8 ounces fresh spinach, washed or 4 oz frozen chopped spinach
4 tablespoons unsalted butter, plus extra for greasing
1 garlic, clove, crushed
6 ounces wild mushrooms (such as ceps, bay boletus, saffron milk-caps, oyster, field mushrooms, and hen of the woods)
1 cup milk
3 tablespoons all-purpose flour
6 eggs, separated
salt
fresh ground black pepper
1 pinch grated nutmeg
2 cups freshly grated parmesan cheese

Steps:

  • Preheat the oven to 375°F.
  • Steam the spinach at a moderate heat for 3 to 4 minutes. Cool under running water, then drain, pressing out as much liquid as you can. Then chop finely. If using frozen spinach, defrost and squeeze dry.
  • Gently sauté the garlic and mushrooms in butter; turn up the heat and evaporate the juices.
  • When dry, add the spinach and transfer to a bowl. Cover and keep warm.
  • Measure 3 tablespoons of milk into a bowl. Bring the remaining milk to a boil. Stir the flour and egg yolk into the milk that is in the bowl, and blend well. Stir the boiling milk into the eggs and flour mixture; return to the pan and simmer to thicken.
  • Add the spinach mixture; season to taste with salt, pepper. and nutmeg.
  • Butter a 3 3/4 cup soufflé dish, paying special attention to the sides.
  • Sprinkle with a little of the cheese. Set aside.
  • Whisk the egg whites until they hold soft peaks.
  • Bring the spinach mixture back to a boil.
  • Stir in a spoonful of beaten egg whites, and then fold the remaining mixture into the remaining egg whites.
  • Turn into the soufflé dish; spread level. Sprinkle with the remaining cheese and bake in the oven for about 25 minutes until puffed, risen, and golden.

2 cups hot water
1 ounce dried porcini mushrooms
1 3/4 lbs egg bread, crust trimmed and cubed
6 tablespoons unsalted butter
4 cups leeks, coarsely chopped
1 cup shallot, chopped
1 1/4 lbs cremini mushrooms, sliced
1/2 lb fresh shiitake mushroom, sliced
2 cups celery, chopped
1 cup fresh parsley, chopped
1 cup toasted hazelnuts, chopped
3 tablespoons fresh thyme, chopped
2 tablespoons fresh sage, chopped
2 eggs, beaten
3/4 cup chicken stock
salt, to taste
ground black pepper, to taste
1 cup dried porcini mushrooms

Steps:

  • Combine the 2 cups hot water and the porcini mushrooms, let stand until the mushrooms are soft. About 30 minutes. Drain, reserving soaking liquid. Squeeze porcini dry and chop coarsely.
  • Preheat oven to 325*. Divide cubed bread between two baking sheets. Bake until beginning to brown. About 15 minutes. Cool then transfer to a very large bowl.
  • Melt the butter in a heavy Dutch oven over medium-high heat. Add the leeks, shallots, crimini or button and shiitake mushrooms. Saute until golden and tender, about 15 minutes. Mix in the celery and porcini mushrooms and saute for another 5 minutes. Transfer mixture to the bowl with the bread crumbs. Mix in the parsley, hazelnuts, thyme and sage. Season with salt and pepper and stir in the beaten eggs.
  • To bake the stuffing in a turkey: Fill the main cavity with the stuffing. Combine the broth and 1/2 cup of the reserved porcini soaking liquid in stuffing to moisten. Spoon remaining stuffing into a buttered baking dish. Cover with buttered foil. Bake stuffing in dish alongside turkey until heated through, about 30 minutes. Uncover and bake until top is crisp, about 15 minutes.
  • To bake all stuffing in pan: Preheat oven to 325*. Butter 15x10x2-inch baking dish. Mix 3/4 cup reserved porcini soaking liquid and 3/4 cup broth into stuffing. Transfer stuffing to prepared dish. Cover with buttered foil and bake until heated through, about 1 hour. Uncover and bake unil top is crisp, about 15 minutes.

