Provided by Cookie and Kate

Categories     Entree

Time 45m

Number Of Ingredients 11

1 batch easy whole wheat pizza dough or 1 pound store-bought pizza dough
1 cup pizza sauce or marinara
2 cups baby spinach
2 to 3 cups (8 to 12 ounces) shredded low-moisture part-skim mozzarella cheese
1/2 cup jarred or canned artichoke, cut into 1" pieces
1/2 cup fresh red or orange bell pepper, cut into narrow 2″ strips
1/2 cup red onion, cut into thin wedges
1/2 cup halved cherry tomatoes
1/2 cup pitted Kalamata olives, halved lengthwise
1/2 cup sliced almonds (optional)
Optional garnishes: Fresh basil (small leaves or torn), red pepper flakes and/or finely grated Parmesan cheese

Steps:

  • Preheat the oven to 500 degrees Fahrenheit with a rack in the upper third of the oven. If you're using a baking stone or baking steel, place it on the upper rack. Prepare dough through step 5.
  • Spread pizza sauce evenly over the two pizzas, leaving about 1 inch bare around the edges. Evenly distribute the spinach on top of the sauce, followed by the cheese (use all three cups if you want a cheesy pizza as shown here).
  • Top the pizzas with artichoke, bell pepper, red onion, tomatoes, olives and almonds (if using).
  • Bake pizzas individually on the top rack until the crust is golden and the cheese is golden and bubbly, about 10 to 12 minutes (or significantly less, if you're using a baking stone/steel-keep an eye on it).
  • Transfer pizzas to a cutting board and sprinkle with with fresh basil, red pepper flakes and Parmesan, if using. Slice and serve! Leftover pizza keeps well in the refrigerator for 4 days, or for several months in the freezer.

EASY TORTILLA PIZZA

Easy Tortilla Pizza image

This is an extremely easy/fast way to prepare a delicious pizza that is light enough to be a snack, serves well as an appetizer, or is so good that is can be devoured alone! I make this often when entertaining guests and it always goes fast. You can make any sort of topping variations. The one below is the classic way I usually prepare it. I cook this also with my family. Each person gets their own tortilla to, as my kids say, decorate.

ACCIDENTAL VEGGIE TORTILLA PIZZA

Accidental Veggie Tortilla Pizza image

I was making Tortilla Pizza for supper, had some ground turkey defrosted in the fridge for it. Had the whole wheat tortillas on the cookie sheet and put the sauce on, then the spinach, grated carrots, diced red pepper and diced tomatoes , topped them with the grated cheese and popped it in the oven. There we were eating and DH says, my gowd this is good but I can't see the turkey on mine HA HA!!! The ground turkey was still in the fridge, completely forgot to cook and put it on and we didn't even miss it ! Very tasty accidental Veggie Pizza

Time 25m

Yield 2 tortilla pizzas, 2 serving(s)

Number Of Ingredients 8

4 (28 g) whole wheat tortillas (9 inch tortillas)
1/2 cup part-skim mozzarella cheese, grated, divided
1 (7 1/2 ounce) can pizza sauce, we like hot & spicy
5 ounces fresh spinach, rolled and sliced into half inch strips
1/2 cup sweet red pepper, diced (or your choice of colour)
1/2 cup carrot, rough grated
1 medium fresh tomato, diced
1/2 cup cheddar cheese, grated (we like old sharp cheddar)

Steps:

  • Preheat oven to 375f degrees and prepare a cookie sheet covered with tinfoil for easy cleanup.
  • Place two tortilla on cookie sheet, split 1/4 cup mozzarella cheese in half and sprinkle on each tortilla, place a second tortilla on top of the cheese sprinkled ones. (I found that one tortilla is a little too "bendy"; sprinkling the cheese between keeps them together and gives more firmess to the tortilla crust).
  • Spread half of the pizza sauce on each tortilla crust, sprinkle half of the cut spinach over the sauce, then half of the pepper, diced tomato and grated carrot over each.
  • Combine the remaining mozzarella and cheddar and sprinkle half on each tortilla.
  • Place cookie sheet on the middle rack of preheated oven and bake for approximately 15 minutes or until the cheese is melted and bubbling and crust edges are brown.

Your garden's bounty will be put to good use in this delightful entree, which resembles a pizza. When I find a recipe like this that's so well received, I make a copy, put it in a protective sleeve and store it in a binder so I can make it again.-Sharon Delaney-Chronis, South Milwaukee, Wisconsin

  • Working in batches, lay as many tortillas out as possible on the pizza stone without overlapping and bake for 10 minutes, or until just crispy. Repeat until all tortillas are crispy.
  • Meanwhile, heat the black beans, paprika, cumin, and cayenne over medium heat until smooth and pliable (it doesn't need to be heated all the way through, just enough to make it easy to spread).
  • Divide the black beans among the crispy tortillas (about 1/3 cup per tortilla), and use a rubber spatula to spread the beans out evenly to the edges.
