3 ounces white chocolate, coarsely chopped
1/3 cup whole cream or 1/3 cup half-and-half
8 ounces cream cheese, softened
1 tablespoon sugar
1 teaspoon orange zest
1 teaspoon orange extract

Steps:

  • In heatproof bowl set over saucepan of hot (not boililng water, melt white chocolate with cream, stirring gently until smooth. Let cool to room temperature.
  • In separate bowl, beat cream cheese with sugar until fluffy; beat in orange rind. Stir in chocolate mixture and orange flavoring.
  • Make-ahead: Scrape into airtight container and refrigerate for up to 2 days.
  • Makes 1-1/2 cups.

½ cup unsalted butter, softened
¾ cup confectioners' sugar
2 tablespoons brown sugar
1 teaspoon vanilla extract
1 cup miniature semisweet chocolate chips

Steps:

  • Beat cream cheese and butter together in a bowl until smooth. Add confectioners' sugar, brown sugar, and vanilla to the cheese mixture; stir. Stir chocolate chips through the cheese mixture.

8 oz cream cheese, room temperature
1 box (3.4 oz) cheesecake pudding mix (dry without milk)
1/2 c powdered sugar
3 oz white chocolate, melted and cool (plus extra for garnish, if desired
1 tsp vanilla extract
4 Tbsp milk (or more for desired consistency)

Steps:

  • 1. beat the cream cheese in a large bowl until fluffy. add the pudding mix, powdered sugar and chocolate and beat until combined.
  • 2. mix in vanilla and milk, 1 tablespoon at a time until you have reached your desired consistency.
  • 3. store in refrigerator, but serve at room temperature. if desired, you can grate more white chocolate on top before serving.
  • 4. suggestions: cookies, fruit, or other small sweets.

300g digestive biscuits
150g unsalted butter, melted, plus extra to grease
400g white chocolate, broken into pieces
300g full-fat cream cheese (we used Philadelphia)
250g mascarpone
300ml double cream
200g strawberries or raspberries, to serve

Steps:

  • Crush the biscuits in a food processor until completely ground. Add butter and whizz again until you have the desired crumbly consistency.
  • Grease and line the base of a 23cm deep, loose-bottomed cake tin. Add the biscuit mixture to the cake tin and pat it flat. Leave to set in the fridge for approximately 30 mins.
  • Begin melting the chocolate in a heatproof glass bowl over a small pan of hot water on a low heat. Stir occasionally to prevent sticking. Remove from the heat and leave to cool for 10 mins until barely warm but still liquid.
  • Meanwhile whisk the cream cheese and mascarpone together. Add double cream and keep whisking until the mixture is just holding its own shape. Finally, add the melted chocolate and whisk until just combined.
  • Spoon the mixture over the cooled and set biscuit base, then smooth the top. Return to the fridge to cool for at least 6 hrs until the topping is set. Finally, decorate with fruit.
