1 cup wild rice
1 1/2 teaspoons salt
1/2 pound crusty white bread, cut into 1/2-inch cubes (6 cups)
1 stick (1/2 cup) unsalted butter, plus 2 tablespoons melted unsalted butter or reserved fat from turkey
2 cups diced (1/3 inch) onion
2 cups diced (1/3 inch) celery
2 cups diced (1/3 inch) apple
1/4 cup finely chopped fresh flat-leaf parsley
2 tablespoons finely chopped fresh sage or 1 1/2 teaspoons dried, crumbled
2 teaspoons finely chopped fresh marjoram or 1/2 teaspoon dried, crumbled
1 teaspoon finely chopped fresh thyme or 1/4 teaspoon dried, crumbled
1/2 teaspoon black pepper
1 cup dried cranberries (5 ounces)
1 cup turkey stock or chicken broth

Steps:

  • Bring water to a boil in a 2-quart heavy saucepan, then add rice and 1/2 teaspoon salt. Reduce heat to low and cook, covered, until rice is tender and most grains are split open, 1 to 1 1/4 hours (not all liquid will be absorbed). Drain well in a colander and spread out in a baking pan to cool completely.
  • Put oven rack in upper third of oven and preheat oven to 350°F.
  • Spread bread cubes in a shallow baking pan and bake in upper third of oven until dry, about 20 minutes.
  • Melt 1 stick butter in a large nonstick skillet over moderate heat, then cook onion and celery, stirring, until softened, about 8 minutes. Add apple and cook, stirring, until crisp-tender, about 5 minutes. Stir in herbs, pepper, and remaining teaspoon salt and cook, stirring, 2 minutes. Transfer to a large bowl and toss with rice, bread, and dried cranberries.
  • Increase oven temperature to 450°F and butter a shallow 3-quart baking dish (13 by 9 inches).
  • Spread stuffing evenly in baking dish and drizzle with turkey stock and melted butter. Bake, covered tightly with foil, in upper third of oven until heated through, about 20 minutes. Remove foil and bake until top is browned, 10 to 15 minutes more.

1/2 teaspoon coarsely ground pepper
1/4 teaspoon salt

Steps:

  • In a large nonstick skillet, saute celery and onion in oil for 4 minutes. Add the carrot, parsley and rosemary; saute 2-4 minutes longer or until vegetables are tender. Add garlic; cook 1 minute longer., In a large bowl, combine the vegetable mixture, bread cubes, apples and hazelnuts. In a small bowl, combine the egg, cider, pepper and salt. Add to stuffing mixture and mix well., Transfer to an 8-in. square baking dish coated with cooking spray. Cover and bake at 350° for 20 minutes. Uncover; bake 10-15 minutes longer or until a thermometer reads 165°.

2 cups minced onions
1 pinch sugar
1 cup celery, minced
6 cloves garlic, minced
1 cup dried cranberries
1/2 cup dried apricot, diced
1/2 cup dried pear, , diced

2 cups wild rice, cooked until still firm
2 cups brown rice, cooked until still firm
2/3 cup toasted hazelnuts, coarsely chopped
2 teaspoons sage, minced
2 teaspoons rosemary, minced

1/4 cup parsley, minced

Steps:

  • Melt 3 tablespoons of the margarine over medium heat in a skillet.
  • Add onions and a pinch sugar and saute, stirring frequently, until onions caramelize, about 7 minutes.
  • Transfer onions to a large bowl.
  • Return skillet to heat and melt remaining 2 tablespoons margarine.
  • Add celery and garlic and cook until softened, 5 minutes.
  • Transfer to bowl with onions.
  • Add remaining ingredients to bowl and toss to mix.

Steps:

  • Bring broth and water to boil; add brown and wild rice. Bring to boil, reduce heat, cover and simmer 45 to 55 minutes or until rice is tender and liquid is absorbed.

8 cups 1/2-inch cubes of firm white bread such as a Pullman loaf (1 pound)
1 1/2 cups finely chopped shallots (about 8 medium; 10 ounces)
1 1/2 sticks unsalted butter, divided
1 1/2 pounds cremini mushrooms, sliced 1/4 inch thick
1 1/2 cups finely chopped celery (from 3 ribs)
2 teaspoons chopped thyme
2 teaspoons finely chopped sage
1/2 cup dry white wine
2 cups hazelnuts (1/2 pound), toasted , any loose skins rubbed off in a kitchen towel, and coarsely chopped
1/2 cup finely chopped flat-leaf parsley
4 cups turkey stock , heated to liquefy if gelled, or reduced-sodium chicken broth
3 large eggs, lightly beaten
Equipment: a 3-quart shallow ovenproof baking dish (2 to 3 inches deep)

Steps:

