WARM AND CHEESY ONION DIP

One 8-ounce package cream cheese, at room temperature
1 1/3 cups mayonnaise
2 cups finely diced yellow onions (about 2 medium onions)
1 cup freshly grated Parmesan cheese
1 jalapeno, seeded and diced (optional)
1 teaspoon freshly ground black pepper
2 tablespoons chopped fresh chives, plus more for garnish
Baguette toasts or veggies (such as cherry tomatoes, mini sweet peppers, carrot sticks and celery sticks), for serving

Steps:

  • Preheat the oven to 400°F.
  • In a stand mixer fitted with the paddle attachment, combine the cream cheese, mayonnaise, onions, Parmesan, jalapeno, pepper and the 2 tablespoons chives. Beat on medium speed until combined. (Alternatively, combine the ingredients in a medium bowl and stir until combined.)
  • Transfer the dip to a 9- or 10-inch pie plate or square baking dish, smoothing it into an even layer.
  • Bake the dip until it is dark golden brown on top and bubbly, about 25 minutes.
  • Remove the dip from the oven, let cool slightly, then garnish with the remaining chives and serve with toasts or veggies for dipping.

2 tablespoons unsalted butter
3 stalks green onion, diced
1 medium red onion, diced
1 medium Vidalia onion, diced
1 small white onion, diced
2 tablespoons brown sugar
3 tablespoons white wine vinegar
1 tablespoon Worcestershire sauce
8 ounces cream cheese, at room temperature
2 cups sour cream
1 cup mayonnaise
2 tablespoons chopped fresh chives
1/2 cup grated Parmesan
Serving suggestions: crostini or crudites

Steps:

  • Preheat the oven to 400 degrees F.
  • Melt the butter in a cast-iron skillet over medium heat. Add the green onions, red onion, Vidalia onion, white onion and brown sugar and saute for 10 to 15 minutes, stirring occasionally. Add the vinegar and Worcestershire and continue cooking until the onions are very soft and a caramel color, another 4 to 5 minutes. Stir in the cream cheese until it is melted into the onions. Remove the mixture to a large bowl, then stir in the sour cream, mayonnaise and chives. Transfer to an 8-inch square baking dish and top with the Parmesan. Bake until golden and bubbling, 15 to 20 minutes. Serve with crostini or crudites.

Ever since my friend Sonja made this and brought it into work, it is my signature appetizer dish to take to parties! I tweaked it a little to my taste. It is the first appetizer to go and everyone will be asking for the recipe! Serve with crackers or sliced bread. Absolutely delicious!

  • Stir onion, mayonnaise, Cheddar cheese, and sugar together in a pie plate.
  • Bake in preheated oven until bubbly and brown around the edges, 25 to 30 minutes.

1 cup vidalia onion, finely chopped
1/4 cup mayonnaise
1/4 cup sour cream
1/2 cup sharp white cheddar cheese, finely grated
1/4 teaspoon Tabasco sauce
1/2 teaspoon kosher salt
1 tablespoon fresh chives, copped

Steps:

  • Preheat oven to 350°F.
  • Heat oil in a large nonstick skillet over medium heat until hot. Add onion and saute until it just starts to brown, about 2 minutes. Reduce heat to low, cover, and cook for minutes, stirring occasionally, until golden brown. Remove from heat and let cool for 10 minutes.
  • Mix mayonnaise, sour cream, cheddar, Tabasco, and salt together in a medium bowl. Add onion and mix until evenly distributed. Spread dip into a shallow 5x7 baking dish and bake until bubbling and slightly browned, about 20 minutes. Stir in chives and serve.

3 slices rindless bacon, chopped
4 green onions, sliced
300 g sour cream
200 g green onion dip
130 g corn kernels, drained
1 cup grated tasty cheese
salt & pepper
cob loaf bread

Steps:

  • Saute bacon & onion until bacon is golden, transfer to a bowl.
  • Add sour cream, dip, corn, half the cheese & seasonings, mix well.
  • Cut the top off the loaf and pull out filling in large pieces, break into chunks.
  • Place bread pieces & loaf onto a foil lined baking tray.
  • Pour filling into bread hollow, sprinkle with remaining cheese.
