RETRO PARTY SANDWICH LOAF

Steps:
- Trim the bread into a cylinder with a large serrated bread knife, flattening out the top and evening out the sides so that you are left with a tall cake-like shape. (For neat edges, use a 6-inch cake pan or a small plate on top of the loaf as a guide to cut around.) Cut the bread horizontally into 4 layers, using a sawing motion.
- Place the bottom bread layer on a serving plate or cake stand and cover with half of the mayonnaise. Layer on one container of the Black Forest ham. Place the second bread layer on top, cover with half of the mustard and top with the smoked turkey. Place the third bread layer on top, cover with the remaining mayonnaise and top with the remaining ham. Spread the cut side of the fourth bread layer with the remaining mustard and close the sandwich. Press down to adhere the layers together.
- Frost the loaf with the cream cheese using an offset spatula. Press the scallions along the bottom edge of the loaf. Sprinkle the chives on the outer top edge of the loaf. Sprinkle the spring mix greens in the center of the cake. Arrange the cherry tomatoes cut-side down at regular intervals around the top of the cake. Serve immediately or chill until ready to serve.
MULTI-GRAIN BREAD WITH SESAME, FLAX AND POPPY SEEDS

- Place cereal in large bowl. Pour 2 cups boiling water over. Let stand until mixture cools to between 105°F. and 115°F., about 20 minutes.
- Sprinkle yeast over cereal. Add 1 cup bread flour, oil, sugar and salt and stir until smooth. Gradually mix in enough remaining bread flour to form dough. Cover dough; let rest 15 minutes.
- Turn out dough onto floured surface. Knead until smooth and elastic, adding more flour if sticky, about 10 minutes. Oil large bowl. Add dough to bowl; turn to coat. Cover bowl with clean kitchen towel. Let dough rise in warm area until doubled, about 1 hour.
- Mix all seeds in bowl. Punch down dough. Turn out onto lightly oiled surface. Knead briefly. Shape into 12x4-inch loaf.Sprinkle baking sheet with 2 teaspoons seeds. Place loaf atop seeds. Cover with towel. Let rise in warm area until almost doubled, about 30 minutes.
- Position 1 oven rack in center and 1 just below center in oven. Place baking pan on lower rack and preheat oven to 425°F. Brush loaf with water. Sprinkle with remaining seed mixture. Using sharp knife, cut 3 diagonal slashes in surface of loaf. Place baking sheet with loaf in oven. Immediately pour 2 cups water into hot pan on lower rack in oven (water will steam).
- Bake loaf until golden and crusty and tester inserted into center comes out clean, about 35 minutes. Transfer to rack and cool.(Can be made 1 day ahead. Wrap in plastic; store at room temperature.)

This bread is very similar to Nature's Own 12 Grain Bread....just not with all the additives that we can't pronounce. This is my husbands favorite bread that I bake. Please note: Use the Basic White bread setting on your bread machine.

- PROOF YEAST: Combine the warm water, yeast, and sugar in a medium mixing bowl. Whisk until the yeast dissolves. Let this mixture sit for about 10 minutes. If it is slightly frothy and you can see bubbles forming on top, then your yeast is active. If you don't see any activity, your yeast is likely too old or your water was too warm and your yeast is not alive.
- MIX DOUGH: In a large mixing bowl, combine the bread flour, whole wheat flour, salt, rolled oats, sesame seeds, sunflower seeds, and flax seeds. Stir until well combined. Add the oil, honey or agave, and water/yeast mixture into the bowl. Use a silicon spatula or mixing spoon to stir until the dough starts to come together. It will be very wet. Use your hands to finish mixing the dough until there are no dry patches of flour left. I like to do this by grabbing the dough with my whole hand and squeezing and pinching all over to make sure there are no hidden pockets of dry flour. Cover the bowl with a shower cap, plastic wrap, or a damp towel and let it sit for about 15 minutes.
- STRETCH AND FOLD: During the next hour, you will do 4 rounds of stretch and folds about every 15 minutes. This is a gentler way of developing the gluten structure without kneading and allows for more moisture and whole grains in the bread which will give it better texture. The video gives a good demonstration of stretch and folds, but to do this: get your hand wet and scoop underneath the dough pulling up on one side. Stretch the piece of dough up as far as it will go without tearing and fold it down over itself. Rotate the bowl 90 degrees and do another stretch and fold. Go all the way around the bowl until the dough is holding into a more structured ball. Cover the bowl and let it sit for about 15 more minutes before doing your next round. Do this a total of 4 times.
- FERMENT (1ST RISE): Cover the bowl after your last round of stretch and folds and let it sit at room temperature until double in size and filled with air. This will take about 30 more minutes if using quick rise yeast and 1 hour if using active dry yeast.

- Heat milk in a small saucepan over low heat until milk is warm (about 115 degrees F). It should be warm to the touch like warm bathwater but not hot. Remove from heat and pour into a large bowl and stir in oats, yeast and honey. Let the mixture sit for 5 minutes.
- Next, stir in melted butter into the bowl with the oats/yeast/honey. Immediately add in bread flour, whole wheat flour, flaxseed meal and salt mix with a wooden spoon until a dough begins to form.
- Add in sunflower seeds, sesame seeds and poppyseeds and gently mix into the dough. At this point I like to get the dough to come together with clean hands. Place dough onto a well-floured surface and knead the dough with your hands for 10 minutes. Another option is to use the dough hook on your electric mixer to knead the dough (I prefer this method because it's easier).
- Once done kneading, form dough into a ball and place in a large bowl coated with about 1 tablespoon oil, turning the dough over to coat with oil. Cover with plastic wrap and a warm towel and allow the dough to rise for about 90 minutes, or until doubled in size. This may take more of less time depending on the weather or temperature in your home.
