ZUCCHINI PATTIES
My sister gave me this recipe and I, in turn, have given it to many of my friends. These patties have a nice flavor and are compatible with just about any entree.

Steps:
- In a bowl, combine first seven ingredients. Stir in eggs; mix well. Shape into six patties, using about 1/4 cup of zucchini mixture for each patty. , In a skillet, melt butter; cook patties for 4-5 minutes on each side or until lightly browned.

- In a medium bowl, combine the zucchini, eggs, onion, flour, Parmesan cheese, mozzarella cheese, and salt. Stir well enough to distribute ingredients evenly.
- Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls, and cook for a few minutes on each side until golden.

THE BEST ZUCCHINI PATTIES
I can't for the life of me remember where this recipe came from but I have been making these for about 30 years now. Everyone absolutely loves them. I nearly always double or triple the recipe because we love them as snacks or in our lunch the next day. Go by the recipe and don't add any extra salt as there is enough in the cheese and crackers. Enjoy! P.S. 8-7-09 I have been making this for over 30 yrs. and have never had a problem with watery zucchini. Might just be a climate issue.

Steps:
- Put all ingredients (except oil) into a large bowl and mix well.
- Spoon mixture into hot oil and flatten slightly to make patties. Fry until cooked through and golden brown on both sides. Drain extra oil off on paper towels and enjoy!

VERSATILE ZUCCHINI PATTIES
I LOVE zucchini and this recipe in particular. I am posting the original recipe from Allrecipes.com with my initial adjustments. However, it is extremely versatile! I have made it tossing in shredded carrots, shredded Summer Squash, corn, peppers, different cheeses, and various spices! It has been a winner EVERY TIME! These are great warmed up the next day for breakfast too! The ONLY draw back, I have not been able to make them successfully without frying them. :( I tried with PAM but it didn't work.

- Spread zucchini. Lay out on paper towels or in a colander (with a bowl under it), sprinkle zucchini with salt and let rest for at least 30 minutes (I get best results when I let it sit for several hours). This step pulls out excess moisture from the zucchini/squash.
- In a medium bowl, combine the zucchini, eggs, onion, flour, Parmesan cheese, mozzarella cheese (add seasoning at this time as well if you desire).
- Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls, and cook for a few minutes on each side until golden.

- Preheat oven to 350* After grating zucchini, squeeze out as much liquid as possible with hands.
- Combine zucchini, onion, parsley, cheese and 1 cup bread crumbs with salt, pepper and eggs.
- Shape into patties and cover with fine bread crumbs.
- Place on well greased cookie sheet and brush with melted butter.
- Bake for 30-40 minutes or until golden brown.
- You can fry these patties in a skillet with butter, if desired.

- Heat the butter and oil together in a 12-inch skillet over moderate heat.
- Meanwhile, quickly mix the zucchini with the flour, eggs, salt and pepper to form a batter.
- Drop Tablespoonful of batter into hot butter and oil to form 6 patties 2 to 2 1/2 inches in diameter.
- Flatten each patty slightly with the back of a spoon.
- Reserve the remaining batter.
- Cook the patties for about 4 minutes on each side, or until they are golden brown and crusty.
- Remove them to a platter covered with paper toweling and set in a keep-warm (250 F) oven.
- Use the remaining batter cook 6 more patties in the same manner, adding 1 more Tablespoon of oil to the skillet, if needed.

ZUCCHINI PATTIES
Found this in a newspaper a few weeks ago by Sherry McCarty, Albuquerque, NM. I only added extra onion and cheese. Marinara Sauce is suggested for an Italian flair. I used Dee514's recipe #30903. This is a very good light meal.

Steps:
- Combine Bisquick, cheese, salt, eggs, zucchini and onion in a mixing bowl.
- Blend well. Melt butter in a large skillet.
- Spoon heaping tablespoons of zucchini mixture into skillet.
- Fry for 3 to 5 minutes per side, until golden brown.
- Place browned patties on a paper towel.
- Add more butter to skillet when necessary for additional batches.
- Serves 5 to 6.
