1 cup milk
½ cup cocoa
2 cups sugar
1 tsp vanilla extract
4 tbsp butter

Steps:

  • Prepare an 8x8 baking pan by greasing. You will use this later.
  • In a medium sized saucepan, add milk, cocoa, and sugar. Cook on medium/high stirring constantly. Bring mix to a boil, reduce heat and simmer. End stirring.
  • Use a candy thermometer, continue cooking until the temperature reaches 238° F.
  • Remove saucepan from the heat. Add in the butter and the vanilla. Using a wooden spoon, stir until the sheen goes away.
  • Pour the fudge into the prepared baking pan. After it cools, cut the fudge into approx. 1 inch pieces.

14 large Marshmallow(s)

Steps:

  • Coat an 8- x 8-inch pan with cooking spray.
  • Stir together sugar, evaporated milk and margarine. Bring to a boil in a sauce pan, reduce heat to medium-low and cook 3 minutes, stirring constantly.
  • Stir in chocolate and marshmallows. Remove from heat and stir until smooth.
  • Pour into pan and refrigerate until firm, about 2 hours. Cut into 36 squares and serve. (Leave fudge in refrigerator or freezer for a firmer consistency.)

½ cup cocoa
1 cup milk
4 tablespoons butter
1 teaspoon vanilla extract

Steps:

  • Grease an 8x8 inch square baking pan. Set aside.
  • Combine sugar, cocoa and milk in a medium saucepan. Stir to blend, then bring to a boil, stirring constantly. Reduce heat and simmer. Do not stir again.
  • Place candy thermometer in pan and cook until temperature reaches 238 degrees F(114 degrees C). If you are not using a thermometer, then cook until a drop of this mixture in a cup of cold water forms a soft ball. Feel the ball with your fingers to make sure it is the right consistency. It should flatten when pressed between your fingers.
  • Remove from heat. Add butter or margarine and vanilla extract. Beat with a wooden spoon until the fudge loses its sheen. Do not under beat.
  • Pour into prepared pan and let cool. Cut into about 60 squares.

  • Lightly grease an 8 or 9-inch square pan.
  • Combine dry ingredients in heavy 4 quart saucepan.
  • Stir in milk.
  • Bring to a "bubbly" boil over medium heat, stirring constantly.
  • Boil, without stirring, to 234 degrees (soft ball stage). Remove from heat. Cool at room temperature to 110 degrees.
  • Beat with wooden spoon until thickens and loses gloss.
  • Quickly spread in prepared pan.

This recipe is perfect for those times when I'm craving chocolate, but I don't want all of the extra calories. Update 9/1/08: Despite what one reviewer states, my posting of this recipe was in no way meant to "fool" you. I do cut mine in 36 pieces. It is perfect for those times when I am craving chocolate. If I can't control my cravings then I just better not make them. Weight Watchers, or any diet, is about portion control and nothing is going to be low-fat or good for you if you eat too much of it.

3 cups sugar
2/3 dark unsweetened cocoa, I like Hershey's Cocoa Powder
1/8 teaspoon salt
1 1/2 cups whole milk
1/4 cup butter
1/2 cup pecans, finely chopped (optional)
1 teaspoon vanilla extract

Steps:

  • Line 8 or 9 inch square pan with foil.
  • Mix sugar, cocoa and salt in a heavy 4-quart saucepan.
  • Stir in whole milk.
  • Cook over medium heat, stirring constantly until mixture comes to a full rolling boil.
  • Boil without stirring until mixture reaches 234 degrees on a candy thermometer or until small amount of mixture dropped into very cold water forms a soft ball.
  • Remove from heat and add butter and vanilla. Do Not Stir. Cool at room temperature to 110 degrees.
  • Stir in pecans.
  • Beat with a wooden spoon until fudge thickens and just begins to loose some of its gloss.
  • Quickly spread into prepared pan.
  • Cool completely.
  • Cut into square.
  • Store in a tightly covered container at room temperature.

12 ounces semi-sweet chocolate chips (i use mini ones, as they melt faster)
15 large marshmallows, cut in halves
2/3 cup fat-free evaporated milk
1 tablespoon reduced fat margarine
2 teaspoons reduced fat margarine

Steps:

  • Spray bottom of an 8x8 pan with nonstick cooking spray.
  • Bring evaporated milk, splenda, and margarine to a rolling boil. Reduce heat to med-low and continue cooking for approx 3 minutes longer, stirring constantly.
  • Stir in chocolate chips and marshmallows. Remove from heat. Stir until smooth.
  • Pour into pan and refrigerate until firm.
  • Enjoy without feeling guilty!

2 ounces unsweetened chocolate, cut into pieces
1 cup firmly packed brown sugar
1 cup granulated sugar
1/3 cup undiluted evaporated milk
2 tablespoons corn syrup
2 tablespoons butter
1 teaspoon vanilla extract
1 cup nuts, chopped (walnuts, pecans, your preference)

Steps:

  • Mix in a sauce pan the chocolate, brown and granulated sugars, milk and corn syrup.
  • Stir over low heat until sugar is dissolved.
  • Cook, stirring occasionally (to prevent scorching) to the soft ball stage (234°-240°F on a candy thermometer), or until mixture forms a soft ball when a small amount is dropped into cold water.
  • During cooking, occasionally wash down crystals from sides of pan.
  • Remove from heat, add the butter and let stand until mixture is cool.
  • Do not jar the pan or stir during cooling.
  • When cool, beat until candy begins to lose its glossy appearance.
  • Add the vanilla extract and nuts.
  • Pour into a greased 8x8x2-inch pan and allow to cool completely.
  • Cut into squares.
  • Makes about 1 pound of candy.
