1 teaspoon sugar
3/4 cup heavy cream
Dash pure vanilla extract
32 ounces freshly brewed hot strong coffee
8 ounces coffee liqueur, such as Kahlua
4 ounces vodka

Steps:

  • Whisk together the sugar and 1/4 cup cream in a medium bowl. Whisk until the cream forms soft peaks, then whisk in the vanilla and set aside.
  • Put the coffee in a small saucepan over low heat until just simmering. Stir in the remaining 1/2 cup cream and heat through, about 1 minute. Stir in the coffee liqueur and vodka. Pour into 2 big coffee mugs, then top with the whipped cream and serve.

750g waxy potato (eg Charlotte, Maris Bard), peeled
250g carrot
2 large celery sticks, trimmed
175g fine French beans , topped and tailed
175g shelled pea or broad beans (about 600g/1lb 5oz in their pods)
2 medium gherkins , roughly chopped
1 tbsp salted capers , rinsed and roughly chopped (optional)
2 large egg yolks
1 tbsp cider vinegar or white wine vinegar
1 tbsp lemon juice
175g unsalted butter

Steps:

  • Put a very large saucepan of salted water on to boil. Cut the potatoes to marshmallow size, the carrots and celery into dice about two-thirds that size; and the French beans into 2cm/3⁄4in pieces.
  • Add the vegetables in turn to the pan of boiling water, starting with the potatoes and ending with the peas. Cook until they are all just tender (neither crunchy, nor fondant). Drain and keep warm.
  • Meanwhile, make the hollandaise. Put the egg yolks, vinegar and lemon juice into a blender and whizz for a few seconds. Melt the butter in a small saucepan over a lowish heat, then raise the temperature and bring the butter to a bubble. Leave the pan to one side for a minute to allow the milky residue to settle.
  • With the blender going, slowly pour a thin stream of butter through the lid. Continue adding the golden liquid until the milky sediment appears (discard it). Remove the lid, season the sauce and whizz for a few more seconds. Replace the lid and keep the hollandaise in a warm place (but NOT over direct heat) for up to 30 minutes.
  • Tip the warm vegetables into a large mixing bowl and add the gherkins and (optional) capers. Very, very gently stir in the sauce, using a soft plastic scraper. Serve as soon as possible.

  • Horseradish and mustard. It's simple: spices and piquant seasoning help accelerate metabolism and raise body temperature. A spoonful of horseradish or mustard perfectly complements either a morning sandwich or an evening steak.
  • Buckwheat porridge with milk. To feel warm when outside, start the day with a hot breakfast, not sandwiches. Porridge stewed long in the oven is one of the staples of Russian cuisine.
  • Ukha and rassolnik. In winter, the stomach yearns for a thick, hearty soup! In summer, the human body overheats from such nourishment, but when it’s freezing outside, hot broth is the perfect internal radiator.
  • Sauerkraut. Fermented foods preserve all the nutrients, and sauerkraut is probably the main dish on the Russian table in winter. It contains a large amount of vitamin C, which is said to prevent colds and strengthen the immune system.
  • Radish with honey. Radish is a traditional Russian vegetable that has been consumed since time immemorial. It doesn’t look anything special, but, like sauerkraut, contains a lot of healthy vitamin C. Meanwhile, the benefits of honey are well-known, so if you want to forget about coughs, fevers, and all the downsides of the chilly season, grate some radish and splurge on the honey.
