BOURBON CHICKEN



Bourbon Chicken image

Sautéed chicken simmered in a slightly sweet and tangy Bourbon sauce makes this recipe one for the weekly rotation. Serve it over rice or for a low carb version try it in lettuce wraps!

1 cup uncooked white rice
2 pounds boneless, skinless chicken thighs, cubed
1/2 teaspoon salt
2 tablespoons corn starch
2 tablespoons vegetable or olive oil
2 cloves garlic, minced
1 inch fresh ginger, grated
1 cup chicken stock
1/4 cup bourbon
1/4 cup soy sauce
2/3 cup brown sugar
3 tablespoons apple cider vinegar
Chives, thinly sliced, for garnish
Toasted sesame seeds, for garnish

Steps:

  • Cook the rice: Place the rice in a wire mesh sieve or strainer and rinse under cold water for about a minute. In a medium saucepan add the rice and 1 3/4 cups of water. Cover the rice and bring it to a boil over medium heat. Once it comes to a boil, 4-5 minutes, reduce the heat to medium low and let the rice cook for about 10 minutes. After 10 minutes remove from heat and keep the lid on for 10 additional minutes. When ready fluff it with a fork.
  • Cook the sauce: In a medium bowl combine the garlic, ginger, chicken stock, bourbon, soy sauce, brown sugar, and apple cider vinegar. Add the sauce to the same skillet where you cooked the chicken and set over medium heat. Bring to a simmer, 2-3 minutes.
  • Garnish and serve: Serve the bourbon chicken immediately over rice. Garnish with chives and sesame seeds.
  • Storage and reheating instructions: If you have leftovers, you can store the chicken in the fridge for up to 5 days or freeze it for up to 3 months. Reheat bourbon chicken in the microwave with a splash of water or gently in a pot or skillet with a splash of water.

Yes, chicken thighs have more fat than chicken breasts, but the meat is so tasty. It usually costs less, too. If you wish, though, you can use this marinade on chicken breasts, or even pork chops.

1 lb boneless skinless chicken thighs (remove all visible fat)
1/2 cup soy sauce
1/2 cup packed brown sugar
1 garlic clove, minced
1 teaspoon freshly grated gingerroot
1 green onion, white and green parts, minced
1/2 cup whiskey (rye, bourbon, whatever you like)
2 tablespoons white wine

Steps:

  • In a glass bowl, combine all marinade ingredients.
  • Add chicken thighs to marinade, turning to make sure all meat comes into contact with marinade.
  • Cover tightly and refrigerate for several hours; overnight is fine; turn chicken pieces occasionally.
  • Preheat oven to 350 degrees F.
  • Place chicken in an oblong casserole dish; drizzle half the marinade over thighs (you can use more than half, if you want); discard the remaining marinade.
  • Bake thighs for one hour, basting frequently.
  • Thighs can also be grilled; use the marinade for basting BUT there is a danger, so you MUST bring the marinade to a boil and then let it boil for a full 5 minutes; it can then be used to baste the thighs on the grill.

WHISKEY COLA CHICKEN WITH BEETS AND SWEETS

3 medium beets
1/2 teaspoon salt
3 medium sweet potatoes
1 tablespoon margarine, cut into small cubes
4 boneless, skinless chicken thighs
3 tablespoons honey
2 ounces cola
1 ounce Irish whiskey
1 tablespoon Dijon mustard
1 tablespoon sriracha sauce
1 teaspoon ginger powder
4 tablespoons blended oil
2 teaspoons garlic, chopped
1 small yellow onion, small diced
1 bunch kale, chopped into 1-inch pieces
1 tablespoon fresh cilantro, chopped
1 tablespoon fresh parsley, chopped
1/2 tablespoon fresh rosemary, chopped
1/2 teaspoon ground black pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Boil the beets in salted water until softened, approximately 20 minutes. Using a rag and gloves, peel your beets. Cut into 1-inch wedges and set aside.
  • Cut the sweet potatoes into 1-inch wedges. Place in a roasting pan with approximately 1/2 inch water. Top with margarine, cover pan with foil and bake until al dente, 15 to 20 minutes.
  • Next, trim all fat off chicken thighs and discard. Set chicken aside. Whisk together honey, cola, whiskey, mustard, sriracha, ginger powder, 2 tablespoons blended oil and 1 teaspoon chopped garlic in a medium bowl. Set aside half the sauce for later, then add the chicken thighs to the remaining sauce. Mix until the chicken is fully coated, then place on a parchment-lined sheet pan and bake until sauce and chicken start to darken and the internal temperature is at least 165 degrees F, 15 to 20 minutes.
  • Meanwhile, add the remaining 2 tablespoons oil to a saute pan set on medium-high. Once oil is hot, add diced onion and remaining teaspoon chopped garlic and cook until the onions and garlic turn translucent, then add sweet potatoes. Saute until the outsides of the sweet potatoes crisp up, 7 to 10 minutes.
  • Toss beets and kale together in a mixing bowl. Add sweet potato mixture directly from the saute pan while hot. Mix all together, then add cilantro, parsley, rosemary and pepper and move to a sheet pan. Place in the oven to heat and crisp kale, approximately 5 minutes. Remove and plate with chicken. Top chicken with reserved sauce and serve.

