SAM'S MOI LUAU



Sam's Moi Luau image

2 pounds calamari or octopus
3 pounds Luau leaves
1 tablespoon Hawaiian salt
1/2 teaspoon baking soda
6 tablespoons butter
2 medium onions, diced
3 cups coconut milk
3/4 cup cooked and diced taro
3/4 cup cooked and diced sweet potato
11/2 teaspoons salt
1 tablespoon sugar
Crispy Moi, recipe follows
4 (3/4 to 1 pound) farm-raised moi
Cornstarch
Vegetable oil, for shallow frying

Steps:

  • Clean calamari and slice in rings, then set aside.
  • Wash luau leaves, remove stems and thick veins. In a pot, boil cups water with the Hawaiian salt and baking soda. Add the leaves to the boiling water and reduce heat. Simmer, partially covered for 1 hour. Drain and squeeze out liquid.
  • Saute onions and calamari in butter until onions are translucent. Add coconut milk, cooked luau leaves, taro, sweet potato, salt, and sugar. Simmer for 30 minutes.
  • Top with Crispy Moi.
  • Clean and score fish. Dust fish with cornstarch and set aside. Heat oil for shallow frying in a wok or large skillet. Fry fish about 6 to 8 minutes, turning once, until crisp and golden brown. Drain on absorbent paper. Transfer to a warm serving platter.

OCTOPUS LUAU

4 tablespoons grapeseed oil
1/4 cup (4 tablespoons) butter, cut into cubes
1 large sweet onion (such as Vidalia), minced
1 pound luau leaves (leaves from the taro root plant), rinsed
1 cup chicken stock
3 to 4 pound octopus, de-beaked
1 cup coconut milk
1 tablespoon sugar
2 tablespoons cornstarch
Salt and freshly ground black pepper

Steps:

  • In a large pot (which can accommodate luau leaves and octopus) heat 2 tablespoons of the grapeseed oil over medium-high heat and add butter. When it begins to shimmer, add the onion and saute until translucent. Add the luau leaves and pour in chicken stock. The luau leaves will be simmered over low heat for a very long time until tender, about 6 hours. Replenish with water, as needed, during the course of cooking.
  • About 30 minutes before mealtime, brush the remaining 2 tablespoons of grapeseed oil on the octopus and add to the pot of luau leaves with enough water to cover. Combine the coconut milk and sugar in a bowl. Create a slurry in a separate small bowl by whisking 2 tablespoons water gradually into the cornstarch. Whisk the slurry into the coconut milk mixture, and add to the pot of luau leaves and octopus, and season with salt and pepper. Simmer until the octopus is cooked through, about 20 minutes.
  • Remove octopus to a utility plate to drain and set aside until cool enough to handle. Remove the octopus head and legs, split in half, then slice and dice small. Return to pot of luau leaves and adjust seasoning, to taste, with salt and pepper as needed.

CHICKEN AND PORK LAU LAU

12 to 24 large luau leaves (leaves of the taro root plant), as needed to wrap proteins
1 (2 to 3-pound) pork butt, cut into 6 pork-chop sized slices
6 (6-ounce) boneless chicken breasts
12 (3-ounce) pieces sablefish, butterfish or other fish of your choice
Sea salt, as needed to taste
24 ti leaves to serve as wrappers, or aluminum foil (ti leaves are not to be eaten, but are used as the packaging material to bake/steam the luau leaf packets)

Steps:

  • For the luau leaves, have a large bowl of ice water standing by. In a large pot fitted with a steamer basket (or use a stainless steel colander with handles), steam the luau leaves until soft but still bright green, and then plunge the steamer basket into the ice water to stop the cooking. Set the steamer basket on a utility platter or over a pot to let drain well and cool.
  • Lay the steamed luau leaves out on your work surface, then lay a piece of chicken or a piece of pork on each leaf topped with a piece of fish. Season with sea salt. Enclose the meat and fish in the luau leaves and then package them in ti leaves or aluminum foil. If you are using ti leaves, arrange the leaves perpendicular to each other in across arrangement. The stem of the ti leaf acts as the "string" to tie the package shut. The chicken and pork lau lau can then be cooked in an imu (the earthen oven) or in a conventional oven at 350 degrees F until cooked through, about 1 hour. 15 cubic feet Lava river rocks (lava rocks are porous) to be pre-heated
1/2 cord wood
6 to 8 sheet metal panels measuring approximately 4 feet square (these will retain the heat without being consumed by the fire)
Metal fire tongs to move rocks, panels, wood
Fire mitts to protect your hands from the heat
Safety goggles and protective gear for your body
A large bunch of ti leaves bound together to be used as a "brush" to remove ash from the rocks
A stretcher constructed with 2 (8-foot by 2- by 6-inch) pieces lumber for the wood handles, connected by 2 (2- by 6-inch by 3- to 4- feet) pieces wood, and an affixed support platform of plywood (3/4-inch by 4-feet by 3- to 4-feet)
15 feet of 4 foot high heavy gauge chicken wire temporarily affixed to the platform part of the stretcher to hold the pig closed after adding the rocks to the carcass
14 gauge wire as needed to secure the chicken wire
Wire cutters
1 entire head-on pig carcass, innards removed
Banana "stumps" to place between the pig meat and the hot coals to prevent the flesh from burning
Another large bunch of ti leaves, hard stalks snapped out, to be used like aluminum foil to steam the pig