1 cup Bisquick™ Gluten Free mix
1/3 cup plus 1 tablespoon shortening
3 to 4 tablespoons cold water
1 tablespoon butter
1 small onion, chopped (1/3 cup)
1 1/2 cups sliced fresh mushrooms (about 4 oz)
4 eggs
1 cup milk
1/8 teaspoon ground red pepper (cayenne)
3/4 cup coarsely chopped fresh spinach
1/4 cup chopped red bell pepper
1 cup gluten-free shredded Italian cheese blend (4 oz)

Steps:

  • Heat oven to 425°F. In medium bowl, place Bisquick mix. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary).
  • Press pastry in bottom and up side of ungreased 9-inch quiche dish or glass pie plate. Bake 12 to 14 minutes or until crust just begins to brown and is set. Reduce oven temperature to 325°F.
  • Meanwhile, in 10-inch skillet, melt butter over medium heat. Cook onion and mushrooms in butter about 5 minutes, stirring occasionally, until tender. In medium bowl, beat eggs, milk and red pepper until well blended. Stir in spinach, bell pepper, mushroom mixture and cheese. Pour into partially baked crust.
  • Bake 40 to 45 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before cutting.

1 (6 ounce) package Stove Top stuffing mix, Monterey Style with Mushroon & Onion
1 2/3 cups hot chicken broth
1/4 cup butter
2 (10 ounce) packages frozen chopped spinach, thawed and drain
2 cups grated parmesan cheese
1 cup chopped fresh mushrooms
1 small onion, finely diced
3 -4 eggs

Steps:

  • Heat oven to 400°F.
  • Mix stuffing, water and butter in a large bowl. Add all additional ingredients and mixed until well blended.
  • Shape into 60 balls, about 1 inch across.
  • Place in a single layer on a greased baking sheet. Chill 2 hours.
  • Bake 15 to 20 minutes or until lightly browned.

6 tablespoons unsalted butter
2 cups chopped yellow onion
1 cup chopped celery
1 cup minced carrots
3 garlic cloves, minced
1 large portobello mushroom, stem removed, cap cut into 1/2-inch chunks
1/2 pound shiitake mushrooms, tough stems removed, caps cut into thick slices 1/2 pound oyster mushrooms, sliced
Salt and black pepper to taste
8 cups stale, sweetened corn bread, crumbled
1 cup pecans, toasted and chopped coarse

Steps:

  • In large, deep skillet, melt butter over medium heat. Add chopped onion, celery, carrot and garlic. Saute, stirring, for 5 to 7 minutes, until tender. Add portobello, shiitake and oyster mushrooms, and season with salt and pepper. Cook for another 5 minutes, or until mushrooms have cooked. Remove from heat, and cool to room temperature. (If cooking in advance, cover and refrigerate overnight.)
  • When ready to cook, preheat oven to 400 degrees. In large bowl, combine mushroom mix, corn bread, pecans, marjoram, thyme, sage and parsley. Season to taste with salt and a teaspoon of pepper. Add milk, mixing well. Add optional turkey drippings to taste.
  • Transfer to 9-by-12-inch greased, shallow casserole, and cover with foil. Bake for 20 minutes, uncover, and bake until top is lightly browned, about 15 minutes.

I have never met Leslie but I'd like to thank her! I found this on another web site and after trying it I think it's the only way I'll make stuffing again. If you'd like to try something a bit different and really good give this one a try.

1/2 cup uncooked wild rice
1 1/2 cups water
2 cups chopped fresh broccoli
1/2 cup butter
1 1/2 cups sliced mushrooms
1 cup chopped onion
1 (16 ounce) package herb seasoned stuffing mix
1 (14 ounce) can chicken broth
1/2 cup sliced almonds (optional)

Steps:

  • Bring rice and 1 1/2 cups water to boil in a pot. Cover, reduce heat to low, and simmer 45 minutes.
  • Place broccoli in a pot with enough water to cover, and boil 5 minutes, or until slightly tender. Remove from heat, and drain.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking dish.
  • Melt the butter in a skillet over medium heat, and saute the mushrooms and onion until tender. Mix in cooked rice, cooked broccoli, stuffing mix, broth, and almonds.
  • Transfer to the prepared baking dish (or use to stuff turkey just before roasting).
  • Bake 30 minutes in the preheated oven, or until golden brown.
