3 tablespoons extra-virgin olive oil
2 tablespoons butter
1 medium white onion, diced
1 pound Italian rice
2 1/2 cups vegetable broth
1 large head radicchio, chopped
2 1/2 cups red wine
1/2 cup finely grated fresh Parmigiano
Salt and freshly ground black pepper

Steps:

  • Heat the olive oil with the butter until hot over medium heat, and then cook the onions with some salt and pepper, stirring, until soft.
  • Stir in the rice; it will mix and get coated with the oil and become toasted and translucent.
  • Start adding your vegetable broth, 1 ladle at a time, stirring so the rice doesn't stick. When that's absorbed, keeping adding more until you are finished with the broth. Stir in the radicchio and cook 1 minute, and then begin ladling in the wine a little at a time until completely absorbed. The risotto will take about 16 to 18 minutes to cook. Remove from the heat, add your Parmigiano and mix well.

POACHED VEAL EYE ROUND WITH TUNA, ANCHOVIES AND CAPERS SAUCE

2 pounds veal, eye round, 1 piece, trimmed and ready to be cooked
4 quarts white stock, veal or beef or vegetable
2 egg yolks (fresh or pasteurized)
Sea salt, fine, to taste
Lemon juice, to taste
1 cup olive oil
1 1/2 cups tuna fish, canned in olive oil, drained
1 ounce anchovies, fillets, preserved in olive oil, drained
1 ounce capers, preserved in salt, soaked in fresh water and drained
1 tablespoon vinegar, red wine
White wine, (sauvignon) to taste
1/2 cup heavy cream
3 celery hearts with leaves
1 ounce capers, preserved in salt, soaked in fresh water and drained
1 ounce anchovies, fillets, preserved in olive oil, drained
Peppercorns, black, freshly ground, to taste
Olive oil, extra-virgin, to taste

Steps:

  • Place the stock in an 8-quart saucepan and bring it to a simmer. Adjust the flavor and place the meat inside, making sure that will be completely submerged by the liquid. Place a lid on and cook gently without simmering (poaching is 190 degrees) until the meat reaches 110 degrees internal temperature. At that point turn the heat off and let the meat cool inside its own liquid. The carry over cooking should leave the meat medium and pink. (If you prefer it well done cook it longer).
  • Prepare the mayonnaise either by hand or in a food processor. Stir the egg yolks with salt, some lemon juice and add the oil very carefully. Adjust the flavor. Puree the tuna, anchovies and capers in a blender adjusting the consistency with some white wine, until smooth. In a bowl incorporate the tuna puree, the mayonnaise, the heavy cream, adjust the consistency and the flavor with more wine and vinegar as needed.
  • Place some of the sauce on a 12-inch plate. Slice the veal very thin and place it in the center of the plate on top of the sauce. Garnish with the celery, leaves, capers, anchovies, black pepper and extra-virgin.

1 pound smoked haddock
1 medium onion, finely chopped
4 ounces butter
1 teaspoon garam masala
1/2 teaspoon turmeric
12 ounces basmati rice
4 hard boiled eggs, 2 roughly chopped, 2 quartered
1/2 pint heavy cream, warmed (optional)
Salt
Black pepper, freshly ground
1 tablespoon chopped parsley

Steps:

  • Simmer the haddock in 4 cups salted water for 10 to 15 minutes, but don't over cook. Drain the fish, saving the cooking water. Remove the skin and bones, and flake the fish, keep hot.
  • Fry the onion gently in the butter with the garam masala and turmeric until softened.
  • Cook the rice in the haddock water until tender, then drain and allow to dry out a little. Add the spiced fried onion to the rice and fold in the flaked fish and the roughly chopped eggs. Pour in the cream and add the quartered eggs. Season with salt, pepper and parsley.

4 large artichokes, leaves and choke removed
2 cups milk
2 cups heavy cream
1/2 cup mascarpone
1/4 cup goat cheese

2 tablespoons sweet butter
2 medium shallots, minced
1/4 teaspoon freshly ground pepper
1/2 cup dry white wine
1/2 cup white wine vinegar
3 egg yolks
4 tablespoon water
1/2 teaspoon salt
1/2 pound sweet butter clarified
1 tablespoon tarragon minced
1 teaspoon tomato paste or 1 tablespoon peeled, seeded, and finely chopped tomato
4 (6 ounce) veal cutlets
4 (1 pound) lobsters
16 ounces artichoke puree, recipe above
20 spears asparagus
12 ounces choron sauce, recipe above
Salt
Black pepper
4 tarragon sprigs

Steps:

  • For the Artichoke Puree: Cut the artichoke into medium size pieces and place in a pot. Cover the artichokes with milk and cream. Bring to a boil and reduce to a low simmer. Cook the artichokes until very tender. Strain the artichokes (reserving the liquid). Transfer to a food processor. Add a little of the reserved cream if needed. Add the mascarpone and goat cheese and blend for 10 more seconds or until well mixed together. Season with salt and pepper if needed. Stir in the butter. Transfer to a container and keep warm.
  • For the Choron sauce: In a small saucepan, combine the shallots, pepper, white wine, and vinegar. Reduce over medium heat until 2 tablespoons of liquid remains. In a heat-resistant mixing bowl, combine the egg yolks, water, salt, and shallot mixture. Whip over hot, but not boiling, water until thick and creamy. Slowly whisk in the melted butter, a few drops at a time, until the sauce begins to emulsify. In a slow stream, whisk in the remaining butter until it is completely incorporated. Whisk in the tarragon. Correct seasoning to taste. Whisk the chopped tomato or tomato paste into the sauce biarnaise. Correct seasoning, to taste. Keep warm until needed. Preparation time: 25 minutes Yield: 1 1/2 to 2 cups
  • For the Veal: Season the veal with the salt and pepper and sear in a saute pan over high heat. Transfer to a preheated 350 degree F. oven and cook until medium rare (5 to 6 minutes). Remove from oven and keep warm. Steam the lobsters for 5 to 7 minutes, remove from water and let rest for 4 minutes. Remove the meat from the shell, slice the tail in half and keep in a little warm butter until ready to serve.
  • Steam the cleaned asparagus until slightly underdone. Place a 4 ounce scoop of the artichoke puree in the center of each of 4 plates. On the puree place the veal and lobster so that they cover the puree. Place the warm asparagus on top of the 2 items. Drizzle 3 ounces choron sauce on top of each of the lobsters and around each plate. Garnish with the tarragon sprig.

