- Preheat oven to 400ºF. On a large, dry, metal baking sheet, place your tortillas in a single layer. Place on center rack of oven and heat for 5 minutes. Remove from heat, flip, and heat again on middle rack for an additional 2 minutes. Remove from heat and set aside.
- In the meantime, heat a small non-stick skillet on medium heat. Once hot, add the sliced onions. Toss with tongs for about 2 minutes, until they begin to soften. Add the balsamic vinegar and sauté for an additional 1 to 2 minutes. Turn off heat.
- Evenly divide sautéed onions onto the toasted tortillas. Then crumble the goat cheese (1/2 oz. per pizza) on top. Heat on middle rack of oven for 2 minutes. Remove from heat.
- Top with fresh mixed greens or arugula and a crack of freshly ground black pepper and serve!

- To make the pizza crust, place the flour, yeast and salt in a bowl. Add 3/4 cup lukewarm water and use a flat-bladed knife to mix until just combined. Turn out onto a lightly floured surface and knead until smooth. Place in a light oiled bowl, cover with plastic wrap and set aside in a warm place for 1 hour.
- To make the caramelized onions, heat the oil in a large, non-stick frying pan over medium heat and add the onion, thyme and garlic, and stir to coat. Reduce heat to medium-low and cook, stirring occasionally, for 23-30 minutes, or until the onions are very soft. Add the sugar and vinegar, and increase the heat to high. Cook for a further 5 minutes or until the onions start to caramelize. Set aside to cool completely.
- Preheat oven to 450°F Lightly grease two bake proof trays.
- Use your fist to pound the dough. Divide into two. Roll both portions and place on two bake proof trays.
- Spread the caramelized onions over both of the dough bases and sprinkle over the goat cheese.
- Bake the pizzas, turning the trays halfway through cooking for 15-20 minute, or until the top are golden and the bases are crisp.

My idea of the perfect pizza. The crust is crispy, the balsamic onions are sweet, the bacon is salty, and the goat cheese adds a little something creamy. I got this from mydailymorsel.com. The chef states: "I have spent a good deal of time trying to figure out how to get a crispy, golden crust on pizza when cooking it in your own oven. First of all, crank you oven up as high as it will go. The hotter your oven, the quicker the crust will crisp up. Second, a drizzle of olive oil under your crust before you bake it will ensure that it does not get soggy." Hope you enjoy!

- Preheat the broiler.
- Toss together the onions, vinegar, olive oil, salt, and pepper on a large rimmed baking sheet.
- Broil the onions for 6 to 8 minutes, until soft and slightly caramelized.
- Meanwhile, place a medium skillet over medium-high heat. Add the bacon and cook for 6 to 8 minutes, until golden and crispy. Drain on paper towels and set aside.
- Preheat the oven to 500°F, or as high as your oven will go.
- Spread the marinara sauce over the dough, leaving a 1-inch border around the edges.
- Sprinkle with the mozzarella cheese.
- Spread the onions evenly over the dough. Crumble the goat cheese and bacon on top.

- Combine very warm water with yeast in a bowl and mix with a spoon. Let sit for 10 minutes until the combination becomes bubbly. Mix in 1.5 cups of flour, salt, and olive oil slowly and combine with a spoon until sticky. On a floured surface, knead together the dough and slowly add in remaining 1/2 cup flour until dough ball is pliable, but not sticky about 10 minutes. Put some olive oil in the clean bowl and roll around the ball in it to coat. Place a towel over the top of the bowl and let sit for 45 minutes or until the dough doubles.
- While dough is rising, melt butter in a skillet. Add in mushrooms and onions and mix occasionally until mushrooms are translucent and caramelized, about 10 minutes. Remove from heat and add in sausage. Cook and crumble until browned all the way through. Remove with a slotted spoon and let rest on a paper towel on a plate.
- Line a baking sheet with parchment paper. Stretch out dough and use rolling pin to evenly spread out. Use remaining olive oil, salt, and pepper to cover the dough. Layer onion and mushroom mixture, sausage, mozzarella, and goat cheese. Cook for 20 minutes or until cheese is golden brown.

- Heat oven to 425. Place pizza dough on a floured surface and gently press out to the shape of the circle, the size of your pizza pan. See post above for tips on how to work with pizza dough. Bake for 8 minutes.
- In a small pan or pot, add the balsamic vinegar, the raspberries, sugar, the corn starch mixed with water, and a dash of salt. Mash the raspberries in the pot or pan to help them breakdown. Heat to a boil then reduce to low to simmer, about 8 minutes until slightly thickened. Remove from heat and strain into a bowl to remove the seeds, so you’re left with a smooth seedless raspberry balsamic glaze.
- In a large pan over medium-high heat, heat the olive oil and add the sliced onions. Cook until dark browned and lightly crispy. If onions are sticking to the pan, add a drizzle of oil and adjust the heat to medium if needed. Cook about 10-15 minutes, don’t over stir. You want the onions to sit on the heat to get browned before stirring them around too much.
- Top the pre-baked pizza crust with the shredded Mozzarella cheese, making sure to leave an edge for the crust. Next add the goat cheese, then lastly spread the cooked onions over top. Brush the crust edge with olive oil, and sprinkle with a little salt and I like a little garlic powder too. Bake for 10-12 minutes until the cheese is dark browned and bubbly.
