This vegan chicken fried steak is an authentic american recipe made with seitan as the protein and creamy county gravy. This American classic fried food can be turned into a perfect meatless chicken fried steak meal within 1 hour.

2 Gusta Seitan Roast Classico loaves, sliced lengthwise into 8 small ½ inch thick "steaks"
6 tbsp aquafaba, whisked until foamy
½ cup unsweetened soy milk
2 cups all-purpose flour
¾ tsp baking soda
¾ tsp baking powder
2 tsp sea salt
1½ tsp garlic powder
½ tsp onion powder
¾ tsp paprika
¼ tsp cayenne pepper
½ tsp black pepper
Oil (Canola, Coconut or Avocado)
¼ cup vegan butter or margarine
3 tbsp unbleached all-purpose flour
1 tsp garlic powder
2½ cups unsweetened soy milk
½ no-beef bouillon cube, crumbled
Lots of black pepper

Steps:

  • In a shallow, wide dish; whisk together aquafaba and soy milk. Set aside.
  • In a second shallow, wide dish, whisk together; flour, baking soda, baking powder, salt, garlic powder, onion powder, paprika, cayenne pepper, and black pepper.
  • Working one at a time; dredge each Gusta seitan into the flour mixture, pressing the steak firmly into the flour on both sides.
  • Shake off the excess flour and then dip the seitan into the soy milk mixture.
  • Shake off the excess milk mixture, and then dredge the seitan in the flour, pressing the flour into both sides.
  • Place each coated seitan steak onto a wire cooling rack, and repeat with each steak. Let them sit for 10 mins.
  • Meanwhile, heat up enough oil in a large frying pan to cover the bottom by ¼ inch to 325F.
  • Working one at a time, place coated steak in hot oil. Gently spoon some of the oil over the steak, and then fry until you see the edges of the steak turn golden brown, roughly 2 mins. Then flip over, and fry for 2 more mins.
  • Remove seitan steak with metal tongs and allow excess oil to drip off. Place on a wire rack, and repeat with remaining seitan steaks.
  • In a deep pan, melt vegan butter over medium heat.
  • Whisk in 3 tbsp of flour, and garlic powder, and cook, whisking constantly for roughly 5 mins or until the flour browns. Do not burn.
  • Very slowly, whisk in milk and bouillon cube. Continue to whisk constantly to avoid lumping and burning, until the gravy thickens.
  • Taste as you go, and season with salt and lots of black pepper.
  • Add more or less soy milk depending on your desired thickness. If the gravy is too thick, add more soy milk. If it is too thin, cook it a bit longer, whisking constantly.

8 Vegan Steaks
1 cup 1 cup all purpose flour
1 teaspoon 1 teaspoon ground black pepper
1 teaspoon 1 teaspoon salt
½ teaspoon smoked paprika
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon baking soda
½ teaspoon baking powder
1 cup 1 cup buttermilk
2 teaspoons hot sauce
2 large eggs
oil enough to fill pan to 2"

Steps:

  • In a large bowl, whisk together the flour, 1 tsp pepper, 1 tsp salt, smoked paprika, garlic powder, baking soda, and baking powder. Set aside.
  • In a separate shallow bowl, whisk together the milk mixture, hot sauce, and eggs.
  • Line a large baking sheet with parchment paper. Set aside.
  • Remove the gluten steaks from the broth and pat dry with a paper towel.
  • Dredge the steaks in the flour mixture, shaking off the excess. Dredge the flour coated steak in the egg mixture, then dredge it one more time in the flour. Transfer the steaks to the parchment paper lined baking sheet after coating with the flour mixture until all steaks are coated.
  • Sprinkle the gluten steaks with any remaining flour mixture, pressing in with your fingers, making sure each steak is well coated.
  • Preheat the oven to 250 degrees. Place a large skillet over medium-high heat. Add enough oil to the skillet to approximately ¼ inch deep.
  • When the oil is hot, add the gluten steaks and cook for 3 minutes on each side, or until golden brown.
  • Remove the steaks from the skillet and place on a paper towel to drain.
  • Repeat until all Steaks have been fried. Place in oven to keep warm.
  • Remove all but 4 tablespoons of the fat from the skillet. Whisk in the flour, salt, and pepper and cook for 2 minutes.
  • Gradually whisk in the milk and heavy cream. Continue stirring constantly until gravy comes to a boil. Simmer for 2 minutes, or until the gravy has thickened.

