SALAD WITH HOT ITALIAN DRESSING
I CREATED this recipe for a special dinner for our wedding anniversary, which is April 11. That's the perfect time to make this salad, when leaf lettuce is fresh and green onions and radishes come right out of the garden. -Bessie Hulett, Shively, Kentucky

- Arrange the lettuce, onions, radishes and tomato on a serving platter; set aside. , In a small skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain, reserving 1 tablespoon drippings. Add flour to drippings; stir until smooth. Cook over low heat for 3 minutes., Combine the vinegar, sugar, water and salad dressing mix; add to skillet. Bring to a boil over medium heat; cook and stir for 2 minutes. Drizzle over salad. Top with bacon. Serve immediately. Refrigerate leftover dressing for up to 2 weeks.

MARGIE'S POTATO SALAD (WITH ITALIAN DRESSING)
This is my mom's potato salad recipe, which I just love. I haven't seen one here exactly like it. It uses italian dressing to give it flavor, and doesn't have pickles or mustard. The key to an excellent final product is letting the Italian dressing sit for a couple of hours and soak up the flavors before adding the mayo. My favorite dressing to use is the kind you make yourself from a package, adding oil, water and vinegar - just be sure you've made it up ahead of time so it is full of flavor by the time you need it. Cooking time is marinating time.

- Cook potatoes unpeeled. (they don't fall apart this way!).
- Drain and cool.
- Peel and cut into cubes.
- Stir in onion, italian salad dressing, salt, and pepper.
- Cover and refrigerate ate least 2 hours.
- Toss with mayonnaise.
- Add celery and eggs, mixing gently.

- Cut potatoes into bite-size pieces.
- Boil in salted water 20 minutes or until just tender.
- Drain and rinse potatoes under cold water and place in a salad bowl. [I place the shallots and bell peppers into the boiling pot and saute for a few minutes until they are slightly tender].
- Add remaining ingredients to potatoes. Toss lightly.

- In a large pot of boiling water, cook potatoes until they are tender. In a large bowl whisk together the vinegar and the mustard. Season with salt & pepper. Whisk in the olive oil a third at a time until it binds together. Add the warm, drained potatoes and toss to coat. Let the potatoes sit for 10 minutes or longer to absorb the flavor of the dressing. Add the scallions and parsley and toss to coat. Season well with salt & pepper.
