BROILED PEAR AND PROSCIUTTO TOASTS
Here is a wonderful little snack, or brunch item, that is a testament to it's ingredients--not the maker. A broiled pear slice draped across hot molten cheese toast, then topped with crispy prosciutto. So satisfying, yet so easy to prepare. It is a perfect stand-alone, or accompaniment to creamy soups!

HONEYED BLUE CHEESE TOAST
I *love* these. With a nice rich white wine... these are delicious, and easy breezy to make! This is another recipe that I make from the school of 'some'; there's really not amount to how much to use, just a 'bit' of everything. This recipe is great because your oven temp is not very important. Making a pie while making these? just stick it in the oven! All you need is for the cheese to melt and the bread, cheese, and honey to warm through.

CHEESE TOASTS
This is better than garlic bread! Looks great on a buffet table and goes with anything. Can be prepared the day before if wrapped in foil, if they get a little saturated over night, it's ok, makes them even better!

PIMENTO CHEESE TOASTS
This pimento cheese is a little different in that it is made with roasted peppers and spread on tiny toasts, then broiled to transform it into hot melted heaven. A combination of sharp orange and white cheddar works well. You can make the cheese spread up to 3 days ahead and have it covered and chilled in the fridge until ready to use. GORGONZOLA-PEAR APPETIZER TOASTS
Entered for safekeeping, from NY Times Magazine, 11/10/13. Gorgonzola is a love/hate cheese, which is lucky at a party because half will avoid it and the other half will gobble it up. I love the combinations of tastes and textures in this recipe.
