This traditional English drink is the perfect combination of fruit and spice! Wassail mixes up in a snap and is the perfect holiday crowd-pleaser!

2 quarts apple cider
2 cups orange juice
1 cup pineapple juice
10 whole cloves
5 cinnamon sticks
5 star anise
pinch of nutmeg
1/2 cup cranberries
1 orange (sliced)
1 apple (sliced)

Steps:

  • In a large pot over medium-low heat add the apple cider, orange juice, and pineapple juice.
  • Add in the cloves, cinnamon sticks, star anise, nutmeg, cranberries, orange, and apple slices.
  • Let simmer for an hour or all day. Serve hot.

I was given this recipe when touring a home in our community that was presented in full period costume and celebration for the Christmas holiday. In 1821 a German settler brought to the area the first tree for decorating, presented the traditional Yule Log ceremony and offered Wassail Punch.

1 tablespoon whole cloves
6 cinnamon sticks
3 tablespoons chopped crystallized ginger
3 ¾ cups white sugar
2 quarts water
2 quarts orange juice
2 cups lemon juice
1 gallon apple cider

Steps:

  • Wrap the cloves, cinnamon stick, and ginger in cheese cloth, and tie with string.
  • In a medium saucepan, combine sugar, water and spice bag. Simmer and stir until sugar dissolves. Remove from heat, and refrigerate overnight.
  • Before serving, stir in the orange juice, lemon juice, and cider. Reheat over medium low flame, and serve warm. Be careful not to boil.

24 Whole cloves
1 Orange
8 Cups Apple Cider
4 Cups Cranberry juice Cocktail
1/2 Cup Sugar
2 Cinnamon "Sticks
1 Teaspoon Angostura bitters
24 whole allspice
1 Cup Dark Rum (Optional)

Steps:

  • Press cloves into orange. Place in heavy large saucepan. Add cider, cranberry juice, sugar, cinnamon sticks, bitters and allspice. Bring t simmer, stirring until sugar dissolves. Reduce heat to very low, cover and simmer 1 1/2 hours. Strain into punch bowl. Ladle into cups. Add 2 tablespoons rum o each cup, if desired.

An easy recipe for the traditional holiday drink. If you don't have a tea ball, place spice mixture on a small piece of cheesecloth and tie with a string, forming a small pouch.

Steps:

  • Mix apple cider, orange juice, lemon juice, pineapple juice, and sugar together in a large pot over medium-low heat.
  • Place cloves and cinnamon in a tea ball; add ball to the apple cider mixture. Simmer mixture until warmed through, about 15 minutes. Serve from pot with large ladle.

Steps:

  • In a slow-cooker or a large pot over low heat, combine apple cider, orange juice and lemon juice. Season with cloves, ginger and nutmeg. Bring to a simmer. If using a slow cooker, allow to simmer all day. Serve hot.

  • Place the apple halves, cut side up, on an aluminum foil lined baking sheet. Sprinkle with brown sugar and bake for 45 min, until soft.
  • While the apples bake, pour the apple cider and brandy into a large soup pot and warm the mixture over medium-low heat. Do not bring it to a boil. Add the ginger and nutmeg. Place the allspice berries, cloves, and cinnamon sticks into a tea bag or tie them into a bundle of cheesecloth to keep them from getting lost as they steep. Place the bag into the cider and heat the cider until warm, 20-30 min. (Alternately, place the wassail mixture into a large slow cooker. Heat on low for 4-5 hours.)
  • In a small bowl, beat the egg yolks until pale in color and frothy using an electric hand mixer. Set aside.
