CRACKER BARREL BANANA PUDDING
The Cracker Barrel Banana Pudding reminds you of home, creamy homemade vanilla pudding, with fresh bananas, crunchy vanilla wafers.

Steps:
- In a heavy saucepan combine sugar, flour, and milk.
- Cook and stir continually over medium heat until the mixture is thickened and bubbly.
- Cook and stir for an additional two minutes. Remove from heat.
- Place the egg yolks in a small bowl and beat them well, until pale and lighter in color.
- Drizzle 1 cup of the hot pudding mixture slowly into the beaten eggs, whisking constantly while adding the pudding.
- Slowly add the egg yolk mixture into the pan with the remainder of the pudding, stirring constantly.
- Cook the mixture until it just begins to bubble, stirring constantly.
- Add butter, cream cheese and vanilla. Stir until all of the ingredients are well incorporated.
- Pour the pudding into a bowl and place plastic wrap on the surface of the pudding.
- Refrigerate the pudding until it is cool.
- Place 1 cup of heavy whipping cream into a bowl with 1 teaspoon of sugar.
- Using either a whisk or a mixer, beat the whipping cream until stiff peaks form. Refrigerate if not using immediately.
- Break vanilla wafers into 6 mason jars.
- Cut bananas into slices and place 4 or 5 slices of bananas into each jar.
- Add a couple of tablespoons of pudding on top of the bananas.
- Repeat 2 more times with adding vanilla wafers, bananas, and pudding to each jar.
- Top with whipped cream.
- Garnish with banana slices, vanilla wafer, and/or vanilla wafer crumbs if desired.

- Bring the cream to a simmer. Meanwhile, whisk yolks, sugar and salt until the sugar dissolves. Scrape the vanilla-bean seeds into the yolks and toss the husk into the cream.
- Whisking constantly, pour a small amount of hot cream into the yolk mixture, then whisk in the rest. Strain through a fine sieve and discard the vanilla-bean husk.
- Place the bread, bananas and walnuts in a deep 9-inch-by-13-inch baking pan. Pour in enough cream mixture to cover the bread well (you may have a bit left over). Let sit for 20 minutes.
- Preheat oven to 350 degrees. Mix the bread pudding gently, then cover the pan with foil. Place in a larger pan, add enough hot water to come partway up the sides of the pan and bake until the pudding is set and a knife inserted comes out almost clean, about 1 1/2 hours. Serve with banana caramel sauce.

BANANA WALNUT BREAD PUDDING

- Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with cooking spray. Add the cubed bread to the baking dish.
- Place the walnuts in a dry skillet over medium-low heat; cook and stir until the walnuts are golden brown and fragrant, about 2 minutes. Remove from the heat and set aside to cool.
- In a large mixing bowl, whisk together the heavy cream, egg yolks, brown sugar, cinnamon, salt, vanilla and nutmeg. Once combined, stir in the mashed bananas and 3/4 cup of the walnuts.
- Pour the custard over the bread cubes. Carefully toss to coat, making sure that the bread cubes are submerged in the custard, and let stand to allow the bread to soak up the custard, 10 to 15 minutes. Top with the remaining walnuts.
- Bake until the center is set, about 45 minutes. Let cool for 5 minutes. Serve with vanilla ice cream.
WALNUT BANANA BREAD PUDDING
My mom has been making this recipe since I was little. This dessert is a big hit at every barbecue and potluck I bring this to! Sometimes I use pecans instead of walnuts. This is great with coconuts, raisins, and dried cranberries, too!

- Grease a 9x13-inch baking dish with 1 tablespoon of butter; place the remaining butter in a saucepan over low heat, and melt the butter. Spread the French bread cubes out into the greased pan, and drizzle the melted butter over the bread.
- Place the walnuts into a dry skillet over medium-low heat; cook and stir until the walnuts turn a light golden brown and give off a toasted fragrance, about 2 minutes. Watch carefully so they don't burn. Remove from heat, and transfer walnuts into a bowl immediately to cool. Set walnuts aside.
- In a large mixing bowl, beat the eggs lightly just to break yolks, and mix in the cream, condensed milk, coconut milk, brown sugar, vanilla extract, cinnamon, nutmeg, allspice, and salt. Whisk to thoroughly combine until smooth. Stir in mashed banana and 3/4 cup of walnuts. Pour the banana mixture evenly over the bread cubes, and push bread cubes into the mixture to coat well with the custard. Sprinkle with remaining 1/4 cup of toasted walnuts. Cover the dish with plastic wrap, and refrigerate 8 to 12 hours.
- Preheat oven to 350 degrees F (175 degrees C). Remove plastic wrap, and cover dish with foil.
- Bake in the preheated oven for 15 minutes, then remove the foil and return to oven until the top is browned and the edges are pulling away from the pan, about 45 more minutes. Allow to cool before serving.

- Sift the flour, baking soda, and salt into a medium bowl, set aside. Whisk the eggs and vanilla together in a liquid measuring cup with a spout, set aside. Lightly brush a 9 by 5 by 3-inch loaf pan with butter. Preheat the oven to 350 degrees F.
- In a standing mixer fitted with the paddle attachment or with an electric hand-held mixer, cream the butter and sugar until light and fluffy. Gradually pour the egg mixture into the butter while mixing until incorporated. Add the bananas (the mixture will appear to be curdled, so don't worry), and remove the bowl from the mixer.
- With a rubber spatula, mix in the flour mixture until just incorporated. Fold in the nuts and transfer the batter to the prepared pan. CARAMELIZED BANANAS WITH PECAN-COCONUT CRUNCH
This cozy dessert comes together quickly and fills the kitchen with a sweet, buttery aroma. The textures play well together: The spiced caramel is silky but robust, the bananas tender, and the pecan-and-coconut topping crunchy and crisp. Pick ripe but firm bananas so they'll maintain their shape after cooking. (The bananas should be yellow with no black spots; green bananas won't work.) Broil them until sizzling, then allow the bubbling caramel to cool and thicken a bit before serving. - Make the crunchy topping: In a large skillet, heat 2 tablespoons butter over medium until melted and foamy, about 3 minutes. Add 1 tablespoon honey and the salt; using a spatula, stir to combine. Add the pecans, pumpkin seeds, oats and coconut and stir to coat. Toast, stirring frequently, until the mixture is golden brown, about 8 minutes, lowering the heat as necessary to keep the mixture from burning. Stir in the sesame seeds and remove from heat. - Spoon a large helping of the ice cream, whipped cream or crème fraîche over the warm bananas, then scatter the pecan-coconut crunch over the top. Divide among individual plates or eat directly from the skillet.
WALNUT CRUNCH BANANA PUDDING
Steps:
- For the crunch: Combine sugar, nuts and eggs. Speed thinly on greased baking sheet . Bake in 350 degree oven 18-20 minutes or till golden brown. Cool to room temperature. Crush mixture, sprinkle half of crumbs in baking pan and save rest for the top.
- Pudding : Combine vanilla pudding , sour cream and milk. Beat on low speed of mixer 1 to 2 minutes or until well blended. Fold in sliced bananas. Spoon over crumbs, top with remaining crumbs. Chill several hour. garnish with nuts and banana slices if desired
