PIZZA MOUNTAIN PIES

Steps:
- Spread butter over bread slices. Place one slice in a sandwich iron, buttered side down. Spread with pizza sauce; sprinkle with 2 tablespoons cheese, pepperoni and, if desired, green pepper. Top with the remaining cheese and bread slice, buttered side up. Close iron., Cook over a hot campfire until golden brown and cheese is melted, 3-6 minutes, turning occasionally.

WHITE MOUNTAIN PIE
This was my step father Bobby's absolute favorite pie, and we lost him to cancer in 2009. He loved it so much I had to make two; one being just for him! I still make it as it brings a 'little bit of Bobby' back to the table. I dedicate this recipe to him. RIP Bobby John Love

Steps:
- In mixing bowl, beat cream cheese, sugar, and vanilla.
- Fold in cool whip until mixed well. Then fold in drained pineapple and nuts(opt).
- Spread into pie crust. Cover and refridgerate at least 1-2 hours before serving. Best if refridgerated overnight!

Made using bread and your choice of filling, these pies are quick, cheap, easy, fun, and very adaptable to everyone's needs! Pie iron cookers are available at camping or outdoors stores.

Steps:
- Spray a cast iron pie cooker with nonstick cooking spray. Evenly spread one side of each slice of bread with softened butter. Lay a slice of bread, butter side down, into the cooker. Spoon on pie filling, and top with second slice of bread, butter side up.
- Close up cooker, and cook over a hot campfire, turning occasionally, until the pie is hot and golden brown, about 4 minutes.

WHITE PIE
In southern IL Burton's Cafe is famous for their White Pie. This is my attempt to replicate it. White vanilla can be found wherever cake decorating supplies are sold and in many kitchen specialty shops. Prep and cook times do not include pie crust. Cook time is chill time.

Steps:
- In a saucepan cook flour, cornstarch, sugar, salt,egg whites and milk until bubbling, stirring constantly; continue to cook and stir another 3 minutes.
- Remove from heat and add butter, white vanilla and almond extract, stir.
- Lay plastic wrap on pudding surface and allow to cool; pour into cool pie shell and chill, again covering surface with plastic wrap.
- When ready to serve top with whipped topping and sprinkle with ground almonds.
SOUTHERN ILLINOIS WHITE PIE
Steps:
- Mix corn starch, flour,1/4 salt, and 3/4 C. sugar.Add 2 C. milk. Cook in a double boiler, stirring constantly till it is thick. Remove from stove, fold in the beaten egg whites which you have added the 1/4 C. sugar vanilla and almond extract.Pour into an already baked pie shell or a prepared grahan cracker crust.Sprinkle with nuts. Cool in frig. until set
GRANDMA DARCY'S SQUASH PIE
Grandma Darcy gave me this recipe many years ago. Since then we always have her squash pie on Thanksgiving instead of pumpkin, and like it much better!

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Press pie crust into a 9-inch pie plate.
- Beat evaporated milk, squash, white sugar, brown sugar, eggs, cinnamon, vanilla extract, and salt together in a bowl using an electric mixer until smooth; pour into pie crust.
- Bake in the preheated oven for 10 minutes. Reduce oven temperature to 350 degrees F (175 degrees C) and continue baking until pie is set, about 30 minutes more.
