This game fish will bite 'cha back! I serve this seared tuna garnished with a julienne of leek, carrot, snow peas and mung beans.

1 tablespoon five-spice powder
1 tablespoon grated fresh ginger
2 tablespoons sake
2 tablespoons rice vinegar
2 tablespoons tamari
¼ cup sesame oil
2 pounds ahi tuna steaks, each about 1 inch thick
1 pound wasabi peas, crushed
2 tablespoons light brown sugar

Steps:

  • In a large bowl, whisk together the five-spice powder, ginger, sake, rice vinegar, tamari, and sesame oil. Add the tuna steaks and turn to coat; allow to marinate for 30 minutes.
  • Combine the crushed wasabi peas and brown sugar. Remove the tuna steaks from the marinade, and press into the pea mixture to coat. Pour the marinade into a small saucepan and bring to a simmer over medium-high heat. Reduce heat to medium, and simmer until the sauce has reduced and thickened, 5 to 10 minutes.
  • While the sauce is cooking, sear the tuna in a small amount of oil in a skillet over medium-high heat to desired doneness. Pour sauce over tuna to serve.

1/4 cup soy sauce
3 teaspoons wasabi powder
1 teaspoon garlic powder
2 (4 -6 ounce) tuna steaks, 1 inch thick (or more)
1 lb fresh green beans
1 tablespoon sesame oil
1/4 cup golden brown sugar

Steps:

  • Mix soy, wasabi and garlic powder in a glas 8X10 baking dish. Add tuna and turn several times to coat. Let stand 15 minutes each side. (For extra flavor, I marinate up to 30 minutes each side but dont do longer because the marinade will over whelm the tuna eventually).
  • Cook beans in a large pot of boiling water for about 4 minutes.
  • Heat sesame oil at med-high. When hot, sear tuna 2 (ish) minutes each side- pepper each side before searing. Remove tuna steaks and add the marinade, brown sugar and beans. Cook until reduced - about 4 minutes.
  • Serve with white or brown rice.

3 pounds sushi grade tuna
2 tablespoons soy sauce
1 tablespoon wasabi
4 tablespoons ground ginger
1 tablespoon minced garlic
1 tablespoon sesame oil
2 tablespoons sugar
1/2 gallon orange juice
4 ounces rice wine vinegar
1 1/2 quarts olive oil
Field greens
Sesame seeds
Marinated tuna

Steps:

  • Mix the wasabi and soy sauce together in a bowl, then marinate the tuna in the mixture for 30 minutes, refrigerated.
  • Place all ingredients except olive oil in a saucepan and reduce by 1/2. Blend in the olive oil with a whisk to emulsify.
  • Toss the tuna in sesame seeds. Pan sear the tuna to the desired doneness. Toss field greens in the orange ginger dressing. Arrange the greens on a plate. Slice the tuna and place on the greens.

  • Mix soy sauce, wasabi powder and garlic powder in 8x8x2-inch glass dish. Add tuna; turn several times to coat with marinade. Let stand 15 minutes.
  • Meanwhile, cook beans in large pot of boiling salted water until crisp-tender, about 4 minutes. Drain well.
  • Heat sesame oil in heavy large skillet over medium-high heat. Remove tuna from marinade; reserve marinade. Sprinkle tuna on all sides with pepper. Add tuna to skillet and cook until just opaque in center, about 3 minutes per side. Transfer tuna to plates. Add green beans, sugar and reserved marinade to skillet. Cook until sauce is reduced enough to coat beans, stirring occasionally, about 4 minutes. Using tongs, place beans alongside tuna and serve.

1/4 cup sour cream (or you can use all mayo)
2 tablespoons of chopped green onions, white & green parts
1 teaspoon wasabi paste (or if you have the wasabi powder use that and add a little water to make your own paste)
2 tablespoons teriyaki sauce
1 tablespoon soy sauce
1 tablespoon unseasoned rice vinegar
1 teaspoon grated ginger
32 ounces tuna steaks

  • Whisk first 4 ingredients in small bowl, cover and refrigerate --
  • Whisk teriyaki, soy, vinegar and I also added some grated ginger to make your marinade -- Marinate and refrigerate your tuna steaks for several hours -- Remove from fridge while the grill heats up. Brush grill and fish lightly with oil and salt & pepper. Grill tuna on high heat for 2 mins, turn over and grill 2 mins on high heat to sear, then lower temp and grill until desired doneness -- Serve with the yummy wasabi sauce!

