1/2 cup white miso paste
1/4 cup plus 1 tablespoon water
1/4 cup sugar
3 tablespoons rice wine vinegar
2 teaspoons light soy sauce
1/4 teaspoon kosher salt
2 tablespoons peanut oil
1/2 teaspoon sesame oil

Steps:

  • In small bowl, whisk together the miso, water, sugar, vinegar, soy sauce, and salt. While whisking constantly, gradually add the peanut and sesame oils until you have a creamy dressing. Use now or store covered, in the refrigerator, for up to 3 days.

1 rounded tablespoon white or yellow miso
2 tablespoons seasoned rice vinegar, or 1 tablespoon rice vinegar and 1 tablespoon fresh lime juice
1/2 teaspoon grated fresh ginger
1 small garlic clove; pressed, minced or put through a press
Pinch of cayenne
2 tablespoons dark sesame oil
2 tablespoons peanut oil or grapeseed oil
2 tablespoons plain low-fat yogurt

Steps:

  • Combine the miso and vinegar (or vinegar and lime juice) in a small bowl and whisk together. Add the remaining ingredients and whisk until amalgamated. You can also mix this in a blender.
  • Toss with the salad of your choice.

1 (2-inch) piece fresh ginger, peeled
2 tablespoons plus 1 1/2 teaspoons white miso
3 tablespoons rice-wine vinegar
2 tablespoons grated carrot
1/2 teaspoon grated white onion with juice
1/2 teaspoon sugar
1/4 cup plus 2 tablespoons vegetable oil

Steps:

  • Grate ginger into a double layer of paper towels. Gather sides of paper towel together and squeeze ginger juice into a medium bowl. Add miso, vinegar, carrot, onion, and sugar; whisk to combine. Slowly whisk in oil until emulsified. Keep refrigerated in an airtight container until ready to use. Re-whisk before using.