Steps:

  • Dig a pit in the sand 2 feet deep and 6 feet in diameter. Add the river rocks and cover with enough of the wood to get the fire underway to heat the rocks. (You will add the additional wood as needed.) Start the fire (to heat the rocks to 800 degrees F). Add the metal panels on top of the fire to contain heat without smothering the fire.
  • Using assistance place the gutted pig in the supine position on the stretcher-like platform and wrap the affixed chicken wire around to mostly secure the pig, but leaving enough room to be able to put the heated lava rocks inside the body cavity.
  • Place some banana "stumps" in the body cavity of the pig to serve as a buffer between the hot coals and the pig meat to prevent the flesh from burning.
  • Protecting your face, hands, and body with proper gear and using safe equipment, remove enough of the metal panels from the fire to retrieve the heated rocks with fire safe tongs. Someone will use heavy fire mitts to hold the rocks in a pair of tongs, while the other person uses the ti leaves "brush" to dust off the ash. The rocks with the ash removed are then placed one-by-one in the cavity of the pig so it will cook from the inside out with dry heat. Place some additional banana "stumps" in the body cavity of the pig to serve as a buffer between the hot coals and the pig meat to prevent the flesh from burning. The carcass of the pig is then closed with chicken wire and additional metal wire as needed to secure the chicken wire. Remove the attachments that have been holding the chicken wire to the stretcher. Transfer the pig to sit atop the metal panels of the imu, and use the additional ti leaves like aluminum foil, placing them dull side up, shiny side down in a cross configuration to steam the exterior of the pig with the moisture from the ti leaves.
  • When the pig is cooked through, approximately eight hours, use assistance to remove it from the fire, let rest for 30 minutes, then carve it down. The cheeks of the pig should be reserved for the most honored guest.

  • The idea of building a pit to cook is as old as time. What you cook can be as complicated or as easy as you want, and its size can be whatever the labor force allows--a much better usage for bob a job week than ruining the paintwork on your car. Suggestions for food to cook are ears of corn, potatoes, fish fillets wrapped in foil with butter and seasoning, chops or sausages wrapped in foil, clams, mussels, or lobsters. Use your imagination and experiment.
  • 1. Drive 4 posts into the ground to delineate a rectangular area about 5 by 8 feet. Dig out to a depth of 18 inches, banking the sand around the edges.
  • 2. Line the pit with smooth, dry pebbles or bricks.
  • 3. Start a small fire on top of the stones in the middle and gradually add logs until you fill the whole pit.
  • 4. Keep the fire stoked for at least an hour, then allow to burn down for another hour to ensure the stones are properly heated.
  • 5. Carefully rake the embers from the pit without disturbing the stones.

  • 7. Lay the prepared food in a single layer on top of the seaweed.
  • 8. Spread a 6 inch layer of seaweed over the food. Make sure the food is completely covered.
  • 9. Cover with a tarp that extends at least 12 inches beyond the sides of the pit. Weigh down the edges with stones. Let the food cook for at least 3 hours.

1 large banana leaf
6-lb boneless pork shoulder Boston roast (Boston butt), cut across grain into 6 pieces
2 1/2 tablespoons coarse salt
2 1/2 tablespoons natural liquid smoke-flavoring

Steps:

  • Preheat oven to 500°F.
  • Lay 2 sheets of foil (each about 1 feet long) on a work surface with long sides overlapping by about 4 inches. Cut 2 (12-inch) lengths from banana leaf and center 1 on foil. Put pork on banana leaf and sprinkle with salt and liquid smoke. Cover top of pork with other 12-inch length of banana leaf and 2 overlapping sheets of foil (each about 1 1/2 feet long). Crimp edges of foil tightly to form a packet and put in a large roasting pan. Add 1 inches of water and cover pan tightly with more foil.
  • Bake pork in middle of oven 4 hours. Pour off liquid from pan and, when pork is just cool enough to handle, shred with 2 forks in a bowl. Serve warm.

3 frozen banana leaves, thawed
6 cups water, divided
1/2 teaspoon liquid smoke

Steps:

  • Preheat oven to 350°F. Using small sharp knife, cut 1/4-inch-deep slits 1 inch apart all over pork roast. Rub 2 tablespoons sea salt all over pork. Unfold 1 banana leaf on work surface and place pork roast atop leaf. Fold up leaf around pork, enclosing completely. Repeat wrapping pork in remaining 2 banana leaves, 1 at a time.
  • Tie with kitchen string to secure, then wrap roast in foil. Place pork in roasting pan; pour 4 cups water into pan.
  • Roast pork in oven until very tender when pierced with fork, about 5 hours. Unwrap pork and cool slightly. Shred pork and place in large bowl. Bring remaining 2 cups water and remaining 2 teaspoons salt to boil in small saucepan. Add liquid smoke; pour over pork and stir to blend. Let stand 10 minutes to allow liquid to flavor pork. Serve.