2 cups spelt flour
3 teaspoons baking powder (non-aluminum)
1/4 teaspoon celtic sea salt
1 teaspoon nutritional yeast flakes
1/3 cup vegan margarine (softened)
3/4 cup soymilk
14 ounces vegetarian chicken pieces
1 cup flour
2 tablespoons flour
1/3 cup cornmeal (organic)
1 teaspoon paprika
1 teaspoon salt
1 teaspoon ground black pepper
1/2 cup soymilk (soy is good)
4 tablespoons vegetable oil (or other light oil)
1/4 cup vegetarian chicken stock (Imagine is good)
1/4 cup coffee creamer (Silk plain is really good)

Steps:

  • Biscuits:.
  • In a medium bowl mix the flour, baking powder, nutritional yeast flakes and salt together.
  • With a fork, blend in the margarine until the mixture is crumbly, then stir in the soy milk and blend well.
  • Drop biscuit size spoonfuls of dough onto a lightly greased baking sheet.
  • Bake at 450'F for 10-15 minutes until nicely golden brown.
  • Chicken:.
  • While the biscuits are baking, preheat a large heavy skillet over medium high heat.
  • slice the mock chicken into small round steaks.
  • Pour 1/2 cup of flour into a shallow dis and pour the other 1/2 cup flour into another shallow dish and add the cornmeal, paprika, salt and pepper. Pour the 1/2 cup non-dairy milk into a separate shallow bowl.
  • Dip the mock chicken into the soy milk then the plain flour. Next dip the mock chicken into the soy milk and then into the season flour cornmeal mixture.
  • Add 2 tablespoons of oil to a hot pan and cook 3 steaks at a time. Brown the steaks about 2 minutes per side or until cooked and remove from the pan.
  • Add 2 tablespoons more of oil and reheat with remaining steaks. Remove the steaks to a serving platter.
  • Add 2 tablespoons flour to the pan and cook for 2 minutes. Whisk in the broth and parsley, season with salt and pepper.
  • Whisk the soy creamer into the gravy. When the gravy bubbles remove from the heat.
  • Serve steak and warm biscuits with gravy on top.
  • Bon Appetit!

It took me many tries before I felt I had a really good Chicken Fried Steak. This fries up extra crispy, so I pour a little gravy on the plate and place steak on top. This way you get to enjoy the crispy with the gravy and your steak coating won't get soggy. Enough gravy for mashed potatoes, too! I hope you like it as much as we do.

4 -5 pieces cube steaks, cutlet
2/3 cup flour
1/3 cup cornmeal
1/2 teaspoon salt
1/2 teaspoon garlic salt
1/2 teaspoon onion powder
1 teaspoon paprika
1 teaspoon ground pepper
2 eggs
1/4 cup milk
2 tablespoons evaporated milk (Pet or "like")
5 dashes hot sauce
vegetable oil or coconut oil
1/4 cup flour
1/4 cup pan drippings or 1/4 cup bacon drippings
2 1/2 cups milk
1/4 cup evaporated milk (Pet of "like")
1/4 cup chicken stock or 1/4 cup broth
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In medium bowl, place first 7 "dry" ingredients and mix well. Set aside.
  • In another medium bowl, place the next 4 "liquid" ingredients and use whisk to mix well. Set aside.
  • Carefully transfer dry mixture onto a dinner plate.
  • Start heating oil of your choice to a medium high heat in large skillet (Cast Iron is true Southern style).
  • The oil should be about 1/4" to 1/2" deep and should not cover the entire cutlet.
  • Take a cutlet and dredge in flour mixture.
  • Take same cutlet and dip in egg mixture until entirely coated.
  • REPEAT dredging same cutlet in flour mixture.
  • Repeat process for each cutlet.
  • Discard unused egg and flour mixtures.
  • In well heated oil, carefully place cutlets and fry until golden brown on bottom.
  • Turn each cutlet over to brown the other side.
  • Each side should take about 4 - 5 minutes.
  • Place fried cutlets on paper towels to drain excess oil.
  • Pour off all but 1/4 C grease from skillet.
  • Heat to a Medium High temperature.
  • Slowly add Flour whisking until well blended. (Don't use leftover flour/cornmeal mixture).
  • When the color slightly begins to darken, slowly add milk.
  • Continue whisking to prevent lumps.
  • Gravy will begin to bubble and thicken.
  • Add evaporated milk and whisk well.
  • Add chicken stock and whisk well.
  • Add Salt and Pepper, blending well.
  • Allow gravy to simmer 2 minutes on low heat.
  • Turn off heat and allow to sit 2-5 minutes before serving.
  • Gravy will thicken nicely.

