A vintage typed recipe card for Merk's Coffeecake; make this classic coffeecake with shortening, sugar, vanilla extract, eggs, sifted flour, baking powder, baking soda, sour cream, butter, brown sugar, cinnamon, and chopped nuts.

1/2 cup shortening (oleo)
3/4 cup sugar
1 teaspoon vanilla
3 eggs
2 cups sifted flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 pint commercial sour cream
6 tablespoons butter (softened)
1 cup brown sugar firmly packed
2 teaspoons cinnamon
1 cup chopped nuts

Steps:

  • Cream shortening, sugar, and vanilla.
  • Add eggs, beating singly after each addition.
  • Sift flour, baking powder, and soda together.
  • Add to creamed mixture, alternately with sour cream blending after each addition.
  • Spread half of the batter in a 10-inch tube pan that has been greased and lined on the bottom with waxed paper.
  • Cream butter, sugar, and cinnamon together.
  • Add nuts - mix well. Dot batter in pan evenly with half of the nut mixture.
  • Cover with remaining batter.
  • Dot with remaining mixture.
  • Bake at 350-degrees for about 50 minutes.
  • Cool cake 10 minutes; remove from pan.

1 box yellow cake mix
1 cup sour cream
1/3 cup vegetable oil
1/4 cup water
4 large eggs
2/3 cup packed light brown sugar
1 1/4 teaspoons cinnamon
Glaze
1 cup powdered sugar
3 tablespoons heavy cream
1/2 teaspoon vanilla extract

Steps:

  • 1. Preheat oven to 325 degrees and spray a 9x13-inch baking dish with cooking spray. 2. In a large mixing bowl, combine cake mix, sour cream, vegetable oil, water, and eggs. Mix well. 3. In a small bowl, stir together brown sugar and cinnamon. 4. Pour half of batter into prepared pan and spread evenly. Sprinkle with half the brown sugar mixture. 5. Pour remaining batter on top and spread evenly. Sprinkle remaining brown sugar mixture on top. 6. Bake for 40 to 50 minutes, or until cake is set. Let cool slightly. 7. Mix together all glaze ingredients in a small bowl and drizzle on top of cooled cake.