I've had the seared tuna in nice restaurants, but this is better than all of them. One tablespoon of wasabi sounds like a lot of heat, but somehow this cooking method mellows it to almost nothing, just leaves the flavor. Really really great.

2 tablespoons white wine vinegar
10 fluid ounces white wine
¼ cup minced shallots
1 tablespoon wasabi paste, or to taste
1 tablespoon soy sauce
1 cup unsalted butter, cubed
salt and black pepper to taste
1 tablespoon olive oil, or as needed
1 cup chopped cilantro leaves
6 (6 ounce) fresh tuna steaks, 1 inch thick

Steps:

  • Combine the white wine vinegar, white wine and shallots in a small saucepan over medium heat. Simmer until the liquid is reduced to about 2 tablespoons. Strain out shallot and discard, return liquid to the pan.
  • Stir the wasabi and soy sauce into the reduction in the pan. Over low heat, gradually whisk in butter one cube at a time allowing the mixture to emulsify. Be careful not to let the mixture boil. When all of the butter has been incorporated, stir in cilantro, and remove from heat. Pour into a small bowl, and set aside.
  • Heat a large skillet over medium-high heat. Brush tuna steaks with olive oil, and season with salt and pepper. Place in the hot skillet, and sear for 3 to 5 minutes on each side. Be careful not to overcook, this fish should be served still a little pink in the center. Serve with sauce.

1/3 cup reduced-sodium soy sauce
3 tablespoons peanut oil
1 tablespoon dry Sherry

1 1/2 teaspoons minced fresh ginger
4 green onions, very thinly sliced
4 6-ounceahi tuna steaks (each about 1 inch thick)
1 cucumber, peeled, seeded, cut into matchstick-size strips
1/2 cup radish sprouts

Steps:

  • Whisk 1/2 cup water and wasabi powder in medium bowl to form smooth paste. Whisk in soy sauce, 2 tablespoons peanut oil, Sherry, sesame oil and ginger. Stir in green onions. Set aside.
  • Sprinkle tuna with salt and pepper. Heat remaining 1 tablespoon peanut oil in heavy large skillet over high heat. Add tuna and sear until opaque in center, about 3 minutes per side.
  • Spoon cucumber onto center of plates. Top with tuna. Spoon sauce around. Garnish with radish sprouts.

Tuna with a blast of wasabi. We nearly always have this with sliced crisp-tender green beans folded into the noodles. Finely sliced snow peas work well too.

4 fresh tuna steaks, 1-2 inch thick (we like Yellowfin for this)
1 tablespoon oil
1 teaspoon wasabi (can add more if you dare)
2 tablespoons soy sauce
1 tablespoon brown sugar
1 lb hokkien noodles (any thick noodle is fine) or 1 lb udon noodles (any thick noodle is fine)

Steps:

  • Whisk together marinade of Wasabi, Soy and Sugar until Wasabi is blended and sugar is almost dissolved, pour into flat glass or ceramic dish. Add Tuna steaks, turning to coat all sides. Marinate for at least an hour.
  • Heat pan (I prefer cast iron) over med high.
  • With tongs shake excess marinade from Tuna and place in hot oil for 3-4 minutes then turn and cook other side to your taste (we like ours pretty rare, but watch the sides so you can see how far they are cooked through.
  • When done, remove from pan and set aside. Add all remaining marinade to pan, stir until it bubbles, turn heat to low.
  • Nuke the noodles in their packaging then empty them into the pan (along with beans or snow peas, if using) and stir to coat them well.
  • Place noodles onto serving platter, top with Tuna Steaks.

  • Pat the tuna steaks with a paper towel to remove any moisture. Brush the tuna with canola oil all over and salt and pepper each side.
  • Pulse the wasabi peas in a small food processor until it forms a course powder. Place the peas in a shallow dish for dredging such as a pie pan and mix in some black sesame seeds. Dredge the tuna steaks on all sides in the wasabi peas powder to coat.
  • Heat a medium cast iron skillet on high heat. Add about 1 tablespoon of canola oil. Sear the tuna for 3 minutes on first side and 2 minutes on second side until nicely seared on the outside and rare on the inside. Make sure to sear the sides as well. Take out of the skillet and let rest on a cutting board for 5 minutes. Slice thinly against the grain and serve with the dipping sauce and a dollop of wasabi paste.