1 lb hamburger
2 teaspoons onion powder
2 eggs
1 teaspoon chili powder (optional)
2 eggs

250g firm tofu
150ml unsweetened soy milk
2 tsp miso paste
2 tsp yeast extract
1 tsp dried tarragon
1 tsp dried sage
1 tsp dried thyme
1 tsp onion powder
2 tsp garlic powder
160g wheat gluten
40g pea protein or vegan protein powder
1.5 litres vegetable stock
1 onion , quartered
3 garlic cloves
handful parsley stalks
300g gram flour
350g plain flour
vegetable or sunflower oil for frying
2 tsp dried thyme
2 tsp dried basil
2 tsp dried oregano
2 tsp ground ginger
3 tsp celery salt
3 tsp black pepper
3 tsp white pepper
3 tsp dried mustard
3 tsp paprika
3 tsp dried sage
4 tsp dried garlic powder
1 tsp brown sugar
200g panko breadcrumbs

Steps:

  • First, make the seitan. Blitz the tofu, soy milk, miso, yeast extract, tarragon, sage, thyme, onion powder, garlic powder, 1 tsp salt and ½ tsp white pepper in a food processor until smooth.
  • Tip into a bowl and add the wheat gluten and pea protein or protein powder. Mix to form a dough. Once it has come together, give it a really good knead, stretching and tearing for 10-15 mins. It will be ready when the seitan feels springy.
  • Pour the veg stock into a pan with the onion, garlic and parsley stalks. Bring to a simmer. Flatten out the seitan to 1cm in thickness, and chop into chicken-breast-sized chunks. Simmer these in the stock for 30 mins, covered with a lid. Allow to cool in the stock. Ideally do this the day before and chill in the fridge. These can also be frozen if you wish.
  • Mix the spice coating ingredients in one bowl. Place the gram flour in another and the plain flour in a third. Mix enough water into the gram flour until it has a texture similar to beaten egg. Dip the seitan pieces in the plain flour, shake off the excess, then coat each piece in the gram flour mixture and finally in the panko spice mix.
  • In a large frying pan or deep fat fryer, heat the oil to 180C (or until a piece of bread browns in 20 seconds). Once it's hot, carefully drop in the seitan pieces and cook for 6 mins or so, until they are dark golden brown and crispy. Transfer to kitchen paper to drain off the excess oil and sprinkle with a little salt. Serve in toasted buns with salad or slaw, or alternatively as mock chicken dippers with BBQ sauce.

My mother made these for us four girls. Money was tight and she couldn't afford steak very often. These use ground beef. I use a 80/20 lean to fat. You can use ground round but it tends to be a little too dry. This is great with mashed potatoes. Everyone I have ever made it for loved it. The first time my DH had it he never knew it was ground beef. He just commented on the tenderness of the steak!

1 lb ground beef
2 eggs, beaten
2 cups all-purpose flour
1/4 teaspoon seasoning salt
1/2 teaspoon black pepper
1/4 cup oil or 1/4 cup lard (for frying)
4 tablespoons of dredging flour
4 tablespoons cooking fat
1/4 teaspoon salt
1/2 teaspoon black pepper, depending on taste
3 cups milk

Steps:

  • Mix 2 cups flour with salt and pepper.
  • Shape ground beef into four thin patties.
  • Dip patties into flour, then beaten egg, then flour again.
  • Put shortening, oil or lard into a heavy skillet over medium high heat.
  • When a little flour sprinkled into skillet begins to sizzle, add patties.
  • Cook for about 5 minutes per side.
  • Remove and drain on paper towels.
  • To make gravy:.
  • Remove all but four tablespoons of fat from skillet.
  • Stir in 4 tablespoons of dredging flour and 1/4 teaspoon salt.
  • Stir, scraping up browned bits, for about one minute till light brown.
  • Whisk in milk gradually.
  • Whisk until thick and bubbly.
  • Remove from heat.
  • Add 1/2 teaspoon black pepper or to taste.
  • Stir well.

4 -6 cube steaks
3 cups flour, it's better to have too much than too little (enough to fill one bowl about 1/2 way)
1 egg
2 cups buttermilk, you can use regular or 2 cups low-fat milk, too I use all kinds
garlic salt
seasoning salt
pepper
lemon pepper
oil

Steps:

  • Fill frying pan about 1/2 way with oil, turn heat on med-med/high.
  • In one bowl beat egg, milk, and some seasonings together with a fork.
  • Put flour in another bowl and season to taste.
  • Put 2 pieces of meat in milk mixture, let soak while oil gets hot(you know it's hot when a sprinkle of flour sizzles in the pan) then roll in flour batter and put in oil.
  • Fry 10 minute one side then flip (or when golden brown) and fry 10 min other side. fry couple minute more each side just for good measure.
  • While 2 pieces are frying put 2 more pieces in milk and let soak till other pieces are done. Don't put it in flour till ready to fry, will end up soggy!
  • Keep repeating till all the meat's gone! Enjoy!

2 teaspoons chopped fresh parsley
1 tablespoon chili powder
1 teaspoon salt
1 egg
2 cups crushed saltine crackers, divided
½ cup oil for frying

Steps:

  • In a medium bowl, mix together the ground beef, parsley, chili powder, salt, egg, and 1 cup of crushed saltine crackers. Form into 6 balls, then flatten into patties. Coat patties with remaining cracker crumbs, and place them on a plate. Refrigerate for at least 30 minutes.
