Best Ever Cowboy Baked Beans image

BEST EVER Cowboy Baked Beans are the perfect hearty side dish for your summer BBQ, Father's Day, Picnic or July 4th celebration!

Number Of Ingredients 16

2 - 28 oz cans Pork & Beans (I used B&M original baked beans)
1/2 large sweet onion (diced (Vidalia or other sweet onion is fine))
1 large bell pepper (finely diced (I used yellow, use whatever color you like))
1/2 lb bacon (uncooked chopped into pieces (I prefer uncured, nitrate, nitrite free))
8 oz 1 cup organic tomato sauce (or 1/2 15 oz can)
1 cup organic Ketchup
1/2 cup molasses (unsulphured)
1/4 cup apple cider vinegar (or replace with white vinegar)
1/8 cup spicy brown mustard (heaping)
1/8 cup yellow mustard (heaping (making with only yellow mustard increase to rounded 1/3 cup))
2 Tablespoons Worcestershire Sauce
1 teaspoon garlic powder
1 teaspoon onion powder
Dash of Cayenne Pepper (more if you like heat)
Pinch of Kosher Salt
Couple Grinds of Black Pepper

Steps:

  • Preheat oven to 350°F. In a large mixing bowl, add all of the sauce ingredients and stir to combine, whisking if needed.
  • Add pork and beans (undrained), tomato sauce, and diced onion and bell pepper. Using a large spoon or spatula stir to combine beans with sauce.
  • Pour into casserole baking dish or cast iron skillet or dutch oven. Bake uncovered for 1 1/2 - 2 hours until bubbly and bacon is crispy. If crisper bacon is desired, with beans on middle rack, broil for 2-3 minutes until desired crispness is reached. Allow to rest for 10 minutes and serve warm.
  • Baked beans can be made ahead of time, refrigerate. Remove from fridge for 1 hour prior to baking, bake as directed.
  • Baked beans may be frozen, but only after they've been baked. Cool completely and transfer to freezer storage container. Beans are good up 7 days refrigerated; 6 months frozen.

My husband does not like baked beans but can't get enough of these. They are loaded with a variety of meats and get a little bit of sweetness from molasses and brown sugar. If you don't have a slow cooker, you can bake them in the oven until heated through.

1 pound ground beef
2 (28 ounce) cans baked beans with pork
1 pound bacon, cooked and crumbled
½ pound cooked ham, chopped
2 tablespoons minced onion
1 tablespoon chili powder
¼ cup ketchup
¼ cup packed brown sugar
1 tablespoon molasses
¼ cup water

Steps:

  • Crumble the ground beef in a large skillet over medium-high heat. Cook and stir until no longer pink, 5 to 10 minutes. Drain off grease and transfer the beef to a 4 quart or larger slow cooker. Stir in the baked beans, bacon, ham, onion, chili powder, ketchup, brown sugar and molasses. If it seems thick, stir in the water. Cover and cook on High for 3 hours or cook for 6 to 8 hours on Low.

1 package (16 ounces) dried pinto beans
1 quart water
1 can (6 ounces) tomato paste
1/2 cup chopped onion
1 garlic clove, minced
1 to 2 tablespoons chili powder
2 to 3 teaspoons crushed red pepper flakes
1 teaspoon salt
1 teaspoon ground cumin
1/2 teaspoon dried marjoram

Steps:

  • Place beans in a Dutch oven or soup kettle; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. Drain, discarding liquid. Return beans to pan; add 1 qt. water. Bring to boil. Reduce heat; cover and simmer for 1-1/4 to 1-1/2 hours or until beans are tender. Add remaining ingredients; bring to a boil. Reduce heat; cover and simmer 1-1/2 hours longer.

This slow-baked molasses-and-mustard-flavored western favorite is a perfect party food because it can be made days ahead and just gets better with time. Enjoy it while watching Blazing Saddles,, which, according to creator Mel Brooks, is best seen on video. Claims Brooks, "I can't watch Blazing Saddles on television ... A lot of prudes got together and silly people got together and they cut out everything they thought would be offensive to a 4-year-old."

1 pound dried navy, pinto or pink beans
2 large onions, diced
12 ounces smoked pork or ham steak, chopped
3 cups chicken stock
1/4 teaspoon cayenne pepper
1/4 cup dark molasses
1/4 cup ketchup
3 tablespoons dark brown sugar, plus more as needed
Salt and pepper

Steps:

  • Soak the beans overnight in water in a large bowl.
  • Preheat the oven to 375 degrees F.
  • Saute the onions and pork over medium heat in a cast iron Dutch oven until the onions are tender, abut 10 minutes. Add the drained beans, pork, chicken stock, cayenne, molasses, ketchup, brown sugar, and salt and pepper to taste and bring to a boil.
  • Cover the casserole and transfer to the oven. Bake to 3 1/2 to 4 hours, until the beans are tender.
  • Serve topped with a sprinkle of brown sugar.

4 bacon strips, diced
1 large onion, chopped
1-1/3 cups water
1/3 cup dried lentils, rinsed

4 cups dry pinto beans
1 pound thick-cut bacon, cut into pieces
2 whole green bell peppers, diced
1 whole onion, diced
1 cup brown sugar
1/4 cup ketchup
2 tablespoons mustard
1 tablespoon chili powder, optional
2 teaspoons salt, more to taste
2 teaspoons black pepper, more to taste
4 cloves garlic, minced

Steps:

  • Rinse the beans under cold water, sorting out any rocks/particles. Set aside.
  • In a heavy pot (cast iron), saute the bacon pieces until halfway cooked and the fat is rendered. Add the green peppers and onions to the pot and cook until starting to get brown, about 3 minutes. Add the beans and cover with water by 1 inch. Bring to a boil, and then add the brown sugar, ketchup, mustard, chili powder, salt, pepper and garlic. Reduce the heat to a simmer, place on the lid and cook until the beans are tender and the liquid is thick 3 to 4 hours.

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, 10 to 12 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle.
