
1/2 large lemon (juiced and seeds removed)
1/4 cup honey

Steps:

  • Preheat oven to 375°F.
  • Place chicken wing (or thigh) pieces on a parchment paper lined cookie sheet with sides.
  • Sprinkle both sides of chicken wing pieces LIGHTLY with salt, onion powder, garlic powder, and cayenne pepper ~ and LIBERALLY with the za'atar spice mix to suit your tastes!
  • Oven roast chicken wing (or thigh) pieces for 30 minutes at 375F ~ TURN PIECES OVER and continue roasting for another 25-30 minutes.
  • Combine the juice from 1/2 of a large lemon with 1/4 cup honey and drizzle over chicken pieces ~ turn wings and drizzle other side.
  • Roast wings (or thighs) for 5-10 minutes more.
  • Remove wings (or thighs) from oven and cool for 10-15 minutes before eating.
  • Supply lots of napkins!

  • To make the dipping sauce: In a medium bowl, mix together yogurt, lemon juice, olive oil, cumin, sumac, lemon zest, and mint. Season with salt and pepper to taste. Place in refrigerator for at least 2 hours, and up to three days, to chill and let flavors meld.
  • To make the wings: In a small bowl, mix together za'atar, baking powder, salt, hot paprika, and cumin. Place wings in a large bowl, pat dry with paper towels, and sprinkle in spice mixture. Toss until wings are liberally and evenly seasoned. Arrange wings in a single layer on wire rack set inside a baking sheet lined with aluminum foil, leaving a little space between each wing. Place baking sheet with wings in refrigerator for 8 hours to overnight.
  • Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Place the wings skin side up over the cool side of the grill, cover, and cook until skins are crisp and and browned, about 45 minutes.

  • Pat the chicken dry and season with salt and pepper. Bring to room temperature. Place the oven rack in the center of the oven. Preheat the oven to 425°F. Line a heavy sheet pan with Silpat, nonstick foil, parchment, or nothing at all. Pour 3 tablespoons of canola oil in the center of the pan.
  • In a bowl, mix the flour with paprika, garlic powder, salt and pepper. Taste a touch of the seasoned flour to be sure there is enough salt, adding more until you taste it. Dredge the chicken in the seasoned flour just before baking. Shake excess flour off each piece and place on the sheet pan, running them very lightly through the oil as you go.
  • In a small bowl, combine the za’atar with a pinch of cayenne, adding more until desired heat is achieved. Place the warm wings in a bowl and spoon the za’atar over them, stirring to coat. Serve immediately.

  • Pat chicken dry with paper towels. Stretch the chicken wing out on a cutting board, and using a knife, cut between the drumette (meatiest part) and the wingette. You can also cut the tip off but, I don’t mind them so I leave them. Place in a medium-sized mixing bowl.
  • Lay the seasoned chicken wings flat in the air fryer basket. Turn on air fryer and bake on 400 degrees for 15 minutes.
  • Remove the chicken wings and add to a clean mixing bowl. Add the spicy zaatar spread and toss well to coat every chicken wing. Place the wings back in the air fryer basket and cook for an additional 7 minutes for a total cook time of 22 minutes or until crisp and golden brown.