  • Preheat oven to 400°F with racks in upper and lower thirds. Generously butter baking dish.
  • Arrange bread in 1 layer in 2 large shallow baking pans and toast, switching position of pans halfway through baking, until golden and dry, about 15 minutes. Transfer to a large bowl. (Leave oven on.)
  • Meanwhile, cook shallots in 1 stick butter in a 12-inch heavy skillet over medium heat, stirring occasionally, until softened and golden, about 6 minutes. Add mushrooms, celery, thyme, sage, and 1/2 teaspoon salt and cook, stirring occasionally, until liquid given off by mushrooms has evaporated and mushrooms are browned, 20 to 30 minutes.
  • Add wine and deglaze skillet by boiling, stirring and scraping up any brown bits, until wine is reduced by about half, about 2 minutes. Transfer to bread in bowl. Add hazelnuts and parsley and toss.
  • Whisk together stock, eggs, 1 teaspoon salt, and 1/2 teaspoon pepper, then stir into bread mixture. Transfer to baking dish and dot top of stuffing with remaining 1/2 stick butter.
  • Bake, loosely covered with a buttered sheet of foil (buttered side down), in lower third of oven 30 minutes, then remove foil and bake until top is browned, about 15 minutes more.

APPLE WALNUT RICE STUFFING (VEGAN)

This is a recipe from a 1987 issue of Better Homes & Gardens, from a Tyson chicken ad. It's meant to be stuffing for cornish game hens but because I don't eat meat and poultry, this serves as a nice vegetarian side dish (non-vegans can use butter for a richer flavor.) This would be great for Thanksgiving, Christmas, or any other feast. I don't normally keep storebought wild rice on hand so I used 1/3 cup each brown rice, black rice, and long-grain yellow rice. The ingredients were listed in the ad but no actual instructions were...so my instructions pretty much work, I had to add the extra 2 TB oil for cooking the onion; it wasn't originally listed. I chose those two oils based on what was on hand and what I thought would have the most interesting flavors.

2 tablespoons sunflower oil (any oil of your choice works(for cooking the rice)
1 celery heart, minced (with leaves still on)
1 small white onion, finely chopped

1/4 cup chopped walnuts
2 mcintosh apples, cored and chopped
2 tablespoons port wine
1 teaspoon dried parsley

Steps:

  • Boil 2 cups of water in a large saucepan with a few shakes of table salt, and put the rice in it. Stir in the oil and cover, let cook on medium heat for 15-20 minutes or until an "al dente" texture.
  • While the rice is cooking, turn on another burner and sautee the chopped onion in 2 TB oil of your choice until somewhat translucent, about 15-20 minutes.
  • Turn the burners off to but leave the saucepan on with the rice and water. Fluff up with a wodden spoon or fork to evenly distribute the oil and you'll need the extra water too.
  • In a small bowl, combine the port and parsley.
  • Pour the sauteed onion, chopped celery, chopped apple, walnut bits, into the rice pan and mix.,
  • Pour on the port and parsley mixture, and blend well.
  • Turn the saucepan's burner back on, on medium-low heat, and cover again. Let cook another 8-10 minutes.
  • Uncover, fluff with a wooden spoon or fork, and let stand for 5 minutes prior to serving or stuffing.

2/3 cup tawny port or 2/3 cup ruby port
3 cups wild rice, well rinsed
4 tablespoons unsalted butter
3 medium leeks, cleaned and sliced (white part only)
1 lb mixed wild mushroom, sliced (cremini, shiitakes, and chanterelles)
1 tablespoon poultry seasoning (Homemade Poultry Seasoning)
1 cup hazelnuts, toasted and skinned and chopped
1/4 cup chopped fresh parsley
1 1/2 teaspoons salt
1/2 teaspoon fresh ground black pepper
1/2 cup turkey broth (optional) or 1/2 cup chicken broth (optional)

Steps:

  • Add the dried cherries to a small bowl and add in the port wine; let stand while making the stuffing.
  • Bring a big pot of lightly salted water to a boil over high heat; add in the wild rice; decrease heat to medium.
  • Boil uncovered until the rice is barely tender (some of the grains may have burst), about 45 minutes.
  • Drain the rice into a sieve and rinse under cold water until cooled; drain well and place in a large bowl.
  • In a very large skillet or flameproof casserole, melt 2 tablespoons of butter over medium heat.
  • Add in the leeks and cook/stir often, until tender, about 5 minutes; add to the wild rice.
  • In the same skillet, melt the remaining 2 tablespoons butter; add in the mushrooms and cook over med-high heat, stirring occasionally, until the mushrooms give off their juices, about 5 minutes.
  • Add in the port with cherries and the poultry seasoning and boil until the liquid is reduced to about 1/2 cup, 6-8 minutes.
  • Stir the mushrooms and port into the bowl of wild rice; add in the hazelnuts, parsley, salt, and pepper; mix well.
  • Transfer to a lightly buttered casserole, drizzle with broth, cover, and bake in preheated 350° oven until heated, about 30 minutes (for crustier stuffing, remove cover for last 15 minutes of cook time).

  • To bake all of stuffing in baking dish:
  • Preheat oven to 350°F. Butter 15x10x2-inch glass or ceramic baking dish. Transfer stuffing to prepared dish. Cover dish with buttered foil, buttered side down; bake stuffing until heated through, about 40 minutes.
