What's the excitement all about? Do we love shrimp scampi because it's simple but seemingly fancy? Or because it's done in 30 minutes? Or because we just can't resist a buttery wine sauce? All of the above!

Kosher salt
12 ounces linguine
1 1/4 pounds large shrimp, peeled and deveined
1/3 cup extra-virgin olive oil
5 cloves garlic, minced
1/4 to 1/2 teaspoon red pepper flakes
1/3 cup dry white wine
Juice of 1/2 lemon, plus wedges for serving
4 tablespoons unsalted butter, cut into pieces
1/4 cup finely chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the linguine and cook as the label directs. Reserve 1 cup cooking water, then drain.
  • Meanwhile, season the shrimp with salt. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and red pepper flakes and cook until the garlic is just golden, 30 seconds to 1 minute. Add the shrimp and cook, stirring occasionally, until pink and just cooked through, 1 to 2 minutes per side. Remove the shrimp to a plate. Add the wine and lemon juice to the skillet and simmer until slightly reduced, 2 minutes.
  • Return the shrimp and any juices from the plate to the skillet along with the linguine, butter and 1/2 cup of the reserved cooking water. Continue to cook, tossing, until the butter is melted and the shrimp is hot, about 2 minutes, adding more of the reserved cooking water as needed. Season with salt; stir in the parsley. Serve with lemon wedges.

Scampi are tiny, lobster-like crustaceans with pale pink shells (also called langoustines). Italian cooks in the United States swapped shrimp for scampi, but kept both names. Thus the dish was born, along with inevitable variations. This classic recipe makes a simple garlic, white wine and butter sauce that goes well with a pile of pasta or with a hunk of crusty bread. However you make the dish, once the shrimp are added to the pan, the trick is to cook them just long enough that they turn pink all over, but not until their bodies curl into rounds with the texture of tires.

2 tablespoons butter
2 tablespoons extra-virgin olive oil
4 garlic cloves, minced
1/2 cup dry white wine or broth
3/4 teaspoon kosher salt, or to taste
1/8 teaspoon crushed red pepper flakes, or to taste
Freshly ground black pepper
1 3/4 pounds large or extra-large shrimp, shelled
1/3 cup chopped parsley
Freshly squeezed juice of half a lemon
Cooked pasta or crusty bread

Steps:

  • In a large skillet, melt butter with olive oil. Add garlic and sauté until fragrant, about 1 minute. Add wine or broth, salt, red pepper flakes and plenty of black pepper and bring to a simmer. Let wine reduce by half, about 2 minutes.
  • Add shrimp and sauté until they just turn pink, 2 to 4 minutes depending upon their size. Stir in the parsley and lemon juice and serve over pasta or accompanied by crusty bread.

2 ounces thinly sliced bacon
1 tablespoon minced garlic
1/4 cup diced sweet red pepper
1/4 cup diced red green pepper
1/4 cup diced onion
1/2 lb butter
2 cups crushed Ritz crackers
salt and black pepper, if needed
1 dozen small hard shelled clam, cleaned and opened

Steps:

  • Sautee the bacon over a medium fire until it begins to brown.
  • Add the garlic and the vegetables and sauté until the vegetables begin to wilt.
  • Remove from the fire.
  • In a double boiler melt the butter.
  • Skim the clear butter off of the top with a ladle and place in a measuring cup discarding the milky portion that remains.
  • Crush 1-1½ sleeves of Ritz Crackers and measure off 2 cups.
  • Combine ½ cup of drawn butter with 2 cups of Ritz Crackers.
  • Adjust the seasoning if needed.
  • Combine the Ritz Cracker and butter mixture with the vegetable mixture.
  • To make Clams Casino: Wash and open little neck clams being careful to retain as much of the juices as you can. This is accomplished by not tipping the clams. Stuff the clams with casino topping and place a small square of raw bacon on top. Broil in a 375° F oven until the crumbs are brown and the bacon is crispy. Serve with cocktail sauce.

  • 1 In a heavy sauté pan melt 4 tablespoons of butter. 2 When the butter begins to bubble add the garlic and shrimp and sauté for about a minute. 3 Next add the scallops and the lobster meat and sauté until the scallops are white and firm. 4 Sprinkle the flour over the seafood while tossing or stirring. 5 Add the clam juice, white wine, parsley, and lemon juice and simmer for about a minute or until the liquid begins to thicken. 6 Add the light cream and return to a simmer. Adjust seasoning and add the butter swirl just before serving. 7 Serve over hot angel hair pasta. 8 NOTE: What is a butter swirl? A butter swirl is a portion of tempered butter that is added to a sauce just before serving to enhance the flavor, texture, and appearance. A butter swirl will aid in binding a sauce and it will also introduce a sheen, which is a visually appealing. By tempered we mean butter that is at room temperature.

2 cups diced potatoes (1/2 inch dice)
5 cups chopped fresh surf clams
1 1/2 cups clam juice
4 ounces butter
1/2 cup flour

  • Add the flour to the butter and onion mixture to make a roux and cook over a low heat for several minutes.
  • Add the hot clam stock through a strainer a cup at a time and whisk until smooth.
  • Add the remaining potatoes, clams, and stock and bring to a simmer.
  • Add the light cream, black pepper, and dill weed and return to a simmer.
  • Adjust the seasoning.
  • Serve at once with crusty bread or oyster crackers.

It is simple to prepare using common ingredients you may already have on hand in your pantry and freezer. Feel free to vary the basic recipe with in-season fresh veggies and low-fat turkey or veggie-soy burger for the ground beef.

1 pound ground beef
1 small onion, minced
1 teaspoon minced garlic
½ (6 ounce) can tomato paste
1 (28 ounce) can crushed tomatoes
1 envelope onion soup mix
2 beef bouillon cubes
1 bay leaf
1 (16 ounce) package frozen mixed vegetables
2 quarts water
⅔ cup orzo pasta
salt and ground black pepper to taste

Steps:

  • Cook the ground beef in a large pot over medium heat until completely browned, 7 to 10 minutes. Drain as much fat from the beef as possible. Add the onion and garlic to the beef; cook and stir until the onion is softened, about 5 minutes.

1/4 cup fresh lemon juice

1 cup lobster meat (about 8 ounces)
1 cup small sea scallops (about 8 ounces)
1 cup small gulf shrimp (about 8 ounces)
3 1/2 cups clam juice

1/4 cup minced onion
1/4 cup minced celery
1 cup tomato puree
2 tablespoons minced garlic

  • Peel and de-vein the shrimp and cut into bite sized chunks.

  • Add the remaining potatoes and bring to a simmer.
  • Add the light cream, black pepper, and the lobster, shrimp, and scallops and return to a simmer.
  • Adjust the seasoning.
  • Serve at once with oyster crackers.
