Vegetable Pastry Purses image

These elegant puff pastry vegetable purses are filled with seasoned corn, mushrooms and spinach before baking to a perfect golden brown. Serve alone or with the sweet and savory Marsala sauce.

1 sheet frozen puff pastry
2 tablespoons olive oil
½ teaspoon fresh shallots, minced
1 cup frozen corn
1 cup fresh mushrooms, chopped
¼ cup Holland House® Marsala Cooking Wine
½ teaspoon white pepper
½ teaspoon dried thyme
3 cups fresh spinach
1 egg, beaten
1 tablespoon olive oil
½ teaspoon fresh shallots, minced
¼ cup celery, chopped
1 cup Holland House® Marsala Cooking Wine
3 tablespoons brown sugar
1 bay leaf
2 teaspoons cold water
2 teaspoons cornstarch

Steps:

  • TO PREPARE PASTRY PURSES: Preheat oven to 400 degrees F. Thaw puff pastry as directed. Unfold pastry on lightly floured surface. Roll into 12-inch rectangles. Cut into 12 (3-inch) squares. Heat oil in saute pan over high heat. Add shallots, corn, and mushrooms; saute for 1 minute. Add cooking wine and seasonings. Add spinach and saute for an additional 30 seconds. Remove from heat. Place 1 Tablespoon filling in center of each square. Brush edges of square with beaten egg. Bring four corners together, pressing firmly. Pull up and twist corners making top of purse. Place on a baking sheet and brush purse with egg.
  • Bake in preheated oven for 15 to 18 minutes, or until golden brown. Serve with sauce (optional).
  • TO PREPARE OPTIONAL SAUCE: Heat oil in saute pan over high heat. Add shallots and celery. Saute for 30 to 40 seconds or until lightly brown. Add cooking wine, brown sugar, and bay leaf. Reduce heat to medium. Combine cold water and cornstarch; add to cooking wine mixture and simmer for 5 minutes. Set aside until ready to serve.

1 1/2 cups finely chopped onion
1/2 cup olive oil
two 10-ounce packages frozen spinach, cooked, drained, squeezed dry by handfulls, and chopped
2 cups grated Feta (about 1/2 pound)
2 teaspoons dried dill
four 16- x 12-inch sheets of phyllo, stacked between 2 sheets of wax paper and covered with a dampened kitchen towel

Steps:

  • In a heavy skillet cook the onion in 1/4 cup of the oil over moderately low heat, stirring occasionally, until it is golden, add the spinach, and cook the mixture, stirring, until it is combined well. Remove the skillet from the heat, stir in the Feta and the dill, and let the filling cool.
  • Lay 1 sheet of the phyllo with a long side facing you on a work surface and brush it lightly with some of the remaining 1/4 cup oil. Lay another sheet and brush it lightly with some of the remaining oil. With a sharp knife cut the sheets lengthwise into thirds and cut each length crosswise into fifths, making 15 sections, each approximately 4 x 3 1/2 inches. Put a level teaspoon of the filling in the center of each phyllo section. Working with 1 section at a time gather the corners of th phyllo over the filling and twist the phyllo gently. Transfer the pastries to an oiled jelly-roll pan and make pastries with the remaining phyllo, oil, and filling, in the same manner. Bake the pastries in the lower third of a preheated 375°F. oven for 25 minutes, or until they are golden. The pastries may be baked 1 day in advance and kept covered loosely with plastic wrap and chilled. Reheat the pastries in a 375°F. oven for 10 minutes, or until they are heated through.

PHYLLO PURSES

Frozen phyllo dough is available in most supermarkets. To keep it from drying out while you work, cover the dough you're not using with a damp kitchen towel.

2 tablespoons olive oil
2 medium shallots, finely chopped
1 pound white mushrooms, finely chopped
1 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
3 tablespoons creme fraiche
2 tablespoons fresh chervil, chopped
6 sheets of frozen phyllo dough, thawed
6 tablespoons unsalted butter, melted
24 fresh chives
1 ounce osetra caviar

Steps:

  • In a medium saucepan, heat the olive oil until hot but not smoking. Add shallots, and cook over medium heat until translucent, about 3 minutes. Stir in mushrooms, and cook until they are soft and all the liquid is absorbed, about 7 minutes. Stir in salt and pepper. Remove from heat, and set aside to cool. When cool, fold in the creme fraiche and chervil until combined. Set aside.
  • Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Lay one sheet of phyllo on a clean work surface. Brush phyllo lightly with melted butter, and top immediately with a second sheet of phyllo. Brush again with butter, and top with a third sheet of phyllo. Repeat with remaining 3 sheets of phyllo. Using a pizza cutter, cut the stack of layered phyllo sheets into 24 four-inch squares.
  • Place a teaspoon of mushroom filling in the center of each square. Carefully draw up the sides of the squares and pinch them together to seal in the filling. Place purses on the parchment-lined baking sheet, and bake until the edges are golden brown, about 20 minutes. Let cool slightly. Tie a chive around each pinched phyllo purse, and top with 1/4 teaspoon caviar. Serve phyllo purses warm.

6 oz mushrooms
3 tbsp butter
3 tbsp olive oil
1 clove garlic, finely chopped
2 shallots, finely chopped
3 slices bacon, sliced into 1/8inch strips
1/2 c
1/4 cup mixed herbs(sage, rosemary, thyme)
dash of cayenne pepper
sea salt and pepper to taste
1 # puff pastry
Flour for rolling dough
2 eggs beaten
2 Tbsp butter, cut in small pieces
1 Tbsp minced chives
1 Tbsp chopped parsley

Steps:

  • Slice the mushrooms. Use 1 Tbsp butter and 1 Tbsp olive oil. Saute mushrooms in saucepan over high heat for 2-3 minutes. Transfer to large bowl. Over medium heat, saute garlic, shallots and bacon for 5 minutes or until bacon is golden brown. Add the herbs and cayenne pepper and remove from heat Combine with mushrooms, toss with salt and pepper to taste. Roll out pastry on a lightly floured surface to 1/8"thick. Cut each half into 20 pieces. Brush each square with eggwash. Spoon onto square. Fold up the four corners. Pull corners up and squeeze edges to form purse. Tie with scallion greens that have been dropped in boiling water for 30 seconds. Tie each purse with a scallion green. Refrigerate for 15 minutes. Preheat oven to 400 degrees. Remove purses from refrigerator and brush with eggwash. Bake for 10 minutes. Reduce heat to 350 degrees and continue baking until golden (10-15 minutes).Remove from oven and sprinkle with chives and parsley
