1/4 cup mayonnaise, regular or low fat
2 tablespoons each of Oriental sesame oil and vegetable oil
1 large clove garlic, minced
1 quarter size piece of ginger, minced
1/3 cup rice vinegar
Salt and 1/2 teaspoon dried red pepper flakes
1 to 1 1/4 pounds smoked chicken breast or roasted chicken
2 Granny Smith apples, cored
2 cups red seedless grapes
1 mediumsize head Boston lettuce, washed and dried and torn into pieces
1 small bunch fresh chives, snipped for garnish
1 cup walnuts, preferably toasted and chopped

Steps:

  • In a mixing bowl combine the mayonnaise, oils, garlic, ginger, and vinegar, and season with salt to taste and crushed red pepper.
  • Remove skin and fat from chicken breast and cut it into bite sized pieces and add to the dressing.
  • Dice the apples into 3/8inch cubes; wash and dry the grapes and toss the ingredients together; adjust the seasoning. Serve over Boston lettuce garnished with chives and walnuts.

50ml apple juice
35g sultanas
2 little gem lettuce,
leaves removed
2 sticks celery, sliced
1 Granny Smith apple, halved, cored and thinly sliced
70g walnut halves, toasted in the oven for 5 minutes
130g smoked gammon, torn into large pieces
Handful fresh chives, to garnish
For the dressing

25ml crème fraîche
Squeeze of lemon juice

Steps:

  • Warm the apple juice in a small pan over a low heat. Place the sultanas in a small bowl, and pour the apple juice over the top, then set aside to soak. Meanwhile, place the little gem leaves in a large bowl and add the celery, apple and toasted walnuts. In a separate bowl, make the dressing by folding the mayo into the crème fraîche, adding the lemon juice and seasoning.
  • Stir the dressing through the salad, along with the sultanas, which will now be plump. Toss well to coat, then flake through the smoked gammon. Divide among plates, garnish with snipped chives and serve with crusty bread, if you like.

2 medium apples, cored and diced
1 medium pear, cored and diced
2 tablespoons lemon juice
1 cup diced celery
1/3 cup chopped red onion
1/2 cup pecans, coarsely chopped
4 -6 ounces smoked gouda cheese, rind removed and cut into cubes
1 teaspoon Dijon mustard
1 teaspoon sugar
1/4 teaspoon coarse black pepper
1/2 cup mayonnaise, amount to taste
salt, to taste
Baby Spinach, to serve

Steps:

  • In a large bowl, toss the diced apples and pears in the lemon juice.
  • Add the celery, onion, pecans, and smoked Gouda.
  • Stir together the Dijon mustard, sugar, black pepper and mayonnaise. Gently fold into the salad and mix well. Add salt, if needed, to taste.
  • Chill until ready to serve.
  • Serve on a bed of baby spinach or other greens.

1 smoked ham
2 cups apple juice or 2 cups apple cider
1 cinnamon stick (2 inches)
1/2 cup sliced celery
1 tablespoon butter
1 cup chopped apple
1/4 cup coarsely chopped peanuts
2 tablespoons raisins
1 tablespoon brown sugar
4 teaspoons cornstarch
2 tablespoons calvados or 2 tablespoons apple brandy
1 tablespoon water

Steps:

  • Place ham on rack in shallow roasting pan.
  • Bake in a 325ºF oven until meat thermometer registers 140ºF.
  • In a small saucepan combine apple juice and cinnamon; bring to boiling.
  • Reduce heat and simmer 15 minutes.
  • Remove cinnamon.
  • In a skillet cook celery in butter until tender but not brown.
  • Stir in apple juice, chopped apple, pecans, raisins and brown sugar; Cook over medium heat for 3-5 minutes.
  • Combine cornstarch and water; stir into the apple mixture.
  • Cook and stir about 2 minutes or until thickened and bubbly.
  • Remove from heat.
  • Stir in Calvados.
  • Serve with ham.
