Herbed Lemon Chicken Breasts -- Ww Friendly image

This is so good and so easy. I got this off the WW website. It is also easy to halve this recipe, or even quarter it.

2 tablespoons mrs. dash lemon pepper
1 tablespoon flour
12 ounces boneless skinless chicken breasts
1 tablespoon unsalted butter
1/2 medium fresh lemon
1 cup low sodium chicken broth

Steps:

  • On a large plate, combine Mrs. Dash seasoning with flour. Pat chicken dry and roll in flour mixture.
  • Heat butter in large skillet; add chicken and brown on both sides, about 3 minutes on each side.
  • Meanwhile, remove zest from lemon, squeeze juice from lemon, and mix zest and juice with broth.
  • Pour over chicken, cover, and cook for 15 minutes. Remove lid and cook for another 5 minutes or until juices run clear. Serve immediately.

2 slices firm whole wheat bread, made into crumbs (1 cup)
1 tablespoon grated parmesan cheese
1 tablespoon minced parsley
1 tablespoon grated lemon zest
4 (1/4 lb) boneless skinless chicken breast, lightly pounded
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons reduced-calorie mayonnaise

Steps:

  • Preheat oven to 425*F.
  • Spray nonstick pan with cooking spray.
  • COmbine bread crumbs, cheese, parsley, and lemon zest in a medium bowl; transfer to sheet of wax paper.
  • Sprinkle chicken with salt and pepper, spread both sides with mayo.
  • Coat chicken on both sides with crumbs.
  • Arrange chicken on baking pan, spray tops lightly with nonstick spray.
  • Bake until golden and cooked through, about 20-25 minute (do not turn).

An easy, quick and tasty meal for 1. At only 3.5 points this is a great dinner. I like to use a vegetable mix that has water chestnuts for the crunch. I usually serve this over steamed basmati rice. Taken from the WW Single Serves book. Australian measurements used.

1 tablespoon lemon juice
2 teaspoons honey
1/2 teaspoon minced ginger
1 teaspoon minced garlic
1 teaspoon soy sauce
1/2 teaspoon chicken stock powder
1/2 cup water
1 teaspoon cornflour
140 g chicken breast fillets, chopped
1 1/2 cups frozen vegetables (Asian blend)

Steps:

  • Combine the lemon juice, honey, ginger, garlic, soy sauce, stock powder and half the water in a jug. Set aside. Combine the remaining water and the cornflour and set aside.
  • Heat a small-medium fry pan over medium-hot heat. Add chicken and stir-fry for 2-3 minutes. Add the vegetables and cook until heated through and tender, about 3-5 minutes. Remove from pan.
  • Add the contents of the first jug to the same pan. Cook, stirring for about 30 seconds. Add the water & cornflour mix and stir until mixture thickens.
  • Return the chicken and vegetables to pan. Cook gently, stirring to coat with sauce, until heated through.

  • Melt 1 Tbsp. butter with 1 Tbsp. olive oil in a large nonstick skillet over medium-high heat. Cook half of chicken in skillet 2 to 3 minutes on each side or until golden brown and done. Transfer chicken to a serving platter, and keep warm. Repeat procedure with 1 Tbsp. butter and remaining olive oil and chicken.
  • Add broth and lemon juice to skillet, and cook 1 to 2 minutes or until sauce is slightly thickened, stirring to loosen particles from bottom of skillet. Add 8 lemon slices.
  • Remove skillet from heat; add parsley and remaining 2 Tbsp. butter, and stir until butter melts. Pour sauce over chicken. Serve immediately. Garnish, if desired.
