Walnut Burgers! You've gotta try these delicious, omega-3 packed vegetarian walnut burgers. A must-make this summer.

1 cup walnut pieces
1 cups rolled oats
1/4 cup breadcrumbs
2 eggs, slightly beaten
½ cup original soy milk
1/2 cup finely chopped white onion
2 cloves garlic, minced
1 1/2 teaspoons dried sage
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
oil, for lightly frying
2 cups vegetable broth, to cover patties

Steps:

  • Grind walnuts in blender or food processor, then mix with the rest of the burger mixture ingredients: oats, breadcrumbs, eggs, milk, onion, garlic, sage, and salt/pepper. Place the mixture in the refrigerator for about an hour to let the flavors come together and thicken slightly.
  • Place a skillet over medium heat and add in just enough oil to make a thin layer. Form the patties, then lightly fry for 2-3 minutes per side until golden brown. Once patties are brown, add the vegetable broth to cover the patties, then bring to a boil. Reduce heat to low and simmer, covered, for 20 minutes.
  • I love these most with fresh tomato slices, lettuce, pickled and spicy mustard!

1 cup chopped walnuts
3/4 cup canned garbanzo beans, drained
1/3 cup plain dried bread crumbs
1 tablespoon grill seasoning (recommended: McCormick)
1 teaspoon smoked paprika
1/4 teaspoon red pepper flakes
1 tablespoon cider vinegar
1 tablespoons olive oil
1 large egg
4 hamburger buns
Lettuce, tomato, avocado
Honey mustard

Steps:

  • Set up grill for direct cooking over high heat. Oil grate when ready to start cooking.
  • In a food processor, combine walnuts, garbanzo beans, bread crumbs, grill seasoning, paprika, pepper flakes, oil and vinegar and pulse until coarsely ground.
  • In a small bowl whisk egg, add to food processor and pulse for 10 seconds, just enough to incorporate egg. Divide into 4 equal-size parts; roll into balls, and flatten with the palm of your hand into 3/4-inch-thick patties.
  • Place burgers on oiled grill. Cook 4 minutes per side.
  • Serve hot on toasted buns with lettuce, tomato, avocado and honey mustard.

I've served these meatless burgers many times to guest. My guest were always surprised to find out they're meatless. I serve them, like you'd serve meatloaf. They're great with mashed potatoes

1 cup oatmeal
1 teaspoon salt
1 teaspoon sage
1 medium onion, chopped
3 beaten eggs
1 (10 1/2 ounce) can reduced fat cream soup
10 1/2 ounces water

Steps:

  • Mix oatmeal salt, and sage. Add onion and eggs. Drop by large spoonfuls onto a hot non-stick skillet sprayed with cooking spray.
  • Brown on both sides.
  • Mix soup and water, pour over burgers. Cover, simmer on low for 20 minutes.

I don't remember where I got this recipe but it is so good. Even the best critics wouldn't know this is a vegetarian recipe. It had me fooled. And fooled my son who is a basic meat eater.

FOR THE BURGER MIXTURE
1 1/2 to 3 c walnut pieces
2 c rolled oats
1/2 c bread crumbs, dry
3 or 4 eggs, slightly beaten
1/2 c skim milk
1 large onion, chopped fine
2 clove garlic, minced
1 tsp sage
1 tsp salt
freshly ground black pepper to taste
FOR COOKING BURGERS
oil to brown patties-----i use extra virgin olive oil
3 c vegetable stock
FOR SERVING
1 pkg hamburger buns
ketchup, mustard, etc., any desired burger fixings

Steps:

  • 1. Grind walnuts in blender, then combine with the rest of the burger mixture ingredients.
  • 2. Let the mixture rest in the refrigerator for about an hour to let the flavors meld together.
  • 3. Form the mixture into patties. The entire mixture will make 8-12 burgers depending on the size of the patty formed. It is recommended to use half of the mixture now and reserve the rest for use in another recipe or for more burgers later.
  • 4. Brown patties on both sides in a lightly oiled skillet. Then pour the stock into the skillet and bring to a boil. Reduce heat and simmer, covered, for 25 minutes.
  • 5. Serve on buns with all your burger fixings. Serve with a veggie or salad. Enjoy!

  • Heat 1 teaspoon olive oil in a large pan over medium heat. Add garlic and cook, stirring for 30 seconds or until garlic is fragrant. Add the mushrooms and onions and continue to cook, stirring occasionally, until softened, 5-8 minutes.
  • Place walnuts in a food processor and pulse until powdery but not sticky. Add the mushroom mixture and process until well combined and there are no recognizable ingredients. If the mushrooms are still hot I usually open the feeding tube on the processor a bit to let steam out while I process.
  • Transfer the mixture to a large bowl. Add the breadcrumbs, egg, and season with salt and pepper. Stir until the mixture is well combined. Cover with plastic wrap and let rest in the refrigerator for at least 30 minutes. You can also prepare this mixture in the morning and let rest in the refrigerator until supper time.
  • Form the mixture into four thin patties. If you make them thick it will be hard to get them to cook through before the outside is done.
