SIMPLE, FLUFFY PANCAKES
Recipe video above. Simple, fluffy pancakes made from scratch, an essential that everyone should know! These are soft and fluffy, easy to make, and not too sweet so you can go wild with toppings. The key is getting the batter consistency right so it is easy to spread but doesn't spread too thinly so you get nice fluffy pancakes.

Steps:
- Place flour, baking powder, sugar and salt in a bowl, whisk to combine.
- Add egg, milk and vanilla. Whisk until lump free - no longer than 30 seconds.
- Heat a non stick skillet - use medium heat if you have a strong stove, medium high if you have a weak one. Add a tiny bit of butter (about 1/2 tsp) and swirl to melt. Use paper towel to mostly wipe the butter off (this is the trick to avoid a dodgy 1st pancake).
- Pour 1/4 cup batter into the middle of the fry pan (I use a slightly heaped ice cream scoop with lever, standard is 1/4 cup).
- Swirl pan lightly to spread or use the ice cream scoop edge to spread into 11cm / 4.5" circle (ruler is a must) (joking!).
- When bubbles rise to the surface (see video), flip and cook the other side until golden.
- Remove and keep warm in a low oven.
- Use more butter every 2 to 3 pancakes - depends how good your non stick coating is.
- Serve with toppings of choice!

WACKY PANCAKES
Very tasty and amazingly fluffy!!! I made these as I had no milk or eggs and wanted pancakes. I came up with this recipe, remembering a recipe for wacky cake my mother makes, and thought it might work for pancakes and it does.

- Mix all dry ingredients in medium bowl then add WARM Water and Vanilla, and mix well. Add Vinegar mixing well.
- Get skillet warmed to med/med high add a Tbsp of cooking oil of choice for one to two pancakes add as needed, pour in batter approx 5 inches around.
- Cook until edges brown and center starts to bubble, flip and let cook thoroughly.
- Serve with butter and syrup or your choice of toppings.
- Enjoy!

THIN AND LACY PANCAKES
There are no leavening ingredients in these pancakes, so they stay super thin and flat, like a crepe.

- Whisk the milk, eggs, melted butter and vanilla in a large bowl until combined. Add the flour, sugar and salt; whisk until the batter is smooth, with no lumps.
- Heat a medium nonstick skillet over medium heat; lightly brush with butter. Add 1/4 cup batter; swirl the skillet to coat the bottom with a thin layer of the batter. Cook until set on top and lightly browned around the edge, about 1 1/2 minutes. Gently lift and flip the pancake with a rubber spatula; cook until just browned on the other side, about 15 more seconds. Transfer to a plate and repeat with the remaining batter (do not brush the skillet with more butter). Fold into quarters and serve with butter and syrup or jam.
GOLDEN, EXTRA FLUFFY PANCAKES
These are my absolute favorite 'plain' pancakes. I love these so much that I can't put anything on them lol... I just eat them dry... I have to be careful.. I like them so much I could eat the whole batch LOLOL .. ok.. maybe not THAT many! hehe

- In a small bowl, whisk milk, egg, and oil together.
- In a larger bowl, combine all dry ingredients.
- Slowly add liquid mixture to dry mixture and whisk well.
- Spray large frying pan with cooking spray, and heat to medium heat.
- Wait until pan gets nice and hot.
- Make pancakes whatever size you wish-- allowing top to form bubbles before turning over.
- Cook until both sides are golden brown.
- These can be frozen and toasted in the toaster to be reheated.
- They are wonderful reheated!
- Serve with maple syrup, or whatever you wish to put on your pancakes!

PERFECT PANCAKES RECIPE

Steps:
- Put 100g plain flour and a pinch of salt into a large mixing bowl.
- Make a well in the centre and crack 2 eggs into the middle.
- Pour in about 50ml from the 300ml of semi-skimmed milk and 1 tbsp sunflower oil then start whisking from the centre, gradually drawing the flour into the eggs, milk and oil. Once all the flour is incorporated, beat until you have a smooth, thick paste. Add a little more milk if it is too stiff to beat.
- Add a good splash of milk and whisk to loosen the thick batter. While still whisking, pour in a steady stream of the remaining milk. Continue pouring and whisking until you have a batter that is the consistency of slightly thick single cream.
- Heat the pan over a moderate heat, then wipe it with oiled kitchen paper.
- Ladle some batter into the pan, tilting the pan to move the mixture around for a thin and even layer. Quickly pour any excess batter into the mixing bowl, return the pan to the heat.
- Leave to cook, undisturbed, for about 30 secs. If the pan is the right temperature, the pancake should turn golden underneath after about 30 secs and will be ready to turn.
- Hold the pan handle, ease a palette knife under the pancake, then quickly lift and flip it over. Make sure the pancake is lying flat against the base of the pan with no folds, then cook for another 30 secs before turning out onto a warm plate.
- Continue with the rest of the batter, serving them as you cook or stack onto a plate. You can freeze the pancakes for 1 month, wrapped in cling film or make them up to a day ahead.
