PECAN MACAROONS
No clue as to where I got this recipe but I make them all the time. Yes, they are that good!

Steps:
- 1. Preheat oven to 300 degrees. Beat egg white until almost stiff. Gradually beat in the brown sugar. Fold in the pecans.
- 2. Drop by teaspoonsful onto greased cookie sheet. Bake @ 300 for approximately 15-20 minutes or until light golden brown. Remove immediately from oven.

- Place syrup in a small saucepan; bring to a boil. Reduce heat; simmer, uncovered, 5 minutes. Transfer to a bowl; cool completely., In a small heavy skillet, cook and stir pecans over medium heat, about 3 minutes. Drizzle with 1 tablespoon cooked syrup; cook and stir 1 minute longer. Spread on foil to cool., In a small bowl, beat cream until soft peaks form. In a large bowl, beat ricotta and mascarpone cheeses until light and fluffy. Gradually beat in 1/3 cup cooled syrup; gently fold in whipped cream., To serve, spoon mousse into dessert dishes. Drizzle with remaining cooled syrup; top with candied pecans.

- In a small saucepan, combine milk and butter. Cook and stir over low heat until butter is melted. Place the confectioners' sugar in a large bowl; add milk mixture and beat until smooth. Stir in the walnuts, maple flavoring and vanilla. Roll into 3/4-in. balls; place on waxed paper-lined baking sheets. Refrigerate until firm, about 1 hour., In a microwave, melt the chips, bittersweet chocolate and shortening; stir until smooth. Dip balls into chocolate; allow excess to drip off. Place on waxed paper; let stand until set. Store in an airtight container.

- In a medium-sized bowl whisk together the flour, baking soda, baking powder, salt, and cornstarch. Set aside.
- In the bowl of an electric mixer fitted with a paddle attachment or large bowl with a handheld electric mixer combine butter and sugar, mix on medium for around 2 minutes, until light and fluffy. Make sure to scrape the sides of the bowl so everything is evenly combined.
- Add egg, vanilla, and maple extract mix until fully combined. The mixture may seem a little curdled at first just keep mixing so it is as best combined. Gently fold in dry ingredients then stir in the toasted pecans.
- Scoop 1.5 tbsp size cookies, with a medium cookie scoop. Place cookie dough balls on a wax-lined tray that can fit in the refrigerator or I like to use my favorite plastic containers. Let the dough balls chill for two hours.
