Whole Branzino in Grape Leaves with Zucchini, Olives, and Mint image

Grape leaves prevent the fish from sticking to the grill while keeping it tender and moist. Branzino is a variety of sea bass; if you can't find it, you can substitute whole trout.

3 medium zucchini
2 lemons, 1 juiced and 1 sliced into wedges
1/4 cup coarsely chopped green olives
2 tablespoons coarsely chopped fresh mint
1 tablespoon plus 1 1/2 teaspoons extra-virgin olive oil
Coarse salt and freshly ground pepper
4 whole branzino (10 to 12 ounces each), scaled, gutted, and cleaned
8 brined grape leaves, stems removed

Steps:

  • Heat grill to medium. Very thinly slice zucchini on the bias (preferably on a mandoline). Transfer to a medium bowl, and toss with lemon juice, olives, mint, 2 1/2 teaspoons oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Let stand while preparing fish.
  • Score 3 slits in both sides of each fish using a sharp paring knife. Season with some pepper and 1/8 teaspoon salt per side. Arrange 4 sets of 2 grape leaves side by side on a work surface. Place 1 fish on top of each set, and wrap to secure. Brush with remaining 2 teaspoons oil.
  • Grill fish until cooked through, 4 to 5 minutes per side. During last half of cooking, arrange lemon wedges around fish, and grill until caramelized and softened, 2 to 3 minutes per side. Transfer fish and lemons to a serving plate. Serve wrapped fish with zucchini salad and grilled lemons.

One 2-pound whole branzino
3 cloves garlic, sliced
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
3 lemons, sliced
1 bunch thyme
1 bunch flat-leaf parsley, leaves chopped

Steps:

  • Preheat the oven to 500 degrees F. Set a wire rack in a rimmed baking sheet.
  • Cut slits into the branzino skin 1 inch apart, being careful not to cut through the spine. Stuff each slit with the garlic then drizzle the fish with oil. Season heavily with salt and pepper. Stuff the fish cavity with the lemon slices and the thyme sprigs. Transfer the fish to the wire rack and roast in the oven until the flesh is flaky and cooked through, about 14 minutes.
  • Remove and discard the thyme sprigs. Sprinkle with the parsley and serve.

Zest and juice of 1 lemon
1/4 cup extra-virgin olive oil
2 cloves garlic, minced
2 teaspoons chopped capers
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh dill
1 tablespoon chopped fresh tarragon
Kosher salt and freshly ground black pepper
One 2- to 2 1/2-pound branzino or whole brook trout, fins trimmed, gutted and scaled
2 sprigs fresh rosemary
4 sprigs fresh thyme
4 cloves garlic, crushed
1 lemon, sliced
Kosher salt and freshly ground black pepper
1/2 cup extra-virgin olive oil

Steps:

  • For the Salmoriglio sauce: Whisk together the lemon juice and olive oil in a medium bowl. Add garlic, capers, herbs and lemon zest. The sauce should be loose in consistency with high-acid flavor. Season to taste with salt and pepper.
  • For the fish: Preheat the grill for cooking over high heat (around 450 to 500 degrees F).
  • Bring fish to room temperature, 30 minutes, then wrap fish briefly in paper towels to dry out skin, which will help keep the fish from sticking to the grill.
  • Stuff the inside cavity of the fish with herbs, garlic and lemon slices, and sprinkle the cavity with salt and pepper. Brush the outside of the fish with olive oil, then sprinkle with salt and pepper. Brush a fish grill basket with oil or spray with nonstick cooking spray. Place fish in fish grill basket and secure shut. (If you don't have a fish grill basket, place the fish between 2 wire cooling racks and secure the racks together with wire.)
  • Place basket on the hottest part of the grill. Cook until the eye turns white and skin is charred, 6 to 8 minutes per side. Let rest 5 minutes.
  • Place fish on a platter and dress with the Salmoriglio sauce.

SAFFRON LEMON BRANZINO



Saffron Lemon Branzino image

Iranians love eating fish with rice to celebrate Nowruz, the Persian new year. It's an old tradition honored by Iranians living in other countries, too. A white fish is the classic choice; both branzino and Mediterranean sea bass (lavaraki) work well. The fish is flavored with saffron and lemon and stuffed with an onion, walnut, herb and pomegranate molasses filling. Sabzi polo (Persian herb rice) is the perfect accompaniment.

Cooking spray
1 teaspoon saffron threads, ground in a mortar and pestle
3 ice cubes
Two 1 1/2-pound whole branzino, cleaned, gutted and patted dry
Kosher salt and freshly ground pepper
4 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced
Juice from 2 lemons (about 1/2 cup)
1 cup fresh flat-leaf parsley leaves, chopped
1/2 cup walnuts, chopped
3 tablespoons pomegranate molasses
1/2 teaspoon turmeric
Sabzi polo (Persian herb rice), for serving

Steps:

  • Preheat the oven to 420 degrees F with a rack in the middle position. Line a sheet pan with parchment paper and coat with cooking spray.
  • Place the saffron and ice in a small bowl and set aside at room temperature until the ice melts. This will be your saffron water.
  • Using a sharp knife, cut 5 or 6 slits, 1 inch apart, through the skin and flesh of each fish on one side. Salt and pepper both sides of the fish and set aside.
  • Heat 2 tablespoons of the olive oil in a medium skillet over medium heat. Add the onions and cook, stirring occasionally, until golden, about 8 minutes. Add the garlic and cook, stirring occasionally, until fragrant, 1 minute more.
  • Add 2 tablespoons of the lemon juice, the parsley, walnuts, pomegranate molasses, turmeric, 1 tablespoon of the saffron water, 1 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring occasionally, for 5 minutes. Remove from the heat and set the onion filling aside.
  • Stir together the remaining 2 tablespoons olive oil, the remaining lemon juice and the remaining saffron water in a small bowl. Brush the insides of the fish with some of this saffron-lemon mixture, then stuff the cavities with the onion filling. Seal the cavities shut using 3 toothpicks along each open edge. Brush the top of the fish with some of the saffron and lemon mixture, then transfer the fish to the prepared sheet pan.
  • Bake for 10 minutes. Brush the top of the fish with some of the saffron mixture, then bake until cooked through and the flesh flakes easily, about 15 minutes more (see Cook's Note). Remove the sheet pan from the oven and turn on the broiler.
  • Brush the top of the fish with more of the saffron lemon mixture, then broil until the skin is golden and somewhat crispy, 3 to 5 minutes; keep a close eye to make sure the tops don't burn. Remove the toothpicks and serve with sabzi polo (see Cook's Note).

  • Roast the fish and vegetables until the fish are cooked through and the vegetables are just tender, about 20 minutes, tossing the vegetables once or twice. Meanwhile, in a small bowl, toss the breadcrumbs with 2 teaspoons of the garlic oil and the chopped thyme. Remove the fish from the oven, and tent with foil to keep warm. Scatter the breadcrumbs over the vegetables, and increase oven temperature to 450 degrees. Roast until crumbs are crisp, about 5 minutes.
