RESTAURANT STYLE CHINESE BROCCOLI WITH OYSTER SAUCE

Steps:
- Trim ends off Chinese Broccoli. If any stems are super thick, cut them in half (you want all stems approximately the same width).
- Steam Chinese Broccoli using whatever method you want - I microwave in a steamer on high for 4 minutes. The stem should be just cooked - not super soft and floppy.
- Stack the Chinese broccoli together and cut into 4"/10cm lengths, then stack neatly on top of each other.

YUM CHA CHINESE VEGETABLES WITH OYSTER SAUCE
This is the recipe for delicious Chinese vegetables and sauce served in Ym Cha/Dim Sum restaurants. You can use broccoli, broccolini, choy sum, kai-larn, bok choy - whatever you prefer. You can use vegetarian oyster sauce for a vegan version.

- Remove stems from vegetables and cut into chunks.
- Combine oyster sauce, soy sauce, and sugar in bowl and stir until sugar dissolves.
- Blanch vegetables in boiling water for 2 minutes. Drain and refresh under cold water. Drain and place on serving plate.
- Heat peanut and sesame oil, and carefully pour over vegetables and gently toss to coat. Drizzle sauce over.

BABY BOK CHOY WITH OYSTER SAUCE
This is among the easiest, most flavorful preparations of greens imaginable, and it pairs beautifully with almost any vaguely Asian roasted meat or fish. It is also exceptional on its own, with rice. You could swap out the bok choy for broccoli, if that's all you have, or chard, or beet greens.

Steps:
- Combine soy sauce, oyster sauce, sugar and rice vinegar in a bowl and set aside.
- Heat oil in a skillet or wok set over high heat. When it shimmers, add garlic, then bok choy, and stir-fry for 2 minutes. Add 2 to 3 tablespoons water to the skillet or wok, then cover it and allow to cook for 2 to 3 minutes more, until bok choy has softened nicely at its base.
- Remove bok choy from the skillet or wok and place it on a warmed platter. Drizzle the reserved sauce over the greens and serve.

Steps:
- Prepare the vegetables.
- Heat the vegetable oil and the sesame oil in a wok.
- Add the garlic and stir fry a minute Add the remaining vegetables except the bean sprouts and add the oyster sauce too.
- Stir fry for 3-4 minutes Add the remaining ingredients including the bean sprouts but excluding the lime juice and stir to mix well for another 2-3 minutes.
- Sprinkle the lime juice and check the seasonings add more if reqd.
- Serve immediately.

- Prepare the garlic oil first by heating up your wok and stir fry the minced garlic until they turn light brown. Dish out and set aside.
- Heat up a pot of water and bring it to boil. Add two small drops of cooking oil into the water. Drop your vegetables into the boiling water and quickly blanch them for about 20-30 seconds (depends on the quantity). As soon as they turn slightly wilted, transfer them out and drain the excess water off the vegetables. Arrange the vegetables on a plate.
- In a wok, heat up the cooking oil, and then add the oyster sauce, water, sugar, and white pepper powder. As soon as the sauce heats up and blends well, transfer and drench it over the blanced vegetables. Top the vegetables with the garlic oil and serve immediately.