PEACH WHISKY CHICKEN

2 tablespoons butter
2 tablespoons olive oil
12 chicken legs or thighs, bone in, skin on
1 yellow onion, diced
1 1/2 cups whisky
4 cups barbecue sauce
1 cup peach preserves
2 tablespoons Worcestershire sauce
4 peaches, pitted and sliced into 8 slices each
Mashed potatoes, for serving
3 green onions, sliced thin, for serving
Chopped fresh parsley, for serving

Steps:

  • Preheat the oven to 300 degrees F.
  • Heat the butter and olive oil in a large skillet or pot over medium-high heat. Add the chicken pieces and cook until golden brown on all sides, about 5 minutes. Remove from the skillet and set aside.
  • Add the onions to the skillet and stir and cook over medium heat until translucent, about 3 minutes. Pour in the whisky, taking care if you are cooking over an open flame. Cook for 3 minutes or so, allowing the whisky to cook and reduce.
  • Grab your favorite bottled barbecue sauce and pour it into the pan. Add the peach preserves, Worcestershire sauce and 1/2 cup water to the sauce, then whisk to combine. Add the chicken back to the pan. Then throw in the peaches.
  • Cover the skillet with a lid or aluminium foil, and then roast in the oven until the chicken is tender and falling off the bone¿ the sauce is beautiful and rich¿ and the peaches are soft (about 1 1/2 hours). That's how you know it's done!
  • Serve the chicken over a big mound of mashed potatoes, spooning the sauce over the whole thing. Sprinkle with green onions and parsley, then watch your loved ones gobble it up.

WHISKEY PINEAPPLE CHICKEN

2 cups bourbon
2 cups unsweetened pineapple juice
1 cup hoisin sauce
2 tablespoons minced fresh gingerroot

1 tablespoon kosher salt, divided
5 pounds boneless skinless chicken thighs
1 cup sliced sweet red pepper
1 cup sliced yellow onions
2 tablespoons olive oil

Steps:

  • Whisk together bourbon, pineapple juice, hoisin sauce, ginger, 1 tablespoon pepper, Worcestershire sauce, garlic and 1 teaspoon salt until blended. Place chicken in a shallow dish. Add half of marinade; turn to coat. Cover and refrigerate, overnight, turning occasionally. Cover and refrigerate remaining marinade., Drain chicken, discarding the marinade. Grill chicken, covered, on a greased grill rack over medium-high direct heat until a thermometer reads 170°, 5-6 minutes on each side., Meanwhile, toss pepper and onion slices in oil and remaining salt and pepper. Grill, turning frequently, until soft, 5-7 minutes. In a small saucepan on the grill, cook reserved marinade over medium heat, stirring occasionally, until slightly thickened, about 10 minutes. Chop grilled pepper and onion. Sprinkle over chicken; serve with sauce.

4 skinless, boneless chicken breast halves
1 teaspoon ground ginger
4 ounces soy sauce
2 tablespoons dried minced onion

⅜ cup bourbon

This recipe couldn't be easier. You just blitz up a few ingredients to make the marinade, pour it over the chicken, and you're almost done. If you prep it on a weekend day or early in the week, you can just pop it in the fridge and let it hang for up to 2 days, then cook it whenever you're ready. The chicken comes out of the oven sweet and spicy with lots of little crunchy caramelized bits on the skin--amazing!

1/2 bunch fresh cilantro, rinsed and dried, plus more for garnish
4 garlic cloves, peeled
One 8-ounce can chipotle peppers in adobo sauce (use half a can if you prefer it less spicy)
One 6-ounce can tomato paste
1 1/2 cups orange marmalade
1 cup whiskey (substitute orange juice for a nonalcoholic version)
1/3 cup olive oil
1 tablespoon plus 1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
6 chicken thighs
6 chicken drumsticks

Steps:

  • Add the cilantro, garlic, chipotle peppers in adobo sauce, tomato paste, marmalade, whiskey, olive oil, salt and black pepper to a food processor or blender. Puree until smooth. Put the chicken thighs and drumsticks in a resealable bag or an airtight container. Pour the marinade over the chicken and refrigerate for at least 8 hours and up to 2 days (if the chicken is in a bag, place the bag in a baking dish before refrigerating it to avoid leaks).
  • Preheat the oven to 400 degrees F.
  • Arrange the chicken in a large roasting pan, skin-side up. Pour in the marinade along with the chicken.
  • Bake until the skin is fully caramelized and crispy and an instant-read thermometer inserted in the thickest part of the thighs reads 170 degrees F, 45 to 55 minutes. Serve garnished with a bit of fresh cilantro.

  • Use paper towels to pat dry the chicken thighs and then season with salt and pepper. Add 2 tablespoons butter and olive oil to large skillet and heat on medium high stove top. When butter and oil are hot, place chicken thighs in skillet, skin side down and sear for 10 minutes. Flip pieces and sear for 2 more minutes then remove from skillet and set aside.
