The very first time I served this luscious omelet to my husband and young daughters, it became a yuletide tradition! Now I always double the savory recipe and sometimes substitute cheddar for Swiss cheese.

- In a 10-in. ovenproof skillet, saute the onions and red pepper in oil for 5 minutes. In a large bowl, combine the eggs, cheese, ham and water. Pour over vegetable mixture. Bake, uncovered, at 375° for 15-20 minutes or until set.

Steps:
- Melt 1 teaspoon butter in a small skillet over medium heat. Add mushrooms, bell pepper, and green onions; cook until tender, about 5 minutes. Stir in ham until heated through, about 1 minute. Season with salt and pepper. Set filling mixture aside in a small bowl and keep warm.
- Beat eggs together in a bowl; season with salt and pepper.
- Heat the same skillet over medium-high heat. Add remaining 1 teaspoon butter; heat until foaming. Pour in eggs and cook for 30 seconds. Lift the edges of the omelet so that the uncooked egg runs under the cooked edges and comes into contact with the hot skillet. Shake and tilt the skillet to move the uncooked egg. Repeat until the top is set but still moist and soft, about 2 minutes.
- Spread the filling over one side of the omelet. Fold the other half over the filling and slide omelet onto a plate.

BAKED BAGEL OMELET
Everything we love about a western omelet, but tucked into a toasty bagel for easy eating on-the-go!

- Preheat the oven to 400 degrees F. Line a small baking sheet with aluminum foil and spray generously with nonstick cooking spray.
- Place the bagel halves cut-side up on the baking sheet. Use your fingertips to work around the middle of each bagel half, scooping out the excess bread. Be careful to keep the shape and integrity of the bagel; if the bagel tears or cracks, flatten a piece of interior to mend the hole. Sprinkle 1 teaspoon each of the ham, green peppers and red peppers in each bagel half "moat," then sprinkle each with one-quarter of the scallions.
- Put the eggs in a container with a pour spout. Whisk in the milk and 1/2 teaspoon each salt and pepper. Slowly pour one-quarter of the egg mixture into each bagel half "moat," making sure the egg does not overflow.
- Bake until the eggs are just set and the edges of the bagels are turning golden brown, 12 to 15 minutes. Remove the baking sheet and place a slice of cheese on top of each bagel half. Return to the oven and bake until the cheese is melted and bubbling, about 3 minutes. Serve warm sprinkled with fresh parsley and a dash of hot sauce as desired.
WESTERN SKILLET OMELET
I'm always looking for great breakfast recipes and this one is delicious! Recipe is from Kraft. For a shortcut, you can use the ready to serve bacon or make the bacon in advance. I usually make it in the microwave the night before or use leftover bacon; then I omit cooking the bacon in this recipe.

- Place potatoes in large saucepan; cover with water.
- Bring to boil; continue boiling 5 minutes.
- Drain well and set aside.
- Cook bacon in large skillet on medium-high heat until crisp, turning occasionally.
- Remove bacon from skillet; drain on paper towels.
- Discard bacon drippings.
- Add peppers, tomatoes and onions to skillet.
- Reduce heat to medium; cook and stir 3 minutes.

FLUFFY BAKED OMELET

- Preheat the oven to 350 degrees.
- Lightly grease a well seasoned iron skillet, and place it in the oven while the oven is preheating, and you are preparing the omelet.
- Separate the egg whites from the yolks.
- Beat the egg whites until stiff but not dry.
- Beat the egg yolks well, slowly add the flour and stir until smoothly blended.
- Add the milk and mix well.
- Lightly fold in the stiffly beaten egg whites.
- Remove the skillet from the oven and pour the omelet into it.
- Bake for 10 minutes or until the omelet is set in the center and lightly browned.
- When the omelet is done, remove from the oven and loosen the sides with a spatula.
- Place a platter close to the skillet, and with a spatula loosen the bottom of the omelet and slide it out onto the platter.
- Pour the melted butter over the omelet, and sprinkle with salt and pepper.
- **Note:If desired, you can place the asparagus spears in a wheel pattern on top of the omelet before placing it in the oven and/or sprinkle the grated cheese over the top.
BAKED WESTERN OMELET
This was so easy to make and very tasty. I served this for brunch today. You can vary the ingredients to your liking. This is my version of a baked western omelet.

- 1. Break eggs into a large bowl and lightly beat, add milk and beat again.
- 2. Saute onions and green pepper in olive oil until tender.
- 3. Add hash browns, ham, onions, peppers, cheese, salt, pepper and dill weed.
- 4. Mix all ingredients together and pour into a prepared 9x13 casserole dish. Bake at 350 degrees for 30 to 35 minutes or until a knife comes out clean when put into the center of the dish. If it starts to brown before it is done, cover lightly with foil.

- To make filling: in a saucepan over medium heat, add the refried beans and salsa; stir to combine and cook until thoroughly warmed; set aside.
- To make omelet: In a mixing bowl, whisk the eggs, water, salt, and pepper together.
- Heat a nonstick skillet over medium heat.
- Melt butter in pan and swirl to coat bottom of pan.
- When butter foams, pour in egg mixture all at once.
- Let set for about 20 seconds or until edges start to cook.

- Continue to do this until the top is almost dry.

- Turn omelet out onto a warmed plate; garnish with a dollop of sour cream if desired.
- Serve immediately.
- **There is enough bean filling for about 3 omelets or you can serve the extra along with the omelet as a side dish.