White Risotto with Corn, Carrots, and Kale image

When we lived in New York City, we had a farmers' market half a block from our front steps. Every Wednesday, we'd stroll down the block with Greta and let her pick three vegetables for dinner that night. Her combinations were good challenges for my cooking muscle. When summer slipped into fall one cool morning, we brought home corn, kale, and young purple carrots, and this dish was born. Risotto is the ultimate comfort food--warm and filling--and when it comes right down to it, easier than most of us believe. Make this with your favorite vegetables in any season, adding more if you're a veggie-centric sort, or less if you want mostly soothing rice. The white risotto combo (onion, rice, white wine, Parm) is a classic and morphs readily to your whim.

2 tablespoons extra-virgin olive oil
1 onion, finely chopped
2 cups (400 grams) Arborio rice
2/3 cup (160 milliliters) dry white wine
5 to 5 1/2 cups (1.2 to 1.3 liters) chicken or vegetable broth or water, warm
Fine sea salt
Freshly ground black pepper
4 tablespoons (1/2 stick/56 grams) unsalted butter
1 bunch small heirloom carrots (about 6), trimmed and scrubbed, halved lengthwise
1/2 bunch (45 grams) Tuscan kale, larger leaves torn or cut into pieces (about 3 cups)
1 ear corn, kernels cut from the cob
1/2 cup (15 grams) grated Parmesan cheese, plus more coarsely grated for garnish

Steps:

  • Heat the oil in a heavy saucepan or Dutch oven over medium-high heat. Add the onion, reduce the heat to medium-low, and cook, stirring, until soft and translucent, about 3 minutes. Add the rice and stir to coat with the oil. Stir in the wine and cook until the wine has evaporated, 1 minute more.
  • Stir in 2 cups (480 milliliters) of the warm broth and salt and pepper to taste, and bring to a boil. Stir, reduce the heat to medium-low, and cook until the liquid has evaporated. Season with salt and pepper. Add 1/2 cup (120 milliliters) of the broth and continue stirring, adding more broth 1/2 cup (120 milliliters) at a time, until the liquid has evaporated and the rice is al dente, 20 to 25 minutes. Most of the liquid should be absorbed and the rice just cooked, with about 1/2 cup (120 milliliters) broth remaining.
  • While the rice cooks, heat 1 tablespoon of the butter in a large skillet over medium-high heat. Add the carrots and brown slightly. Add 3 tablespoons water and reduce heat to medium-low. Cook until just fork tender, but still deep in color, adding additional splashes of water to the pan as needed. Add the kale and stir to wilt, 5 minutes more. Add the corn and cook until the kernels turn bright yellow but are still crisp, 1 minute more. Season the vegetables well and use a slotted spoon to remove them from the liquid.
  • Stir in another 1/2 cup (120 milliliters) broth to the risotto as needed; add the remaining 3 tablespoons butter and the cheese and stir. Stir in the vegetables, or serve the risotto in bowls topped with the warm vegetables and coarsely grated Parmesan.

5 cups canned low sodium chicken broth (about)
1 cup water
1 tablespoon butter
1 large onion
2 cups arborio rice or 2 cups medium-grain white rice
1/2 cup dry white wine
2 teaspoons chopped fresh rosemary
1 cup freshly grated parmesan cheese
1/4 cup whipping cream
1 sprig fresh rosemary (to garnish)

Steps:

  • Trim rough ends from asparagus; discard.
  • Cut off asparagus tips and reserve.
  • Cut stalks into 3/4 inch-long pieces.
  • Place 2/3 of stalk pieces, 1 cup broth and 1 cup water in blender, reserving the remaining 1/3 of stalk pieces.
  • Puree mixture until smooth.
  • Set aside.
  • Melt butter in heavy large saucepan over medium heat.
  • Add onion and saute until tender, about 8 minutes.
  • Add rice and stir 1 minute.
  • Add wine and cook until absorbed, stirring often, about 2 minutes.
  • Add 1/2 cup broth and chopped rosemary, simmer until liquid is absorbed, stirring often, about 4 minutes.
  • Continue to cook for 15 minutes, adding more broth by 1/2 cupfuls and allowing liquid to be absorbed before adding more, stirring often.
  • Add reserved asparagus stalk pieces and reserved asparagus tips and continue cooking until rice is just tender and mixture is creamy; adding broth as needed and stirring often, about 10 minutes longer.
  • Add reserved asparagus puree and stir until absorbed, about 3 minutes.
  • Stir in 1/2 cup Parmesan and cream.
  • Season to taste with salt and pepper.
  • Transfer risotto to bowl.
  • Garnish with rosemary sprigs, if desired.
  • Serve, passing remaining Parmesan separately.
