HERBED LEMON CHICKEN BREASTS -- WW FRIENDLY
This is so good and so easy. I got this off the WW website. It is also easy to halve this recipe, or even quarter it.

Steps:
- On a large plate, combine Mrs. Dash seasoning with flour. Pat chicken dry and roll in flour mixture.
- Heat butter in large skillet; add chicken and brown on both sides, about 3 minutes on each side.
- Meanwhile, remove zest from lemon, squeeze juice from lemon, and mix zest and juice with broth.
- Pour over chicken, cover, and cook for 15 minutes. Remove lid and cook for another 5 minutes or until juices run clear. Serve immediately.

- Preheat oven to 425*F.
- Spray nonstick pan with cooking spray.
- COmbine bread crumbs, cheese, parsley, and lemon zest in a medium bowl; transfer to sheet of wax paper.
- Sprinkle chicken with salt and pepper, spread both sides with mayo.
- Coat chicken on both sides with crumbs.
- Arrange chicken on baking pan, spray tops lightly with nonstick spray.
- Bake until golden and cooked through, about 20-25 minute (do not turn).

- Combine the lemon juice, honey, ginger, garlic, soy sauce, stock powder and half the water in a jug. Set aside. Combine the remaining water and the cornflour and set aside.
- Heat a small-medium fry pan over medium-hot heat. Add chicken and stir-fry for 2-3 minutes. Add the vegetables and cook until heated through and tender, about 3-5 minutes. Remove from pan.
- Add the contents of the first jug to the same pan. Cook, stirring for about 30 seconds. Add the water & cornflour mix and stir until mixture thickens.
- Return the chicken and vegetables to pan. Cook gently, stirring to coat with sauce, until heated through.

- Cut each chicken breast in half lengthwise. Place chicken between 2 sheets of heavy-duty plastic wrap; flatten to 1/4-inch thickness, using a rolling pin or flat side of a meat mallet. Sprinkle chicken with salt and pepper. Lightly dredge chicken in flour, shaking off excess.
- Melt 1 Tbsp. butter with 1 Tbsp. olive oil in a large nonstick skillet over medium-high heat. Cook half of chicken in skillet 2 to 3 minutes on each side or until golden brown and done. Transfer chicken to a serving platter, and keep warm. Repeat procedure with 1 Tbsp. butter and remaining olive oil and chicken.
- Add broth and lemon juice to skillet, and cook 1 to 2 minutes or until sauce is slightly thickened, stirring to loosen particles from bottom of skillet. Add 8 lemon slices.
- Remove skillet from heat; add parsley and remaining 2 Tbsp. butter, and stir until butter melts. Pour sauce over chicken. Serve immediately. Garnish, if desired.
