COCONUT DROPS
Looks like a cookie, but it is much like a biscuit. Perfect for dinner and a snack.

Steps:
- Preheat oven to 350°F.
- Cream the butter and sugar until smooth. Add egg, bitters and vanilla; beat well.
- In a separate bowl, combine the flour, baking powder, and cinnamon. Add coconut and raisins.
- Pour the liquid mixture into the dry ingredients and mix well. Add a little bit of water if necessary to moisten the batter. (However, the batter should be firm enough to hold their shape while baking).
TRADITIONAL COCONUT DROPS
Steps:
- Preheat the oven to about 400 degrees F.
- Sift together the flour, baking powder, sugar, cinnamon, and nutmeg. Add the coconut.
- Cut in the butter and mix into the flour. Add the essence to the egg and beat lightly.
- Make a well in the middle of the flour and add the liquid. Mix into a stiff dough.
- Drop about 2-tablespoon full of dough on a well greased sheet.
- Bake for about 15 minutes or until golden in the oven at a lower temperature, 200 degrees F.
- Remove and leave to cool before serving. Bake for approximately 15 minutes
OLD FASHIONED COCONUT DROPS
I like to glaze these coconut drops with sugar syrup and brown sugar.

- Preheat oven to 400 degrees F (200 degrees C). Grease cookie sheets.
- Combine flour and margarine in a medium size mixing bowl. Mix in sugar, cinnamon and baking powder. Stir the egg into the mixture. Once the egg is well incorporated stir in the coconut, raisins and vanilla. Drop the dough in rough heaps the size of an egg onto cookie sheets.
- Bake 8 minutes or until lightly browned.

My best friend gave me this recipe she was given while in British Guiana. These are really delicious!

- Preheat the oven to 350 degrees F (175 degrees C).
- In a large bowl, stir together the flour, sugar, baking powder, and salt. Add butter, and cut in using a pastry blender or a fork until the mixture resembles fine crumbs. In a separate bowl, whisk together the eggs, milk, vanilla extract, and almond extract. Make a well in the center of the dry ingredients, and pour in the wet ingredients. Add coconut, and mix just enough to blend. Drop by rounded tablespoonfuls onto ungreased cookie sheets.
- Bake for 20 minutes in the preheated oven, or until golden brown.

WEST INDIAN COCONUT BREAD
Would make a good holiday treat where most of it is eaten by your guests and not you! I love the idea of Coco Lopez along with the shredded coconut.

- Mix all ingredients -- mixture will be thick. Separate into two 5x9 inch loaf pans and cook at 350 degrees for one hour or until done. Serve warm.
