CHICKEN FAJITA QUESADILLA RECIPE BY TASTY

Steps:
- In a large skillet, coat chicken with salt, pepper, chili powder, cumin, cayenne, and garlic powder. Cook 5-7 minutes.
- Add the peppers and onions and cook for 5-7 minutes, or until they are soft. Remove chicken, onions and peppers from the pan and set aside.
- Place the tortilla in the skillet and add a layer of cheese on half of the tortilla.
- Add cooked chicken, peppers and onions. Top with more cheese and fold the tortilla in half.
- Cook for 6 minutes over medium heat, flipping half way.
- Garnish with fresh cilantro and serve with pico de gallo, guacamole, and sour cream on the side.

- Preheat oven to 450°. In a large bowl, combine the first 5 ingredients; toss to combine., Divide four tortillas between two baking sheets; spread with chicken mixture. Sprinkle with cheese and top with remaining tortillas., Bake 6-8 minutes or until lightly browned and cheese is melted. Cut each quesadilla into six wedges. If desired, serve with sour cream and additional salsa.

Steps:
- Slice the chicken breasts into strips, about an inch apart, and coat with taco seasoning. In a large skillet, heat 1 Tbsp. vegetable oil and cook chicken until no longer pink and slightly charred. Remove cooked chicken from the skillet.
- Heat another Tbsp. oil, add onion and garlic and cook for a couple minutes until it's slightly translucent. Add the peppers, and cook slightly, then mix in the cooked chicken. Remove from heat and set aside.
- In a clean pan, melt a bit of butter. Add a tortilla and move it around until it's buttery. Add cheese, then fajita mixture, then more cheese, then top with another tortilla and pat it down.
- Flip the quesadilla over and cook the other side until it's golden. Remove from pan and cut into quarters. Repeat these steps with the remaining tortillas.
- Enjoy!

YUM...A TASTY BARBECUE CHICKEN QUESADILLA
I created this version of a quesadilla after searching recipezaar for a barbecue chicken quesadilla. When I didn't find one, I ended up making this relatively simple quesadilla that is quick, easy, and a kid pleaser.

Steps:
- Melt butter in frying pan.
- Add onions and sautee.
- Add mushrooms and sautee until desired doneness.
- Add garlic and stir.
- Add chicken to heat it up (if it's already warm you can skip this step).
- Take mixutre and place in a small bowl.
- Add the barbecue sauce and mix until everything is coated.
- Meanwhile, place about 1/2 the cheese on 1/2 of the two flour tortillas.
- Place mixture on top of the cheese and spread out.
- Sprinkle remaining cheese evenly over mixture.
- Fold the tortillas in 1/2 being careful that the ingredients don't fall out.
- Heat oil in frying pan.
- Place quesadillas in frying pan, and fry for about 1 1/2 minutes per side. The tortilla should become crispy.
- Take out of the frying pan, cut into slices and serve with sourcream if desired.

Steps:
- In a large skillet, add chicken breast and season both sides with salt and pepper.
- Cook 15-18 minutes, flipping halfway and adding the onions when you flip the chicken. (Cooking times may vary depending on thickness of the chicken breast).
- Remove the chicken from the pan and continue to stir onions.
- Shred the chicken while onions are cooking.
- Return the shredded chicken to the pan with the onions. Add the BBQ sauce and stir. Remove from the pan and set aside.
- Place a tortilla in a pan and add a layer monterey jack and cheddar cheese on half of the tortilla.
- Place cooked chicken and onions, and top with the rest of each cheese. Fold in half and cook 6 minutes, flipping halfway.
- Serve with extra BBQ sauce and garnish with fresh parsley.

- Combine the shredded chicken and bbq sauce in a small bowl and warm up in microwave for 30 seconds to 1 minute, until heated through.
- Meanwhile heat a non-stick pan or griddle over medium-high heat. Once hot, place the large tortillas down (you may have to do one at a time depending on the size of your griddle). Place ½ cup of cheese on one side of each of the tortillas, spreading out to reach the edges of the tortilla. - Mix the shredded chicken with the BBQ sauce. Grate the cheese and have the corn, beans, red pepper, and onion ready to use.
- Heat a nonstick pan over medium-low heat. Drizzle a little oil (about ½ teaspoon) on one side of a tortilla. Use your hands to spread it over both sides of the tortilla. Put the tortilla into the pan and let it cook for 10 seconds. Remove the pan from the heat and flip the tortilla over.
- Spread ¼ cup of the cheese over half of the tortilla. Top with ½ cup of the chicken and 1 tablespoon each of the corn, black beans, and red pepper. Fold the empty half of the tortilla over the filling and press the edges together. Put the pan back on the heat and let the quesadilla cook for 2 minutes. Flip it over and let it cook for 2 minutes more.
- Remove the quesadilla from the pan. Cut it in half then cut both pieces in half again so that you have 4 triangle slices. Repeat with the remaining tortillas and fillings.
