WATERMELON & STRAWBERRY ICE BLOCK
Great on a hot day, nice & refreshing. This recipe originally came from "Great Casual Food" cookbook. Before freezing taste to see if more sugar need to be added, this will depend on the sweetness of the strawberries & watermelon.

Number Of Ingredients 5
Steps:
- Combine the water and sugar in a small saucepan, stir over low heat until sugar dissolves.
- Bring back to boil, boil uncovered for about 2 minutes or until mixture thickens slightly.
- Transfer syrup to small bowl, refrigerate until cold.
- Blend or process cold syrup, watermelon, strawberries and juice until smooth.
- Pour mixture into four 1/3 cup ice block moulds, freeze overnight until firm.
- Enjoy!

Steps:
- Place 1 cup water, 1/4 cup lemon juice, 6 cups watermelon, 1 cup berries, 1/3 cup sugar and 3/4 teaspoon minced mint in a blender; cover and process until smooth. Transfer to a large pitcher. Repeat with remaining water, lemon juice, fruit, sugar and minced mint., Refrigerate 1 hour or until cold. If desired, press through a fine-mesh strainer. Serve with watermelon wedges and mint leaves.
