ROASTED VIDALIA ONIONS

Roasted in the oven or on the grill, these onions are simple and tasty. They taste like French onion soup, and smell great. In college I used to put it on the top of my gas stove! Still delicious just the same. Very very easy and loads of flavor.

Number Of Ingredients 6

2 Vidalia onions
2 tablespoons butter
2 cubes beef bouillon
2 dashes salt
2 dashes pepper
2 dashes ground paprika

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Peel and core onions, then slice halfway through. Place onions on sections of aluminum foil large enough to wrap them completely. Place a bouillon cube in the center of each onion; place pat of butter on top. Season with salt, pepper, and paprika. Wrap the onions in foil.
  • Roast in preheated oven for 15 minutes.

I got this recipe from a friend of my Mom's back in the 1990's. She had just discovered Vidalia onions. This is a wonderful side dish, especially served with beef or grilled foods.

6 medium vadalia or sweet onions, sliced
3 Tbsp butter
1 c milk
3 large eggs
salt and pepper to taste

Steps:

  • 1. Using very low heat, saute onions in butter in a large covered skillet for 30 minutes. Onions should brown a bit and carmelize. Cool onions.
  • 2. In a mixing bowl beat together milk and eggs, stir in cooled onions, salt, and pepper. Pour mixture into a buttered casserole dish and bake at 325 degrees until golden brown, about 40-45 minutes.

4 large vidalia onions, halved and very thiinly sliced
4 tablespoons butter
1 cup milk
2 large eggs, plus
1 egg yolk
1 teaspoon salt
1/4 teaspoon nutmeg
pepper
chopped chives (to garnish)

Steps:

  • Saute onions in the butter, stirring occasionally, until onions are soft& golden Let onions cool to room temp.
  • Meanwhile whisk the eggs, milk& egg yolk together, add salt, nutmeg& pepper Stir in the cooked onions, mix well.
  • Pour into an oven proof buttered dish (1 1/2 qt size).
  • Bake at 325F for 40-50 minutes or until a knife comes out clean when inserted in the center Sprinkle with chives serve hot.
