SOFT APPLE COOKIES

Soft apple cookies packed with tender pieces of apple and crunchy bits of toasted pecans make these tasty cookies a completely irresistible Fall dessert.

½ cup butter, room temperature
1 ½ cups brown sugar, packed
1 large egg
¼ cup buttermilk
2 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons apple pie spice
1 teaspoon salt
2 cups peeled and chopped tart apple (like Granny Smith)
1 cup chopped toasted pecans
2 Tablespoons melted butter
1 Tablespoon milk (more if desired for a thinner glaze)
1 teaspoon vanilla
1 cup powdered sugar

Steps:

  • Using a stand mixer or handheld mixer, beat butter and sugar together in a large bowl until light and fluffy. Add in egg and buttermilk and mix until well combined, scraping down the side of the bowl as needed.
  • In a medium bowl, sift together the flour, baking soda, spice, and salt. Add to the wet ingredients (butter mixture) and stir together until just combined. Do not overmix.
  • Fold in the chopped apples and pecans.
  • Cover the dough with plastic wrap and refrigerate overnight. Or chill in the freezer for 15-20 minutes if you are in a hurry.
  • Preheat the oven to 375°F. Line cookie sheets with parchment paper or silicone baking mats.
  • Using a cookie scoop or rounded tablespoon, drop dough at least 1 inch apart on prepared baking sheets.
  • Bake 11-14 minutes, or until light brown. Allow the cookies to cool on the baking sheet for 3-5 minutes before moving onto cooling racks.
  • Whisk together the glaze ingredients, adjusting the consistency to preference. Wait until the cookies are just slightly warm to brush on the glaze.
  • Allow the glaze to harden then enjoy!

1 large egg
1/4 cup 2% milk
2 cups all-purpose flour
1 teaspoon baking soda

1 cup chopped walnuts
1 cup finely diced peeled apple
1 cup raisins
VANILLA GLAZE:
1-1/2 cups confectioners' sugar
1 tablespoon butter, melted
1/2 teaspoon vanilla extract
1/8 teaspoon salt
2 to 4 teaspoons 2% milk

Steps:

  • Preheat oven to 400°. In a large bowl, cream shortening and brown sugar until light and fluffy. Beat in egg and milk. Combine the flour, baking soda, nutmeg, cinnamon and cloves; gradually add to the creamed mixture and mix well. Stir in walnuts, apple and raisins., Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake 8-10 minutes or until edges begin to brown. Remove to wire racks., In a small bowl, combine the confectioners' sugar, butter, vanilla, salt and enough milk to achieve drizzling consistency. Drizzle over warm cookies.

1/2 cup butter, softened
1/4 cup confectioners' sugar
1/4 cup packed brown sugar
1/4 teaspoon salt
1 large egg, room temperature
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup miniature semisweet chocolate chips
48 round toothpicks
1 package (11 ounces) Kraft caramel bits
2 tablespoons water
1 cup finely chopped pecans, peanuts or M&M minis

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter, sugars and salt until light and fluffy. Beat in egg and vanilla. Gradually add flour and mix well. Stir in chips., Shape into 1-in. balls; place 2 in. apart on greased baking sheets. Bake until set, 10-12 minutes. Immediately insert a round toothpick in center of each cookie. Remove to wire racks to cool completely., In a small saucepan, combine caramels and water. Cook and stir over medium-low heat until smooth. Holding a cookie by the toothpick, dip cookie in caramel mixture, turning to coat. Allow excess to drip off. Immediately dip the bottom and sides in pecans., Place on waxed paper. Repeat with remaining cookies, caramel mixture and pecans. Let stand until set.

1 1/2 c hot water
1 c raisins
shortening, for greasing pans
1/2 c real butter or vegetable shortening
1 1/3 c light brown sugar, packed
1 egg
2 c all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1 c tart apple, unpared, finely chopped
1 c chopped pecans or walnuts
1/4 c apple juice or milk
GLAZE
1 1/2 c powdered sugar, sifted
1 Tbsp real butter, softened
1/4 tsp vanilla extract
1/8 tsp salt (omit, if butter is salted)
2 1/2 Tbsp light cream or milk
colored sugar crystals or decorations, if desired for holidays

Steps:

  • 1. Preheat oven to 350°F. Grease cookie sheets.
  • 2. Soak raisins in hot water, until ready to use; then drain.
  • 3. Cream butter (or shortening) and sugar, with electric mixer, until sugar is dissolved.
  • 4. Add egg, and mix well.
  • 5. Sift together the flour, baking soda, salt, cinnamon, and nutmeg.
  • 6. Add to creamed mixture, a half of a cup, at a time, while stirring with a wooden spoon.
  • 7. Drain raisins. Then, fold in apples, nuts, and raisins. Add apple juice (or milk), and mix well.
  • 8. Drop by teaspoonfuls onto greased cookie sheets.
  • 9. Bake for 10 to 15 minutes or until done. Makes 5-6 dozen.
  • 10. GLAZE: Mix together sifted powdered sugar and all other ingredients.
  • 11. Spread on cookies, while still hot. Sprinkle with colored sugar crystals or other decorations, if desired for the holidays.

1 egg
2 cups sifted all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg
1 cup chopped walnuts
1 cup apples - peeled, cored and finely diced
1 cup raisins
¼ cup milk
1 ½ cups sifted confectioners' sugar
1 tablespoon butter
½ teaspoon vanilla extract
2 ½ tablespoons half-and-half cream

Steps:

  • Beat shortening and brown sugar together until light and fluffy. Beat in egg and blend thoroughly.
  • Stir together flour, baking soda, salt, cinnamon, cloves and nutmeg.
  • Stir half the dry ingredients into creamed mixture. Stir in nuts, apple and raisins, then stir in remaining half of dry ingredients and milk. Mix well.
  • Drop from tablespoon 1 1/2 inches apart onto lightly greased baking sheet. Bake in a preheated 400 degree oven for 10-12 minutes. Remove cookies to racks and while still warm, spread with glaze.
  • To make Glaze: Combine powdered sugar, butter, vanilla and enough cream to make glaze of spreading consistency. Beat until smooth. Spread on warm cookies.
